Breathe deeply! Your fluffy sweet marshmallow dreams are about to come true! Just when you (at least I did) thought all hope was lost due to all vegan, gluten-free marshmallows having SOY and normal marshmallows having gelatin, there would never be marshmallow anything again.

Just like I think everyone should be able to enjoy bagels, mac & cheese, etc., everyone should be able to enjoy fluffy marshmallow love! EVEN if you aren't into added sugars! This fluff may be the definition of a pillow, floaty, airy, and nothing but love, sweet love! (I'm so excited!) This fluff can be used for so many things! From rice krispies, pancake topping, any sweet topping, cupcakes, s'mores, and more (it's a great coconut-free whipped cream substitute too!)

I'm giving The Majestic Beauty even more love this week. This wasn't even the post I was going to publish today. I was going to post one of my favorite recipe with the vegan marshmallow fluff, but that was stupid of me! I needed to give you the recipe for the fluff first! (Next week I'll be posting the killer recipe I was planning on posting...don't you worry!).

If you've been reading this blog for more than a week, you know that actual marshmallows have been on my recipe bucket list for the longest time. While this recipe for marshmallow fluff isn't actual "cubed" marshmallows, it may just be better! It has also made me fall even deeper in love with THE KING BEAN! Yes! We are going to be using the famous aquafaba today! If you haven't tried this vegan trend yet, you really need to (with this recipe!)

Ingredients

Scale
  • ½ Cup Aquafaba*
  • ½ Tsp Xanthan Gum (optional)
  • ¼ Tsp Agar Powder (optional)
  • ¼ Tsp Cream of Tartar
  • 1 Tsp Pure Bourbon Madagascar Vanilla Extract
  • ½ Cup Powdered Erythritol (or preferred powdered sweetener)

Instructions

  1. In a stand mixer, combine the aquafaba, xanthan gum, agar, and cream of tartar. Beat at increasingly high speed for 2 minutes until it starts to look like whipped egg whites.
  2. Turn the mixer off, add the vanilla and powdered erythritol.
  3. Turn the mixer back on and beat at increasingly high speed for about 5 minutes until you have a white, glossy, fluffy, "stiff peak" fluff!

Notes

*½ cup of aquafaba is about 1 can of bean liquid. Simply drain the beans (chickpeas of white beans are best for color) and reserve that drained liquid. You can also cook you own beans and use that liquid too. Aquafaba is also very freezer friendly! I suggest measuring it out into ice cube trays or small containers. Simply microwave to thaw.
**You can store extra marshmallow fluff in a closed jar in the fridge for about 3-5 days

Another fun tid-bit about this vegan marshmallow fluff is that you can totally customize it! Add in a flavored extract, food coloring, cocoa powder, anything you want! Have fun with this base recipe; marshmallows are ALWAYS about fun! I've never seen someone frown when marshmallow goodness is present! Now you're going to have to wait another week for that recipe I wanted to post today! Ah! (I'm probably dieing more than you, but I know you'll love it!) Until then, marshmallow (fluff) on!

    I don't have agar powder, but have all of the other ingredients. Do you have any suggestions for a substitution for that ingredient? I really want to try this out!

      I actually think you could get away without the agar. You might want to try adding 1/4 tsp more of the gum, but that may not even be necessary!

      We just made this for my vegan son to go on his sweet potatoes for Thanksgiving. Super easy! It's so good he immediately used it on hot chocolate, then some strawberries. It'll go on his pumpkin pie and I'm sure he'll be using it on everything from now on. Thanks for this recipe!! ❤️

    Chickpeas really are the super Bean! They need to bust out their cape and show how super they are. This is the perfect recipe for us, gluten free and vegan. My vegetarian daughter has been missing her marshmallow, and this will make her extremely happy.

    Ahhh, the magic of aquafaba. It actually took me a while to give aquafaba another try after my failed, first attempt of making meringues. So now I'm using it in no-bake things like ice cream and that actually works well for me. Good to see that this marshmallow fluff is using *raw* aquafaba 🙂

    Oh the wonder of Aquafaba! I actually haven't played with it in a while and this has inspired me to get back on the train! I had disasters with the actual meringues when it first all began because my oven temperature didn't adjust! Now I have a new oven so must try again! I love to make mousse with it, there's a recipe on my site that I also must make again!

    I look at this and think s'mores. Thank you so much for the aquafaba info. I had no idea you could get it from making beans yourself! I realize now that is it obvious but sometimes we miss the obvious. Oh and also had no idea you could freeze it. Love it!

    This is something that I desperately need to make! I've been vegetarian for a while and buying the gelatin-free marshmallows is expensive. Also, I recently became sugar free (for a month) and have been wondering how I could possibly ever eat s'mores again. Hope at last! Pinned this to try later!

      I missed them so much! Normal marshmallows have gelatin, then vegan ones have soy...but this? ALL-FREE! (and dirt cheap!)

    Not to rain on the sugar-free parade here, but could this be made with regular sugar instead of erythritol? I have a toddler who has an allergy to corn products. I googled erythritol to check, and it isn't looking promising. 🙁

    I've been trying to make vegan fluff for a few weeks now. I can get it to fluff up, but then it practically evaporates when I stick it in the fridge. Of course I never thought to cover it! Haha! Sigh... Off to try it again!

    I tried making aquafaba before but it was WAY too salty for me. I'd love to be able to make use of it though, so I'm thinking about going back and seeing if they've got no salt added cans of chickpeas and try it again with that lol
