Toss it on the grill and you have yourself one delicious grilled chili lime chicken dinner on hand!
Y’all know I LOVE grilled chicken. I have developed the best, the only quintessential classic you’ll ever need, but sometimes I like to shake things up and keep things interesting. Summer is the perfect time to enjoy those spicy zingy flavors that remind us of somewhere tropical, or at least further down south. Is chili lime Tex-Mex? Mexican? Caribbean? Regardless, it just feels right for a grilled chicken recipe!
When it comes to great flavorful grilled chicken, it’s all about the marinade. This one combines a whole lot of fresh lime juice, chili power, and some other yummy spices that complete this chili lime flavor profile! It actually was too spicy, but perfect zesty; just how I like it! Citrus is always a good idea when you’re not sure where to start on flavorings. It’s fresh flavor without any nonsense. And it’s cheap. Keep the kitchen stocked with limes and lemons and you’ll always have a delicious way to flavor up your dinner proteins!
Grilled Chili Lime Chicken
- Juice and zest the two limes in a large bowl, whisk in the other spices and herbs.
- Place your chicken breasts in the bowl of marinade; rub and mix everything together to coat.
- Let the chicken marinate in the fridge for 1-3 hours.
- Heat your grill and grill the chicken breasts for 12-15 minutes on each side, or until the chicken in throughly cooked through.
Easy, peasy, and delicious! Basically, if you need to grill some chicken breasts, but want to keep things healthy, gluten-free, paleo, allergy-free, heck…Whole 30 “approved”, while WOWing everyone with crazy good flavors…then this is the chicken recipe for you! When the weather gets warm, we only grill (and slow cook) our chicken over in this household (and by we, I mean me and I always opt for the grill if I can! Indoor or outdoor!)
