Are you feeling the '90s nostalgia? Bring on the Bagel Bites! One of my favorite pizza-themed snacks of yester-years. When you combine a bagel with pizza, it's a no-brainer that you're going to have a delicious snack on your hands! But I think it's time we made Bagel Bites a bit healthier and, most importantly, gluten-free, vegan, and allergy-free! Every celiac and food allergic kid should be able to experience some delicious pizza bagel bites, regardless of their dietary needs!
What ingredients do you need for homemade Bagel Bites?
Remember those homemade 3-ingredient gluten-free mini bagels I shared with you? You'll be needing to make a batch of those! From there, you just need your favorite pizza sauce (I always made homemade), and vegan/allergy-free mozzarella cheese shreds! Basically the exact same "recipe" as my "large" pizza bagels. Technically, 3 ingredients (still), but since you need to make those homemade mini bagels, 6 ingredients (or more if you make homemade sauce!) Regardless, super easy, minimal ingredients, and perfect snack recipe to have the kids make with you!
How do you make homemade Bagel Bites?
To keep things kid-friendly, I suggest you bake the mini bagels and prepare a homemade sauce (or not). Once those are done, cut the mini bagels and place them on a plate. Pour your sauce (cooled!) into a bowl with a spoon. Set your cheese in another bowl. You can offer and add any additions toppings you'd like for there. Then you and the kids can easily go through the lineup. Grab a bagel half, spoon on a touch of sauce, a sprinkle of cheese and then place them on a lined baking sheet. Then you literally just toast them in the oven at 350°F for 4-5 minutes, until the cheese melts a bit and the bagel becomes crisp!
Can you keep homemade Bagel Bites in the freezer?
You can! "Real" Bagel Bites comes frozen and you cook them in the toaster oven or microwave. If you want to make a big batch of these homemade bagel bites, uncooked, and freeze them flat on a baking tray first (so the sauce and cheese stays in place), before transferring to a better storage container or plastic bags. You can completely cook them, cool them, and these freeze them utilizing the method above (freeze flat first, then bag or container). To defrost/reheat, lightly toast them again in a toaster oven at 350°F for a few minutes until they're hot or the cheese has melted if you did not precook. Sticking them in the microwave can be a go-to option, but you'll end up with rubbery bagel bites! They'll last 3-4 months in the freezer and are best eaten within a few days if you keep them in the fridge.
When should you serve Bagel Bites?
Bagel Bites make the perfect afterschool snack, cold lunchbox option, fun weekend dinner, or a perfect appetizer or party food! I also wouldn't knock having these for a savory breakfast or as a munchie midnight snack! I guess what I'm saying is that there is never a bad time for pizza, right? Homemade Gluten-Free Vegan Copycat Pizza Bagel Bites (Allergy-Free)

Ingredients
- 1 Batch of Homemade Gluten-Free Mini Bagels
- 1 Package Vegan/Soy-Free Mozzarella Shreds*
- 1 Batch of Homemade Pizza Sauce (or 1 small jar of your favorite sauce)
Instructions
- Preheat the oven to 350°F.
- Slice your 18 mini bagels in half, for a total of 34 "pizzas", and place them, cut side up, on a parchment paper or Silpat lined baking sheet.
- Put your prepared sauce in a bowl and your cheese in another bowl.
- Take a spoon and dab on some sauce to the bagel halves and then sprinkle with a pinch of cheese shreds, placing the finished bagel halves back on the baking sheet.
- Now bake the pizza bagel bites in the preheated oven for 4-5 minutes, just until the cheese melts and the bagel becomes toasted.
- Remove and enjoy or cool completely before storing/freezing.

*I like Daiya or So Delicious allergy-free mozzarella shreds.

Frozen pizza treats are a classy classic childhood treat regardless and now we adults can relive the deliciousness and make them for the family without the allergies or processed junk!
