It’s okay guys, I know, I cried tears of joy too! There’s no denying my obsession with mac and cheese. From curry to one-pot, even super “out there” versions. You can keep a girl away from the gluten and dairy, but you can’t keep a girl away from her mac! Now I’ve always been curious to try cooking pasta in the microwave. I love my microwave, it even ranks above the iron, and I could cook anything in there. But could I really cook gluten-free pasta in the microwave and not have it come out…mushy and sad or hard and dry? This could’ve posed a messy challenge, but never something I wouldn’t risk, all in the name of macaroni and cheese!
Growing up with the good old blue box of Kraft, I loved trying all the fun shapes and varieties they had. My favorite was the SpongeBob shapes, there was also a fun variety that was twisty colored shapes at some point. I remember eating Velveeta a few times when I was older (so rich and decadent, but probably where my love of the shell shaped pasta came from), but I was also very well versed in the Easy Mac making once I was old enough to use the microwave myself. The ingredient list on those microwave cups is probably as long as this blog post. Regardless of food allergies…that stuff…not so pretty.
One thing that never failed to happen with my mac and cheese was of course, the ketchup! Ketchup and macaroni and cheese. One of the world’s most unlikely combos that just tastes like heaven. If it still freaks you out (it should not, by the way), think of it as pizza. The noodles of the “crust”, the cheese is the cheese, and the ketchup is the tomato sauce! See, not so weird (plus pizza dipped in ketchup is pretty spot on as well!) Since they count pizza as a vegetable anyway, this mac and cheese blows the vegetable category requirements out of the park! Using my go-to cheese sauce, this one offers a hefty dose of veggies; add my homemade ketchup and you have a vegetable paradise on your hands!
So to bring back the lazy “after school” snack of my tween years, only 100% healthier, gluten-free, vegan, and allergy-free, this microwave mac and cheese for one (aka allergy-free ‘Easy Mac’) I held nothing back in the cheesy deliciousness of perfect “cooked” microwave gluten-free pasta. This is what I’d call some quick-fix comfort food. The perfect portion size, plus vegetables, plus protein (nutritional yeast!) Feel free to use whatever shaped gluten-free pasta floats your boat. I went with Ronzoni Rotini (since that was the open box I found in the pantry at the time!)
Microwave Gluten-Free + Vegan Mac & Cheese For One (Allergy-Free ‘Easy Mac’)
- In a microwave safe bowl, combine the pasta and water.
- Microwave on high for 2 minutes, stir, and cook another 2 minutes until the water is mostly absorbed.
- Now add the carrot, nutritional yeast, mustard, and spices. Mix well to combine.
- Microwave again for 2-3 more minutes.
- Mix, top with ketchup, and devour!
