I think I have unlocked the most perfect, the best, the number one gluten-free brownie bite recipe out there! The perfect chew on the outside, soft on the inside, super chocolaty, mini (bonus cute points), and that means just the right amount to satisfy that sweet chocolate craving! These fudge brownie bites are just like those Entenmann’s “Little Bites” Fudge Brownie bites; the ones that come 4 in a pack and were totally in everyone’s lunchbox growing up! BUT, these brownies as MUCH healthier and allergy-free!
What’s in these healthier gluten-free brownie bites?
We’re using all simple ingredients and making these bites gluten-free, vegan, and allergy-free! Look in your pantry (and fridge) and I bet you have: gluten-free baking flour, cocoa powder, chocolate chips, sweetener, some egg replacement, vanilla, non-dairy milk, and a stick of vegan butter! Much better than this ingredient list you’ll find on Little Bites: “Sugar, Eggs, Bleached Wheat Flour, Soybean Oil, Water, Corn Syrup, Chocolate Liquor, Palm Oil, Cocoa (Processed With Alkali), Fructose, Whey, Salt, Artificial Flavor, Whey Protein Concentrate, Propylene Glycol Esters Of Fatty Acids, Mono And Diglycerides, Sodium Stearoyl Lactylate, Locust Bean Gum, Xanthan Gum, Cellulose Gum.”
The first ingredient there is SUGAR! And they proudly claim Little Bites contain no high fructose corn syrup, yet they include corn syrup. That’s confounding! Not only are they packed with sugar, fat, and artificial flavors and preservatives, but Little Bites fudge brownies are by no means school-safe and allergy-free! A great on-the-go and packable snack, but they have gluten, wheat, eggs, dairy, soy…I’m not saying they weren’t delicious back in the day, but let’s get real here! My copycat recipe is just as fudgy, chewy, chocolaty, and even MORE delicious!
What’s the secret to gluten-free, vegan, fudgy, chewy, brownie bites?
I think there’s three things that made these mini fudge brownies perfect in every way! First, we’re using melted chocolate chips in addition to the cocoa powder. Then we’re using a combo of granulated sweeter (Erythritol/Swerve) and brown sugar (Erythritol/Swerve). That’s what gives them that chew on the outside (brown sugar is essential!) Number three would be that stick of MELT Organic vegan butter! They are that perfect buttery, creamy, dreaminess to any vegan baked good! They act as a 1 to 1 swap for your typical dairy butter and work (and taste) the same way! But my favorite part is that MELT is also totally top 12 (yes, beyond top 8) free, meaning NO SOY! Hallelujah!
That’s well and good, but are these brownie bites easy to bake?
Not only do they take just 15 minutes to bake, but you can freeze them, package them up, give them as a gift, etc.! Scenario: you’re tasked with providing a school-safe treat for a classroom party; these allergy-free mini brownie bites are perfect! Each batch gives you 24 bites (with some extra batter). You could also place 2-4 brownie bites in plastic bags and give them out to kids as a sweet party favor or just as snack for your own family on-the-go or in lunchboxes! A literal “Little Bites” copycat when you do that!
Two bites and these “bites” are gone! A little addicting, so plan accordingly! I mean, they’re sugar-free except for the chocolate chips and MELT is made with their “Perfect Blend™ of fruit- and plant-based oils featuring certified organic, non-GMO virgin coconut oil, with half the saturated fat and fewer calories than dairy butter“. So you don’t need to worry about unhealthy fats or sketchy oils in these brownies! Good thing this recipe makes a large batch! You’ll be making some for the kids, but they won’t know about the secret stash you’ll be hiding to satisfy your sweet-tooth midnight chocolate craving!
Mini Chewy Gluten-Free Vegan Fudge Brownie Bites
- 1 Cup Gluten-Free Baking Flour
- ¾ Cup Unsweetened Cocoa Powder
- ½ Cup Semi-Sweet Chocolate Chips (melted)
- ½ Cup Erythritol (or preferred granulated sweetener)
- ¼ Cup Brown-Style Erythritol (or preferred brown sugar)
- 1 Prepared Bob's Red Mill Egg Replacement
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- 1 Stick MELT Organic Buttery Spread (softened)
- ½ Cup + 2 TB Unseewetend Non-Dairy Milk
- Preheat the oven to 375°F.
- In a large mixing bowl, combine the flour, cocoa powder, and sweeteners together.
- In a small bowl, melt the ½ cup of chocolate chips in the microwave until smooth.
- Add the melted chocolate, prepared egg replacer, vanilla, softened butter, and milk to the large bowl.
- Mix everything together to form a delicious smooth brownie batter.
- Grease a 24-cup mini muffin pan and scoop 1 heaping tablespoon of brownie batter into each cup.
- Bake the brownie bites in the preheated oven for 15 minutes.
- Remove and left cool slightly before transferring to a wire rack to cool completely before storing.
Literally, these chewy fudge brownie bites smelled like chocolate euphoria. The fudginess, the chewiness, the pure chocolate decadence!
