The humble graham cracker. Is it a cracker or a cookie? A snack or dessert? I say cookie and snack. The graham cracker is so simple, ordinary, and usually forgotten about unless we’re talking s’mores. I grew up loving a good old Honey Maid brand graham cracker. One of those foods I can still distinctly remember the taste of, so many years later. It took so long to finally find a gluten-free, egg-free, dairy-free, and soy-free graham cracker, but you know I did eventually. Thank goodness, but still, this wouldn’t cut it. I wanted a graham crackers (graham “cookie” if we want to be legit), that was accessible, cheaper, and homemade for everyone!
You know I’d never let you down (or myself down, for that matter!) so I took on the task to make the best homemade gluten-free graham cracker around! While I was at it, I had to finally settle that cracker/cookie debate. First of all, graham flour is NOT gluten-free, it is just another form of wheat flour that comes from grinding the endosperm of wheat. The graham cracker dates back to the 19th century from a preacher named Sylvester Graham, as a flat, crisp cookie made of graham flour and sweetened with honey. Because they were a “healthy” snack, similar to an English biscuit, that’s why they were called crackers and not cookies. In comes Nabisco (aka the National Biscuit Company back in the day) and they mass-produced that cracker like no other!
My gluten-free graham crackers taste just like the beloved cracker/cookie but are suitable for just about everyone! That humble cracker/cookie needs to be an option for everyone…how else could we have s’mores?! That would be a tragedy…a childhood without graham crackers and without s’mores? Unheard of!
No matter how you enjoy them, dunked in non-dairy milk, used for s’mores, as a simple snack or dessert, these homemade gluten-free graham crackers will be a new fun staple to have on hand! They’re wholesome and nutritious (woohoo sugar-free hacks) so they’d be perfect for a lunchbox too! I’m really happy with how the taste and texture came out. Pretty “graham-y” to me and they did take me back to the good ole’ gluten days! A combo or brown rice and teff flour gave them that perfect graham cracker color without any overpowering whole-grain taste. Plus, when you load anything with cinnamon…how could you go wrong!?
Homemade Gluten-Free Graham Crackers
- Preheat the oven to 350°F.
- In a large mixing bowl, combine all ingredients and mix well and knead to form a tough dough.
- Roll out the dough between 2 Silpats or parchment paper to ¼ inch thickness.
- Cut out about 20-24 squares (using a pizza cutter works great!) and add two lines of small hole marks with the prongs of a fork on each of the squares.
- Sprinkles the squares with more cinnamon and erythritol.
- Bake the squares on a lined baking sheet for 18-20 minutes. Remove and let cool.
Some call them a “grandmother’s cookie”, a snack and not a dessert, they even call them biscuits in Europe. But no matter what preconceived notions you have, give these gluten-free, vegan, allergy-free, and sugar-free gems a try and you will be in love with a new definition of graham cracker!
