Because grilling chicken is the best and crazy flavor powerhouse recipes are my jam. Peri-Peri is a Northern African flavor (recipe) that combines the heat and spice of chiles (specifically Bird's Eye), lemon, vinegar, paprika, ginger, cilantro, garlic, onion...just a lot of good stuff! Combined into a marinade for meats, like chicken, and BBQed/grilled to tasty perfection.
Anytime I get to LOAD in paprika, I'm game! This peri-peri mixture contains both smoked paprika and normal "sweet" paprika. That's where the standout red color comes from and perfect for bringing out those blackened grilling colors. Not a day goes by where I don't use smoked paprika. In a typical day, I just pour it in and onto whatever I'm having for dinner. You can say I go through A LOT and that's fine by me 😉
Besides the loads of paprika you'll be using, there is a great combo of acids from the lemon juice and red wine vinegar. These flavors play so well with the smokiness and chili spice! Since most of us would have a hard time using real Bird's Eye chiles, this recipe using a combo of chili paste, red pepper flakes, and traditional black pepper. Spices you can get your hands on in a jiffy!
To make peri-peri chicken though, you have to let the chicken breasts marinate in the peri-peri sauce. One hour minimum, but a good 2 to 3 hours before grilling would be ideal. You want the best tasting chicken, don't you? Of course you do! Waiting is probably the hardest part of this recipe, but of course, that always seems to be the case when it comes of cooking and baking! Thankfully, the "grilled" part of this Grilled Peri-Peri Chicken is quick and easy...just preheat those grills, eh?

Ingredients
- 4 Large Skinless Chicken Breasts
- Peri-Peri Sauce:
- 2 Large Lemons (Juice & Zest)
- ¼ Cup Red Wine Vinegar
- 3 TB Paprika
- 2 TB Chopped Cilantro
- 1 TB Smoked Paprika
- 1 Whole Shallot (minced)
- 1 Tsp Minced Garlic
- 1 Tsp Chili Paste
- 1 Tsp Red Pepper Flakes
- ½ Tsp Ginger Puree
- ½ Tsp Black Pepper
Instructions
- In a large bowl, whisk together the peri-peri sauce ingredients.
- Add the chicken breasts to the bowl with the sauce; rub and coat the chicken breasts in the mixture.
- Place the entire bowl in the fridge to allow the chicken to marinate for 1-3 hours.
- Once marinated, preheat your grill and grill the chicken breasts over high heat for 10-12 minutes on each side or until the chicken in throughly cooked through.

I think the most used spice in my spice drawer is chilli but cinnamon and ginger are close contenders too. I have two children with very fussy food likes and dislikes so mealtimes can be a bit samey here but I reckon y husband and I will love these AND I may even get the kids to try it too!
