Mini Mint Chocolate Brownies for when you need a little bite of something sweet and refreshing! This little dessert recipe is gluten-free, vegan, and allergy-free! Naturally sweetened for a healthy chocolate fix!
I live for mint chocolate (as you all know)! These brownies are no exception. Brownies are just the perfect chocolate vessel to sneak in that hit of mint and satisfy more cravings than one! There’s something about that deep rich chocolate flavor combined with mint that just gets me every time! When I hear, see, or smell mint chocolate, my mouth starts watering! Music to my ears (and stomach!)
I thought it was finally the perfect time of year to share these brownies with you too! A little green for the coming St. Patrick’s Day celebrations! We all know, even if you’re not Irish, you tend to feel inclined to wear or eat something green! I could have used this chance to sneak in some more green (like putting some spinach in these brownies), but don’t worry, I won’t take advantage of you!
Anytime I think of St. Patrick’s Day as a kid, I always think of our “leprechaun parties” in grade school. Namely, in kindergarten. I remember being sent away to art class or something, out of our classroom. When we came back the entire classroom was trashed…”by a sneaky leprechaun”. There was green glitter all over the desks, scattered and ripped up paper all over the floor, a pile of green cupcakes, and in the bathroom…the toilet water was green!
It was cute! I loved the green toilet water! I just always remember that day now when I think of the over-abundance of green on St. Patrick’s Day. O, weren’t those the easy days of school! Cupcakes and green toilets! At least now I’m savvy enough to make some brownies when the going gets tough! A bite of gluten-free vegan mint chocolate can fix anything!
I was also kind of shocked I only had one brownie recipe on the blog before this. Those brownies were barely brownies and more like cake too! These mini brownies are a little less decadent and totally bitable! These would have been perfect for that kindergarten party (and in this day and age they’re nice and “school-friendly”!)
Mini Mint Chocolate Brownies (Gluten-Free, Vegan, Allergy-Free)
- 1 Cup Gluten-Free All Purpose Flour
- ½ Cup Quinoa Flour
- ½ Cup Millet Flour
- ½ Cup Unsweetened Cocoa Powder
- 1 Flax Egg (1 TB Milled Flax Seed + 3 TB Water)
- 1 Tsp Baking Powder
- 1 Cup + 2 TB Unsweetened Non-Dairy Milk
- 1 Cup Unsweetened Applesauce
- 3 TB Mint Cocoa Stevia Syrup
- 1 Tsp Pure Mint Extract
- Green Mint Topping:
- ¼ Cup Unsweetened Shredded Coconut
- 1 TB Granular Erythritol
- ¼ Tsp Pure Mint Extract
- 3-4 Drops Natural Green Food Dye
- Preheat the oven to 350°F.
- Mix together the brownie batter ingredients until smooth.
- Grease or line with parchment paper an 8x8 baking pan and pour in the batter. Smooth out evenly in the pan.
- In a small bowl, combine the green mint topping, mix well, and sprinkles over the top of the brownie batter.
- Bake in the oven for about 20-25 minutes until a tooth pick comes out clean from the center.
- Let cool before slicing into 16 small squares.

If you don’t have kids…well…you can just be like me and bake a pan of these brownies…for kicks 😉
