Before I made these mini waffles, the first recipe I made in that fancy little waffle maker I found at Marshalls was this PB&J "sandwich". Waffles are good, peanut butter is to die for, jelly is the perfect sweet addition, and breakfast is the greatest meal. Lunch can be boring, but sandwiches are always a no-fail go-to and can be incredible delicious. Why not combine ALL those things into one incredible meal?
Ding, ding, ding! We have a winning combo! But you, this isn't just the typical "waffle sandwich". It's common practice to use some frozen toaster waffles as "bread" for a sandwich when you happen to...run out of bread, are feeling crafty, or are sick of the many subpar gluten-free bread available in the store. However, these waffles that we'll be using as our bread in this peanut butter and jelly waffle sandwich are peanut butter waffles themselves (#thankyoupeanutflour)! A little lower in carb and high in protein; perfect and suitable for breakfast or a power-packed lunch (or after school snack!)
This recipe makes 4 waffles (2 sandwiches), so each sandwich gets 8 grams of protein from the peanut flour alone. We're also adding actually peanut butter to the batter and to the assembled sandwich, so you're going to be packing in even more protein and healthy fats! If you make these for breakfast, you get to eat a nice warm, toasty "sandwich". I've always had a thing for a warm PB&J.
A few years ago, I got into a big "grilled" peanut butter and jelly sandwich kick. I would make a PB&J, but "grill" it on my mini George Foreman grill (acting as a panini press, in my eyes). Pro Tip: A great way to make gluten-free bread taste better! This method made THE BEST toasty sandwich. Crisp on the outside and then melty, nutty, sweet, oozing goodness on the inside. So, playing off of that same method, let's just remove the grill and add a waffle iron instead!
Of course, you can serve these PB&J waffle sandwiches cold and bring them in for lunch or pack the kiddo's lunchboxes as well. They'll be good no matter how you serve them. I'm thinking they'd make a killer after school snack, heck, even a great post-workout meal! Peanut flour is a great vegan plant-based protein powder is I do say so! Now do you get why these gluten-free mini peanut butter and jelly waffle sandwiches make such a great breakfast, lunch, or snack? It's okay, if I somehow haven't convinced you, you can just try them yourself!

Ingredients
- Peanut Butter Waffles:
- ½ Cup Gluten-Free All Purpose Flour
- ¼ Cup Peanut Flour
- ½ Tsp Baking Powder
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- 2 TB Smooth Peanut Butter
- ¾ Cup Water
- For the Sandwiches:
- Smooth (or Crunchy) Peanut Butter
- Grape Jelly (or your favorite!)
Instructions
- Grease and allow your mini waffle iron to heat up.
- In a bowl, mix together all waffle batter ingredients until you have a smooth, thick batter.
- One the waffle iron is heated, pour ¼ of the batter onto the iron and allow it to cook. Repeat this process for a total of 4 mini peanut butter waffles.
- Once the waffles are done, make two sandwiches by spreading your favorite peanut butter and jelly between two of the waffles.
