Have you ever had a Little Debbie’s Oatmeal Creme Pie? That super overly sweet (kinda greasy) soft “oatmeal” cookies with “marshmallow fluff” sandwiched in between? Don’t get me wrong, they tasted delicious and you always felt a little between about eating them when Lil’ Deb used the French word “creme” instead of “cream” when marketing to you on the shelves of packaged and processed sweets. Those were the life, right? A pretty big “back-to-school” lunchbox classic, if you ask me!
Little Debbie is pretty much the QUEEN of lunchbox desserts. Give me a Cosmic Brownie and I will love you forever! Swiss Rolls, Nutty Bars, Mini Powdered Donuts, Zebra Cakes (my mom had a thing for giving us those). O and don’t even get me started on those Honey Buns! Not only would my mom put some of those goodies in my lunchbox, but those were the little “snacks” available for purchase in the cafeteria. That was the only time I bought anything in the cafeteria...for “snack” at the end of the lunch period when you were allowed to. (Which is weird to think about now. Why do you need a "snack" at the end of a 25 minutes lunch period?)
Anyway, let’s get back to the oatmeal cream pies I have for you! Little Debbie knows her desserts, but she doesn’t know her food allergies. That’s where I come in to give her a little help; to enhance the idea and take it to the next level. This version of the famous oatmeal “creme” pies is just as delicious but a whole lot more nutritious! Gluten-free, vegan, top-8 allergy-free, sugar-free, and none of that off oily greasy mouth-feel I remember!
I took the base recipe of my favorite chewy gluten-free oatmeal raisin cookies and just left out the raisins. I made the cookies a bit bigger too and then of course prepped a big batch of THE FLUFF! And of course, I'm now thinking that these maybe be a knock-out ultimate breakfast cookie sandwich! Good-ole gluten-free oats and some aquafaba seem like a legitimate breakfast combo, don't you think?
To be honest here, I probably only had a Little Debbie Oatmeal Creme Pie a handful of times. I really was more of a Cosmic Brownie kind of girl. I digress, if I could have an any of those "snack/desserts" now I would gladly stock up on all and any of the treats! But hey, since that isn't an option, I think these homemade oatmeal cream pies are just what we ALL need. So good, so easy, so fun! Your lunch dessert just got a whole lot better!
Homemade Gluten-Free + Vegan Oatmeal Cream Pies

Ingredients
- Oatmeal Cookies:
- 1 ¾ Cup Gluten-Free Oat Flour
- 1 Cup Gluten-Free Rolled Oats
- ½ Cup Arrowroot Starch
- ½ Cup Erythritol
- 1 Tsp Baking Powder
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- ½ Tsp Butter Bakery Emulsion (optional)
- 1 Cup Unsweetened Applesauce
- 1 Batch Sugar-Free Vegan Marshmallow Fluff
Instructions
- Preheat the oven to 375°F.
- Mix together the oatmeal cookie ingredients until you have a lumpy cookie dough.
- To make 8 cookies, use about 3 tablespoons of batter for each cookie, form it into a pattie and place the 8 patties on a Silpat or parchment paper lined baking sheet.
- Bake the cookies in the oven for 15 minutes. Remove and let cool completely!
- In the meantime mix up a batch of the marshmallow fluff (recipe here).
- Now take 2 cooled cookies and use about 2 tablespoons of fluff in between for the pies.
- Repeat for the rest of the cookies to make 4 pies total.

Think these will give Little Debbie a run for her money? I think so! They are just as tasty but so much more nutritious and "free-from" so we can ALL enjoy! A celiac's packaged snack food dream come true in my opinion! I just that that about "copycat" recipes; all homemade but with extra love and a whole lot of health (if you want!) Now go bake and sandwich these little pies up!

I was diagnosed with Celiac several years ago and I so miss oatmeal cookies. Can't wait to try these!! On another note, do you have any good pizza crust recipes? I've been playing around with a cauliflower crust. Pretty good but always up to try something else.
