O, French toast. It's one of those things I don't make very often, but when I do, it's always a pleasant gift. However, I feel like French toast is always the messiest and most "difficult" of the 3 greats (i.e. pancakes, waffles, and French toast). I'm not sure why, but I just do. For pancakes and waffles, you just have to whip up some flour and liquid in a bowl. For French toast, you have to make a great vegan liquid mixture, soak some stellar gluten-free bread, and then..."toast". I don't know, maybe I'm just biased for pancakes!

But you know, I've always loved mug cakes. I haven't made one in a very long time, but last year, any breakfast I could make in a "mug" and in the microwave was the name of the game! Dorm living ain't so great for fancy breakfasts! And then BAM, one day you get a killer craving for French toast but realize the classic isn't so feasible. All you have is a few minutes before class and a microwave...options?

WAIT! All is not lost! There was a solution and French toast was able to happen...and boy, did it happen! With the magic of one of my favorite appliancesΒ and a magical ramekin that never fails me, a microwave French toast "mug cake" was born!

I think you can make anything in the microwave if you try! That's why I will never EVER understand how people can scoff and do without them. That's just...not fun. How could you make the best potatoes then? Yes, when I eat a potato, it goes in the microwave! A microwaved Japanese sweet with nut butter and cinnamon...all I want! Best way to make them and so quick when I'm feeling lazy for dinner (which is a lot of the time!). But we're here to talk French toast, so I'll hold back on the potato love for now!

I mean, if the microwave can make good French toast, then it just has to be the winning appliance. People say they don't like French toast because it's really just soggy bread. I get it. French toast will never be "actually" crunchy like toast, but it can be crispy or you can even coat it with some corn crumbs. When you make it in a mug, it's more like a French to-no-st. Er, uh, "bake". It's just a warm little bowl of chopped of cinnamony and maple syrup soaked bread...but so good! So obviously not your classic, which means even if you think you don't like French toast, I want you to give this mini microwave one a try!

So are you interested in my super simple recipe? I'll tell you I am! Haha! After years of not understanding why I felt so sick after my mom would make my brother and I French toast on those rare occasions, to then eating some Van's gluten-free toaster French toast (but that has soy, so now more), to making my own, and now making my own...in a flash and in my baby ramekin, I am French toast pleased! You will too...as long as you have a microwave!

Ingredients

Scale
  • 2 Slices of Gluten-Free (Vegan) Cinnamon Raisin Bread*
  • 1 Flax Egg (1 TB Milled Flax Seed + 3 TB Flax Milk or Water)
  • 1 TB Unsweetened Flax Milk (or non-dairy milk of choice)
  • Β½ Tsp Cinnamon
  • ΒΌ Tsp Pure Madagascar Bourbon Vanilla Extract
  • Β½ TB Raisins
  • Maple Syrup (topping)

Instructions

  1. Prepare the flax egg and allow it to sit.
  2. Cut up your bread into cubes (stale bread is best, or you can lightly toast it if you have time).
  3. Add the cubes to a ramekin or wide mug, pour in the flax egg, milk, cinnamon, vanilla, and raisins.
  4. Give everything a mix and allow the bread to soak in the goodness for a minute of two.
  5. Then microwave on high for 2 minutes.
  6. Top with anything your French heart desires!

Notes

If you're not vegan, Canyon Bakehouse makes a great Cinnamon Raisin Bread (it includes egg). If you're vegan, Food For Life makes a great gluten-free vegan option!

Mmmm, French toast in a mug..er...ramekin. You know, I've never made a "mug cake" in an actual mug. I've tried a few times, but it never cooks correctly. My ramekin seems to be the only vessel that "bakes the cake". At least with this microwave French toast, it doesn't have to actually "bake"...just warm. But calling it a French toast mug cake just didn't sound as good as microwave French toast...mini microwave French toast! Now get those ramekins out and breakfast away!

So tell me:

    I love your microwave French toast idea! Recently, I challenged myself on meals I could make in the microwave, crockpot, and toaster (the mega challenge because my toaster is ancient).
    My mom used to make French toast. Soggy at first but crispy delicious when we ate it.

    Now, whilst I've confessed to you that I'm way behind in the slow cooker scheme of things, Rebecca, I'm definitely in with the mug cake crowd! Well, OK, I made Lynne and I our first one's on Sunday but that does at least count doesn't it?

    My sister and I used to fight every Sunday after church (maybe we didn't listen hard enough!) about whether we could get our dad to make french toast or waffles. I always wanted the french toast--and if we'd had this recipe I could have won every week with my own personal version! Yum!

    I love this! French toast has always been a favorite of mine mostly because my dad used to make it for me when I was little. He passed away when I was really young so I really cherish those memories of mornings with syrup drenched soggy bread with him! Definitely going to have to try this!

    I have never made any form of French toast, either the traditional way or in a microwave but it always sounds delicious! I grew up without a microwave and my parents still don't see the point of having one but I love mine for making things like porridge and the occasional mug cake!

    I wish I would've seen this post this weekend - would've been perfect! I wanted to make a single serving of french toast for the hubby.
    I'm not a huge french toast fan - I can take it or leave it. I prefer savory breakfasts (runny eggs when I'm not prego) or yogurt/granola/fruit parfaits.

    Microwave doing magic again! This is a brilliant way to put that appliance to work! French toast is the member of the breakfast trifecta that I make the least too, too much work plus I don't usually have bread around. But if I can do it in 2 minutes then I'm down for a french toast morning πŸ™‚ A carb-filled mug begging for maple syrup...definitely winning <3

    I just published a recipe for homemade GF Cinnamon Raisin Bread, and after all those experiments to get the recipe JUST RIGHT, I have loads of slices in my freezer that I've been pulling out for sandwiches and "old fashioned" French Toast. Can't wait to try it the easy way in the microwave!
