The healthiest peanut butter blossoms you'll find! Made with peanut flour, these cookies are not only gluten-free and vegan, but grain-free as well! A perfect healthy dessert to tame your craving!
These are so good! This is my most made and go-to cookie recipe! I think I first made them for a Thanksgiving treat and from there have made them many many times since. Why the peanut butter blossom though? Yes, I do love peanut butter and chocolate like no other, but the peanut butter blossom symbolizes so much more to me...My BROTHER!
Why? Well, let me preface this to say that today, April 25th, is my big brother's 22nd birthday! Peanut butter blossoms are his favorite cookie and always have been. I rmeeber making the "true original" recipe to take down to him his freshman year of college. He's now graduating this year so it seems like a full circle. But you, I wanted to be able to enjoy peanut butter blossoms as well, so making the original recipe would not work (nor do I feel good about giving those to him!). So with my "Rebecca-Style" I recreated the classic cookie to be 100% more healthy and 100% delicious.
When ever I think of peanut butter blossoms, I always think of my brother. With my new creation, I didn't want to let him down either. These are crafted with so much love and finally perfected. He loved them! They tasted like the "real" thing. That was music to my ears (also to my own stomach since they tasted so darn good!) Beaming with blossom pride over here!
This post is my sappy birthday tribute to my big brother. I am so very proud of him and can not believe the boy I used to play with and made my childhood simply THE best is really all grown-up. If I were an only child or he was someone different than who is was, I don't know what I would have done. The memories, laughs, experiences, and love that he brought (and still brings) is one of the greatest gifts a sister could ever ask for. I'm so lucky to have him as my brother. He was never a "bully", never tormented his little sister, ever. I'm always so proud to talk about my brother when ever anyone asks.
I do look up to him and always will. Words can't describe what he means to me, they would never be enough. Only him and I know all the crazy fun times we had and created while growing up. That sibling bond that will never break and only we will know. He is the only person in this world who will ever know what it was like growing up in our family. I know he will always be there for me and I will always be there for him. He's a person a can truly say makes this world a better place for everything and everyone he comes into contact with. He deserves so many peanut butter blossoms...(chewy, soft, amazingly delicious cookies)...
"No Butter" Peanut Butter Blossoms
"No Butter" Peanut Butter Blossoms
The healthiest peanut butter blossoms you'll find! Made with peanut flour, these cookies are not only gluten-free and vegan, but grain-free, sugar-free, and oil-free as well! A perfect healthy dessert to tame your craving!
- Yield: 8-10 1x
- Category: Dessert
- Cuisine: American
Ingredients
- ¾ Cup Peanut Flour
- ½ Cup + 1 TB Arrowroot Starch
- 2 Tsp Baking Powder
- ¼ Cup Confectioner Erythritol
- ½ Cup Squash Puree (baby food jar!)
- 3 TB Unsweetened Almond Milk
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- 1 TB Stevia Syrup
- To Top (after baking):
- 8-10 Raw Cacao Wafers*
- 1 Tsp Granulated Erythritol
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, combine all cookie ingredients. Mix well to combine and make a smooth batter.
- On a baking sheet lined with a Silpat, make 8-10 cookie blobs, evenly spaced out.
- Bake the cookies for 18-20 minutes.
- Upon removal, sprinkle the cookies with the granular erythritol and then press in one cacao wafer into the center of each cookie top.
- Allow to cool before serving (so you don't mess up the chocolate!)
Notes
Can use unsweetened REAL chocolate of choice.

I always associate my Mum with different foods she always makes when we have people over - her pumpkin and feta salad, layer dip or asparagus bread bowl dip - and it's funny because our friends do the same thing! ;P
