Why are decisions so hard? Chocolate chip cookies, double chocolate chip cookies, chocolate chunk cookies, brownies, chocolate chunk brownies, AH! They say you can’t have it all, but “they” don’t know what they’re talking about! When it comes to out-of-this-world gluten-free, vegan, and allergy-free treats, Strength and Sunshine always finds a way to deliver the goods! So, combining the best of all chocolatey worlds, Double Chocolate Chunk Brownie Cookies were the solution!
What’s in these Double Chocolate Chunk Brownie Cookies?
You’ll be making what would seem like a brownie batter: gluten-free flour, tons of cocoa powder, egg replacer, vegan butter, non-dairy milk and what I deemed the “cookie” ingredients: granulated (erythritol) sweetener, brown sugar-style erythritol, baking soda, and pure vanilla. Cookie brownies, brownie cookies. The ingredients in the dough batter are key to the super soft and delicate cakiness and the surprisingly fudgy texture component too. But wait! These are DOUBLE chocolate chunk cookies! That means we break out the Enjoy Life MEGA CHUNKS! The best allergy-free (the 14 most common allergens), gluten-free, non-GMO, vegan, kosher, and paleo-friendly chocolate on the market! Which means these cookies are packed with only the good stuff 😉
How do you make Gluten-Free Vegan Double Chocolate Chunk Brownie Cookies?
As simple as mixing your dry ingredients, adding your wet ingredients, and folding in those Enjoy Life chocolate chunks! To bake the brownie cookies, take about 1 to 2 tablespoons of batter (you can make them as big or small as you’d like), spoon them out onto a lined baking sheet, smooth them down a bit, and then bake ever so slightly for 10-12 minutes in a 350°F preheated oven. When the cookies are done, you’ll want to let them cool for a bit before delicately transferring them to a wire rack to then cool completely. They are super delicate, so I found it best to store them long term in a container in the fridge.
Can you swap chocolate chunks with chocolate chips?
Sure! If you don’t have access to Enjoy Life chocolate chunks, their dark chocolate chips or mini chocolate chips would be perfect as well! It’s chocolate, it’s delicious, whatever shape or size it comes in! For this large batch of brownie cookies I used 3/4 cup of the mega chunks, so you can simply swap that with an equal amount of dark chocolate chips or mini chips. You’ll still get those melty fudgy spots in each brownie cookie bite!
How should you eat brownie cookies?
Since the brownie cookies are the best of both dessert worlds, they have the soft cakiness, slight chew and fudginess of both freshly baked brownies and warm gooey chocolate chip cookies. Eat them warm, eat the cold, eat them with vegan vanilla ice cream, some non-dairy milk, or make them for a deliciously sweet and allergy-free holiday party! Gluten-Free Vegan Double Chocolate Chunk Brownie Cookies
- 2 Cups Gluten-Free All-Purpose Flour
- ⅔ Cup Unsweetened Cocoa Powder
- 1 Tsp Baking Soda
- 1 Prepared Bob's Red Mill Egg Replacement
- 1 Stick Vegan/Soy-Free Butter (softened, cubed)
- 1 Cup Granulated Erythritol (or preferred granulated sweetener)
- ¼ Cup Brown Sugar-Style Erythritol (or preferred brown sweetener)
- 1 Tsp Pure Madagascar Bourbon Vanilla Extract
- ½ Cup Unsweetened Non-Dairy Milk
- ¾ Cup Enjoy Life Mega Chocolate Chunks
- Preheat the oven to 350°F.
- In a large mixing bowl combine the flour, cocoa powder, and baking soda, and mix together. Then add all other ingredients, except the chocolate chunks.
- Mix everything together until you have what looks like a thick brownie batter, then fold in the chocolate chunks.
- On 2 Silpat or parchment paper lined baking sheets, scoop out 1 to 2 tablespoons of batter to form 16-18 brownie cookies.
- Bake the brownie cookies in the oven for 10-12 minutes until the tops are glossy and slightly cracked like brownies.
- Remove and let cool slightly before carefully transferring to a wire rack to cool completely.
- Store in an airtight container the fridge for longevity.
