Who doesn't love a veggie burger? And I'm talking BURGER. Not one of those sad, fall-apart messes and sad excuses for a meatless patty. None of that here. I want my veggie burgers veggie-packed, full of flavor and texture, hearty, but also "light". I mean, how could you ever expect to convert a meat eater to eating and enjoying a veggie burger if it just does not live up to any type of standard? You won't and then they'll just become biased and assume all meatless patties are sad fails (which is far from the case)!

You won't have to worry with these burgers. They will satisfy just about anyone. You know why? They are FLAVOR BOMBS! I don' t think you could pack anymore explosive Thai flavor into these burgers. I'm talking the ultimate Pad Thai, but in an easy "portable" pattie package, if you will. Chickpeas, broccoli, lime, peanut flour, cilantro, lemongrass, and other spices. Pad Thai is all about the peanuts in my opinion and you get that here! By using peanut flour, you're keeping these grain-free and lower in calories and fat as well so you get that "light" factor I was talking about.

When I think of Thai food, I think of ultra-fresh and light. Like a summer sunshine day! Maybe that's just me? Apparently Thai food and East Asian cuisines are going to be a "2016 foodie trend". I'm all for it! No complaints here! This trend mostly refers to "bowls" and noodles, but I'm thinking burgers will fit just fine as well! Burgers inspired by the iconic noodle dish, it just works!

Thailand is such a beautiful place, its cuisine deserves to be spread throughout the world. The land of coconut, rice noodles, and lemongrass? Heck yea! To bad I don't see myself getting there anytime in the foreseeable future. I mean, I've never even left the East Coast, let alone have enough money to take a 20-something hour plane trip. When things like that happen, we just make the food of our destination, close our eyes, and pretend.

Maybe my next task should just be to find a Thai restaurant to eat at? Ha, I mean, I haven't even made it that far! But that's not really in my control. I don't think there's a Thai restaurant within a 50 mile radius of me (or an Asian market...I wish!). So this really is the best I can do with my isolated resources and opportunities...and money! If you ever happen to be taking a trip out to the Far East, let me know! I'm pretty small so I'm sure I could stow myself away in your suitcase! (After I wrote this post, my mom informed me she went to her first Thai restaurant last weekend...and ate duck!)

Ingredients

Scale
  • 2 Cups Cooked Chickpeas (or 15.5 oz Can)
  • 2 TB Aquafaba (liquid from cooked beans)
  • 2 Cups Chopped Broccoli
  • ½ Cup Peanut Flour
  • 1 Shallot (chopped)
  • Zest of 1 Lime
  • Juice of ½ Lime
  • 2 TB Chopped Cilantro
  • 1 TB Coconut Aminos
  • 1 Tsp Minced Garlic
  • 1 Tsp Dried Lemongrass
  • 1 Tsp Chili Paste
  • ½ Tsp Coriander

Instructions

  1. Preheat the oven to 425°F.
  2. In a large food processor, combine all ingredients. Blend and pulse until you get a nice crumbly dough mixture.
  3. Take the mixture and form 4 large patties with your hands. Place the patties on a Silpat or parchment paper liked baking sheet.
  4. Bake the patties for 20 minutes, carefully flip them and bake for another 20 minutes. Remove and serve!

Meaning, these freeze well and reheat in a snap. Anytime you want a taste of Thai, you can have it on demand, no plane tickets to exotic destinations required!

    I'm definitely not a veggie burger kind of gal, but OMG this sounds amazing!! Thai food is my favorite ethnic food (except possibly Indian) and the sound of this basically has my mouth watering as I read. I will definitely need to give this a try and very easily might become part of my usual weekly meals!

    Pad Thai in burger form?!?! YES PLEASE! Pad Thai + broccoli belong together, in my opinion, so this is just perfect! We have several Thai restaurants in our area, but I have yet to find one that didn't make me sick 🙁 So we're better off making our own.
    p.s. - you've got years ahead of you for LOTS of travel and adventure!!! Thailand has been on my list...maybe one day!

    LOVE these!!! And I'm going to Thailand in April, so this is perfect. You can totally make it over there! If you plan in advance you can get a flight from less than $600 and once you get there it's SUPER cheap!

    I love how you're closing your eyes and pretending / imagining that you're actually in Thailand.

    That's great how food creates the images in our mind of places we've not been to yet eh?

    It was about 15 years ago that I started making proper African spicy curries and imagining one day I would experience them for real. Which I finally did last year!

    This blog post really grabbed my attention. I love burgers, but obviously I have been transitioning from eating them, because they simply arent good for me long term. I have tried a couple veggie burgers and yuck! However the title reeled me in and you know what, I am going to give this a try. The pictures make it look so yummolicious (is that a word :)) and Rebecca, I just love that you keep saying "light". It feels like I can definitely have one with the guilt of the cow weighing down on me 😐

    Ahh I absolutely LOVE Thai food and this looks like an amazing spin on the cuisine! I'm very fortunate in that I have hundreds of authentic and ethnic Asian restaurants within walking distance from where I live, and we've got two great little Thai places just down the street from us. But hands down THE BEST Thai food I've ever had was in Australia at Bondi Beach! I have yet to find anything that even comes close to comparing.

    These look delicious! I love most any kind of Asian cuisine, but Thai is one of my favourites - I eat it at least once a week and cook it at home, too. Vegetarian Tom Yum Soup and Pad Kra Pao (with and without tofu) are the two dishes I eat over and over and over.

    I think I'd serve these burgers with a side of Thai sweet chili sauce and over steamed jasmine rice. I love fresh coriander so I'd also have an extra handful chopped ready for garnish. I'm also playing with the temptation to add all kinds of other Asian-friendly veggies in there (without affecting texture too much): grated carrot, julienned bamboo shoots. I'd also add about a tsp of fresh minced ginger, which is a very common Thai flavor... Yum!

    What do you think about using PB2 instead of peanut flour?

    I think I'm going to try these today or tomorrow! Thanks so much!!!!

    We have SO many thai restaurants near us that sometimes I feel like foreigners come to Australia and think all we do is eat Asian food - but it's just because authentic Thai food is SO good!

    So so clever transforming a pasta dish into a patty! I don't even think these would need toppings they got so much flavor going on inside. I've never actually had pad thai, but I like thai flavors so it's on my list of things to try. I should look for a thai restaurant around here...or I'd rather just go to Thailand really 😀 Yay for chunky patties not sad patties that it look like someone sat on! The perks of making them yourself 🙂

    Oh wow these look yummy!! I had no idea bean juice was called aquafaba, good to know!! Since my man is allergic to peanuts, I might try to substitute for coconut flour, and add a peanut sauce for myself! *drooling*

    I've never been to a specifically Thai place, but I had incredibly delicious Pad Thai at a local upscale fusion restaurant back home. I'm sure it wasn't authentic, but I got a mountain of delicious, spicy noodles and crunchy toasted peanuts, so i wasn't complaining 😉 Love that you put those flavors into a burger!

    Pad thai is my favorite thai food! Love that these are extra sturdy and hearty unlike some of those other sad excuses are a "veggie burger"!
