  1. Preheat the oven to 350°F.
  2. In a large mixing bowl combine the flour, cocoa powder, and baking soda, and mix together. Then add all other ingredients, except the chocolate chunks.
  3. Mix everything together until you have what looks like a thick brownie batter, then fold in the chocolate chunks.
  4. On 2 Silpat or parchment paper lined baking sheets, scoop out 1 to 2 tablespoons of batter to form 16-18 brownie cookies.
  5. Bake the brownie cookies in the oven for 10-12 minutes until the tops are glossy and slightly cracked like brownies.
  6. Remove and let cool slightly before carefully transferring to a wire rack to cool completely.
  7. Store in an airtight container the fridge for longevity.
