A quick & easy meal for one that's ready in 10 minutes or less! A Korean BBQ Salmon Stir-Fry that's a perfect, healthy, gluten-free and allergy-friendly lunch or dinner recipe when you're on a tight schedule!
This is a (deliciously) sponsored post created on behalf of Minute® Ready to Serve Rice.
Who says you can't have a "gourmet" meal anytime you want? Tight budget? No time? Only cooking for one? EASY? Yes, you can have it all and we're about to dispel all those excuses for not being able to enjoy a delicious, wholesome, "fancy" meal! Let's be honest here. I just shared a quick snack bite recipe with you on Monday for the very same reason I'm sharing this quick meal with you today. I am BUSY! Some days I have time to do some longer mealtime cooking, but some days I don't or I'm just too "flustered" to settle into my normal cooking "meditation".
If you didn't know me from the blog and my history, you'd think I'd just fall into the trap of eating quick, unhealthy, low nutrition options as sadly, most college students do. Of course, that's not what we're all about here on Strength and Sunshine. I eat and cook with a purpose, no matter what meal, what day, or how busy and tired I am. To help that and to help any other busy beaver, from college students to working moms, there are some shortcuts we can take without sacrificing quality, taste, and nutrition!
With the help of Minute® Ready to Serve Rice and Chicken of the Sea, creating something wholesome, quick, easy, not to mention portable is just the solution I'm sure you've all been craving. The recipe I'm giving you today can literally be made in less than 10 minutes total, plated, and ready to be devoured! A microwavable Minute® Ready to Serve Rice brown rice & quinoa cup, some spices, chopped veggies, and a pouch of Chicken of the Sea Barbecue Salmon are all you need to make yourself a single-serve meal of Korean BBQ!
Mind-blowing, I know! It's gourmet on the go with no special cooking skills required! People tend to think of stir-frys as some of the easiest dishes to throw together. Why? It's literally just that. Gather your ingredients and throw them all together in a pan to heat up! The rice and salmon and all ready for you, all you need to do is chop up some fresh veggies. If that's really all it takes to have a delicious meal (that's gluten-free, soy-free, nut-free, egg-free, and dairy-free) I have faith that all my busy compatriots can eat nutritiously, even on their most hectic days!
Did you know that October 8th is National Salmon Day?! The best fish has its own day...so well deserved! Chicken of the Sea and Minute Ready to Serve Rice have partnered together just for the occasion and to show us all how easy their products can make your meal-planning. From September 25 to October 8, they're throwing a “Salmon Loves Rice Sweepstakes,” where you can use the hashtag #NationalSalmonDay on social media platforms to answer salmon trivia questions for a chance to win a 710-day Alaskan cruise and Chicken of the Sea Flavored Salmon Pouches and Minute Ready to Serve Rice products. They'll also be throwing a fun Twitter party, #SalmonLovesRice, on September 27 at 11 a.m. ET, showcasing some ways to pair Minute Ready to Serve Rice with Chicken of the Sea Flavored Pouches.

Well, if this isn't perfect timing! LOL We do a lot of stir-fry here at home. I am gluten free and my daughter is a vegetarian. I can go without meats for the most part, but my husband is a meat and potatoes kind of guy! So I end up making the stir fry and I make a meat on the side. This would saves me so much time! Definitely looking into the salmon and the rice bag! Hope things are going great for you this year, you do so much, it's really inspiring to the rest of us!
