Yes, you can have it all and we're about to dispel all those excuses for not being able to enjoy a delicious, wholesome, "fancy" meal! Let's be honest here. I just shared a quick snack bite recipe with you on Monday for the very same reason I'm sharing this quick meal with you today. I am BUSY! Some days I have time to do some longer mealtime cooking, but some days I don't or I'm just too "flustered" to settle into my normal cooking "meditation".

If you didn't know me from the blog and my history, you'd think I'd just fall into the trap of eating quick, unhealthy, low nutrition options as sadly, most college students do. Of course, that's not what we're all about here on Strength and Sunshine. I eat and cook with a purpose, no matter what meal, what day, or how busy and tired I am. To help that and to help any other busy beaver, from college students to working moms, there are some shortcuts we can take without sacrificing quality, taste, and nutrition!

The recipe I'm giving you today can literally be made in less than 10 minutes total, plated, and ready to be devoured! Mind-blowing, I know! It's gourmet on the go with no special cooking skills required! People tend to think of stir-frys as some of the easiest dishes to throw together. Why? It's literally just that. Gather your ingredients and throw them all together in a pan to heat up! The rice and salmon and all ready for you, all you need to do is chop up some fresh veggies. If that's really all it takes to have a delicious meal (that's gluten-free, soy-free, nut-free, egg-free, and dairy-free) I have faith that all my busy compatriots can eat nutritiously, even on their most hectic days!

Ingredients

Scale
  • 1 Minute Ready To Serve Brown Rice & Quinoa Cup (microwaved)
  • 1 Pouch of Chicken of The Sea Barbecue Salmon
  • ½ Cup Chopped Snow Peas
  • ½ Cup Chopped Broccoli
  • 1 TB Sliced Scallions
  • 2 TB Coconut Aminos
  • ½ TB Toasted Sesame Seeds (more for topping)
  • ½ Tsp Minced Garlic
  • ½ Tsp Chili Paste
  • ½ Tsp Sesame Oil

Instructions

  1. Microwave the brown rice and quinoa cup according to directions.
  2. In a non-stick saute pan, add the heated rice, chopped veggies, salmon pouch, and additional spices.
  3. Mix and heat the stir-fry over medium-high heat for about 4-5 minutes until the veggies a just getting tender.
  4. Serve right away with additional sesame seeds or store in a container and bring it on the go!

Hello, delicious! Did I convince you that you can "have it all" when you really don't have much (time or energy) at all? Try it for yourself and I think you'll be rather happy you did! Salmon and rice really are an all around great energizing, nutritious, (easy!) meal! Add those veggies and your tummy will be very happy; no stress! The quickest and most simple Korean BBQ you'll ever have (I guarantee it!)

    Well, if this isn't perfect timing! LOL We do a lot of stir-fry here at home. I am gluten free and my daughter is a vegetarian. I can go without meats for the most part, but my husband is a meat and potatoes kind of guy! So I end up making the stir fry and I make a meat on the side. This would saves me so much time! Definitely looking into the salmon and the rice bag! Hope things are going great for you this year, you do so much, it's really inspiring to the rest of us!
