Simple Grilled Chicken Satay Skewers with Peanut Sauce make and easy but sophisticated gluten-free Thai dinner! Infused with the flavors of coconut milk & peanut flour, this chicken recipe is a classic favorite for a reason!
Food on a stick! Seems to always be a crowd-pleaser! So does Thai! So does peanut butter (or flour in this case)! I have an inkling that’s why Chicken Satay is one popular Asian dish! “Satay” can be any meat skewered, grilled, and served with an enticing sauce! Chicken Satay with peanut sauce is the more iconic and loved.

This was my first time making anything on a skewer/kabob/stick. You can say I was a bit nervous, but I have no fear when it comes to cooking and baking! I’ll always try! I took some notes from my cedar plank grilling. Soak those wooden sticks! You never want to put dry wood on your grill, even the grill pan (which I used for this recipe). Since these are just small wooden skewers, you only need to soak them for an hour or two and you’ll be safe!
I’d never had Chicken Satay before this. I was missing out! Anytime I’d see a recipe for it, I’d be swooning; so it was about time I made it myself. It’s also time I find a Thai restaurant and finally get some “real” Thai food! I still haven’t, but still want too…so bad! Is it too late to put “eat Thai take-out” on my summer bucket list? I’m going to make it happen…watch me 😉
Any favorite recommends for a gluten-free/allergy-friendly Thai place in NJ? I’ll just have to do some research! Thai at home is always a good option though and I think after seeing this recipe, you’ll agree! This chicken is marinated in a coconut milk and peanut flour mixtures, then grilled, and served with a simple Thai peanut sauce. Shocker, but you don’t need ketchup for this chicken!
I simply grilled these on my grill pan, but you could try it on any grill you want. The grill pan makes it an easy dinner any time of year and seems to make it a bit easier to watch, as these cook quickly. That smoky grilled flavor with the creamy dreamy peanut sauce, lime, cilantro, spices, is going to have your mouth watering! Let’s fire up those grills and get sataying!
Grilled Chicken Satay Skewers with Peanut Sauce
- For the Chicken:
- 1 lb of Skinless Chicken Tenders (plus enough wooden skewers per chicken pieces)
- 1 Cup Lite Culinary Coconut Milk
- ½ Cup Peanut Flour
- 2 TB Coconut Aminos
- 2 TB Chopped Cilantro
- ½ TB Lime Juice
- 1 Tsp Minced Garlic
- 1 Tsp Chili Paste
- 1 Tsp Sesame Oil
- ½ Tsp Minced Ginger
- ½ Tsp Curry Powder
- For the Peanut Sauce:
- ½ Cup Peanut Flour
- ¼ Cup Lite Culinary Coconut Milk
- 2 TB Coconut Aminos
- 2 TB Rice Vinegar
- 1 TB Water
- 1 TB Chopped Cilantro
- 1 TB Chopped Scallions
- 1 Tsp Lime Juice
- ½ Tsp Minced Ginger
- ½ Tsp Minced Garlic
- ½ Tsp Chili Paste
- ¼ Tsp Curry Powder
- 1 Packet of Stevia (1 Tsp Sugar)
- In a large ziplock bag (or bowl), combine all the chicken marinade ingredients, then add the chicken, and mix around. Place the bag (or covered bowl) in the fridge for 1-2 hours.
- Soak your wooden skewers during this time as well.
- While you heat a greased non-stick grill pan over high heat on the stove, skewer the chicken tenders on your wooden skewers and place on a plate.
- Grill each skewer for about 5-6 minutes on each side or until thoroughly cooked through. I did this in about 3 batches to fit my pan. Set the grilled skewers aside on a clean plate.
- To make the peanut sauce, simply combine all the sauce ingredients and mix. You can optionally heat the sauce in a small pan on the stove if you'd like it warmed before serving with the chicken skewers.
Ready to eat some food on a stick? This has been bugging me the entire time I’ve been writing up this post. Is there a difference between a skewer and a kebab? Google says, “As nouns, the difference between skewer and kebab is that skewer is a long pin, normally made of metal or wood, used to secure food during cooking while kebab is British) a dish of pieces of meat, fish, or vegetables roasted on a skewer or spit. As verbs, the difference between skewer and kebab is that skewer is to impale on a skewer while kebab is to roast in the style of a kebab.” Alright, and apparently kabob can be spelled kabob or kebab….I’m just going to stick with skewer! Grilled Chicken Satay Skewers to be exact!

Rebecca, we serve these quite often at the catering company I work for. But I’ve never been able to have them as they are not gluten free. Now that I have your recipe I can whip some up at home. I haven’t found a Thai restaurant here either, I really need to look into finding one that serves gluten-free options. Thanks for the recipe.
