The almighty tigernut flour! I've been using tigernut in my baking for awhile now, but it doesn't seem like those recipes are on the blog yet. Alas, I'm sharing one of my favorite tigernut flour recipes with you today! These grain-free (nut-free, by the way) cookies are one of my elegant little recipe gems I whip out on special occasions. I first made them for Mother's Day two years ago to give to my momma. I had finally gotten my hands on some culinary lavender at my local health food store and I had a ton of tigernut flour to use.
The coconut was just an extra touch that I thought would go well with the lavender and be used as a binder in the form of coconut milk. These cookies are subtly coconutty, sweet, and have that wonderful earthy lavender flavor. They actually taste "beautiful" (if you can picture it!) Lavender is one of those things that "a little goes a long way". But with the buttery coconut and that sweet semi-nutty taste of the tigernut...magic in the mouth! So a little more on tigernut, because I know you're curious! As I said, it's not a nut, but an ever-mighty tuber! A little root "veggie" like yucca! They say it's an ancient superfood from Africa; full of fiber, prebiotics, magnesium, potassium, and protein! The "nuts" can be dried and grind down to a flour or eaten whole, as is! They make a great healthy and crunchy snack!
Tigernut works with sweet or savory things and is one of those magic gluten-free flours that rises well and does great in baking! Besides sweet things like cookies, I love making savory crackers with the flour (recipes to come!) Cookies are the name of the game for this Mother's Day treat, though! Don't these cookies just seem feminine and lovely? I mean...lavender and coconut? Fancy "womanly" cookies! Since they're gluten-free, grain-free, allergy-free, vegan, and paleo, without added sugar...you can bake these for just about any mother out there and she WILL approve 😉

Ingredients
- 1 Cup Tigernut Flour
- ¼ Cup Unsweetened Shredded Coconut (plus more for topping)
- 1 Tsp Culinary Lavender
- ½ Tsp Baking Powder
- 2 TB Erythritol
- ¼ Cup Lite Culinary Coconut Milk
- ¼ Tsp Pure Madagascar Bourbon Vanilla Extract
Instructions
- Preheat the oven to 375°F.
- In a large bowl, mix together the cookie ingredients to combine well.
- Make 8 flat disc shaped cookies and place them on a baking sheet lined with a Silpat or parchment paper. Sprinkle the tops with an extra dusting of the shredded coconut.
- Bake in the oven for 20 minutes. Remove and allow to cool before storing in an airtight container or devouring!
By the way, did you know tigernut is also a resistant starch? Yes! So it's super good for that belly and digestion. Just how to treat your mom and keep her healthy 😉 She made sure you were healthy and now you can make sure she is healthy too! A win-win for everyone all wrapped up in a delicious lavender coconut tigernut flour cookie! Share them over brunch, or afternoon tea, or a light little dessert! My mom loved them (and so did I)!

Ooh tiger nut flour? I'm wondering if this is the same tiger nuts they use to make Horchata in Spain. I'd love to get hold of some and will be dashing off to try and find some as soon as I've finished this comment. Your biscuits sound delicious. I just use lavender from my garden rather than buying anything special. It seems to work OK.
