Hip, hip, hooray! By now you know that seeing some gluten-free Funfetti means…BIRTHDAY CELEBRATIONS! That’s right! Tomorrow, June 6th, is my 21st birthday! You know what that means…Besides some Funfetti rainbows, sprinkles, and sunshine, I’ll be going out to buy a small bottle of vodka JUST so I can (finally) make a healthy gluten-free and vegan penne vodka recipe! I’ve been waiting to make a penne vodka recipe for the blog for so long! It used to be a favorite dish of mine back in the day.
While we wait for me to make that recipe and post (I promise I won’t wait months and years like most of my recipes!), I’m sharing some Funfetti instead. No birthday is complete without Funfetti (i.e. tons of sprinkles and color!) No one wants a gloomy birthday and when sprinkles and FUNfetti are involved, you’ll never see a frown on anyone’s face! Birthday’s never really go my way. Something bad or extremely lackluster usually occurs. So I always have to plan ahead and make sure there is tons of good food and sprinkles no matter what.
In the spirit of all things single-serve, mug cake, and Funfetti, this all natural, gluten-free, vegan, allergy-free Funfetti mug cake is just the breakfast, snack, dessert, any time of day birthday or holiday treat for one and made in just about 90 seconds! Think a personal-sized birthday cake (or cupcake) ready at the stir and button pushing of a hand! If you happen to be by yourself on your birthday (or any holiday), a single-serve treat is just what you need. No artificial colors or dyes in this Funfetti delight! And that yellow frosting? I think you can guess where that comes from…
All Natural Funfetti Mug Cake
- ⅓ Cup + 1 TB All Purpose Gluten-Free Flour
- 3 TB Unsweetened Applesauce
- 2 TB Water
- 1 Tsp Allergy-Free Sprinkelz (plus more to top)
- ½ Tsp Baking Powder
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- Liquid Vanilla Stevia Drops (to taste)
- 1½ TB Plant-Based Vanilla Protein Powder
- 2 TB Water
- ¼ Tsp Turmeric
- In a small microwave safe bowl or mug, combine all the cake ingredients and mix to combine.
- Microwave on high for 60-90 seconds (depending on the power of your microwave).
- To make the frosting, simply mix together the protein, water, and turmeric in a small bowl.
- Flip the cake upside down onto a plate, top with the frosting and sprinkle on some more sprinkles!
I bet you’re waiting for my “20-year insights”, but that will have to wait for another time, another post. One thing I (demand) everyone do on their birthday is to nix the technology and get off their laptops, phones, and anything related to social media (okay…maybe one Instagram birthday selfie), but other than that, go have fun in real life with the ones you love! And honestly…I do NOT feel 21; that’s just insane! We’ll see if it actually hits tomorrow when I wake-up!
