Pizza Potatoes Casserole (Vegan, Gluten-Free Allergy-Free)

This easy recipe for Pizza Potatoes is just 3 main ingredients and a perfect comforting side dish for your next weeknight dinner! This pizza potato casserole is vegan, gluten-free, allergy-free, and baked right in a skillet! A kid-friendly and healthier dairy-free way to enjoy all the flavors of pizza!

What comes to mind when you think of comfort food? For many people it's pizza. For me? It's potatoes. Since I'm here to please you and myself, combining the two seems like a win-win. This pizza potato bake actually came before the delicious pizza chicken bake. So we're basically just swapping the chicken for potatoes this time and giving it more side dish status instead of main dish status.

Ingredients for your pizza potato casserole

There's just 3 main ingredients, plus a few spices to flavor the potatoes. You can also use a jarred sauce, instead of making homemade sauce if you really want to cut down and time and ingredients.

  • Yellow or White Potatoes
  • Onion Powder, Garlic Powder, Black Pepper, Salt (to flavor the potatoes)
  • Tomato Pizza Sauce (homemade recipe below or your favorite jarred sauce)
  • Vegan Mozzarella Shreds (I use Trader Joe's brand. Daiya, So Delicious, Violife brands work too!)
  • Fresh Basil (to make the casserole look pretty and/or any toppings you'd like to add!)

Pizza Topping Ideas

Top your pizza potato bake any way you'd top your favorite pizza pie!

  • Olives
  • Sliced Onions
  • Pepperoni
  • Bacon
  • Spinach
  • Banana Peppers
  • Bell Pepper Slices
  • Pineapple
  • Jalapeno
  • Mushrooms
  • Fresh or Dried Herbs (Parsley, Oregano, Basil)
  • Etc.

Tips for making pizza potatoes

  1. No need to peel your potatoes for this! Yellow and white potatoes have thin skin anyway.
  2. You must boil the potatoes first, before adding them to the skillet or casserole dish to bake. If you don't, the potatoes will never cook through enough (#lessonlearned). Just until they're fork-tender (about 12-15 minutes, depending on the size of your cubes).
  3. Speaking of skillet, you can use a large cast iron skillet as I did, or a classic casserole dish.
  4. After you've boiled the potatoes until fork-tender, add them to your skillet, pour on the sauce, and sprinkled ¾th of the cheese on top. Cover with foil and bake for 30 minutes to start.
  5. Remove the foil, add the rest of the cheese and any additional toppings you want. Then bake it for another 10 minutes or so for everything to crisp up and melt together.
  6. This is more of a "tastes better fresh" kind of dish. But, leftovers can be stored in the fridge for 4-5 days.

Serving Suggestions

These potatoes are a perfect side dish to any weeknight dinner, but honestly, this casserole could be a main dish. You're really just swapping the dough crust of traditional pizza with potatoes, so why not? A completely plant-based pizza you can eat with a fork without being frowned upon. It's up to you, either way, you can't go wrong!

  • Serve it as an entree along with a side salad or roasted veggies.
  • Make it a quick lunch and serve it up in a single bowl-sized portion.
  • Serve it with roast chicken or fish.
  • Perfect for pairing with a slice of cauliflower lentil loaf too.

Ingredients

Scale
  • 3 lbs Yellow or White Potatoes (cubed)
  • Onion Powder (to taste)
  • Garlic Powder (to taste)
  • Black Pepper (to taste)
  • Salt (to taste)
  • 3 Cups Pizza Sauce (homemade recipe below or jarred)
  • 2 Cups Vegan/Allergy-Free Mozzarella Cheese Shreds
  • Toppings of Choice

Homemade Pizza Sauce:

  • 1 15 oz Can Plain Unsalted Tomato Sauce
  • 1 Tsp Dried Basil
  • 1 Tsp Dried Oregano
  • ½ Tsp Minced Garlic
  • ½ Tsp Onion Powder
  • ¼ Tsp Black Pepper

Instructions

  1. In a large pot of boiling water on the stove, add the cubed potatoes and cook for 12-15 minutes, until just fork tender. Drain and add the potatoes to the large skillet or casserole dish you'll be using.
  2. While the potatoes are boiling, preheat the oven to 425°F. Also use this time to prepare the pizza sauce if you're making it from scratch by simply mixing all ingredients together in a bowl.
  3. Toss the boiled potatoes with the onion powder, garlic powder, pepper, and salt to season them slightly to taste.
  4. Pour 3 cups of pizza sauce over the seasoned potato cubes to cover them.
  5. Reserving ½ cup for later, sprinkles the shredded chesse over the top of the potatoes and sauce.
  6. Cover the dish with foil and bake in the preheated oven for about 30 minutes.
  7. Remove the foil, add the rest of the cheese and any toppings you would like to add to the casserole, before baking the dish for another 10 minutes to crisp up.

      Um, yes you have. Casserole: "a kind of stew or side dish that is cooked slowly in an oven". It's any dish cooked in the oven.
