A healthy & delicious meatless recipe that will have you forgetting about the meat! Pulled BBQ Jackfruit Sandwiches with Tahini Slaw that are gluten-free, vegan, & top-8 allergy-free! Great for a quick & easy plant-based weeknight dinner!
Long ago in 2016 (or maybe 2015), I had jackfruit for the first time. The allure of enjoying a bbq pulled “pork” sandwich again was rather enticing and every plant-based eater’s go-to substitute pointed to the “jack”. If you or your family is new to jackfruit, a pulled bbq sandwich is a great introductory recipe to use it in. Of course it’s different thank “pork” or any “pulled meat”, but different in a good and delicious was. The jackfruit soaks up whatever flavor(s) you cook it with (just like mushrooms or tofu does)…in this case, bbq sauce!
You know me and how I always have to throw my own extra spin on things. What would be a great addition to a pulled bbq jackfruit sandwich? Some slaw! Not just any slaw, but some TAHINI slaw! Picture that first bite. Crunchy and nutty tahini broccoli slaw with the warm pulled flavor-explosion of the bbq jackfruit. It is texture heaven! I also used my homemade gluten-free sourdough bread here (no…sorry. I never posted the method; it was an ebook waiting to happen…but it still hasn’t happened). Basically, the taste buds didn’t know what hit ’em with that first bite!
There is always some of THIS gluten-free sourdough though! Delicious and without any of the work! You could just eat this pulled bbq jackfruit without the bread too! Maybe served over a bed of warm grains or chilled for a salad, rolled into a wrap, or thrown onto some pizza! I tossed in some chopped up mushrooms to the jackfruit to give it an even greater veggie boost. On that note, jackfruit is a fruit…right? Not a veggie; I guess we’re so trendy we’re using fruit to mimic meat now.
My mom was a bit skeptical about jackfruit when I first introduced this dish to her. But like any good mom, she put on a good face and gave it a try. Low-and-behold (as usual), she loved it! Whenever I can get the fam to try and greatly enjoy a totally plant-based dinner, I call that a win. They’re still always hesitant on the unique vegan meals. But you know what they say, never judge a book (or food) by its cover!
Before I ramble on too much longer (my stomach is growling as I’m writing this!), let me give you this yummy and so super easy recipe! You only need the jackfruit, mushrooms, some spices, your favorite bbq sauce, some great gluten-free bread/buns, tahini, broccoli slaw, and the ability to heat things up in a skillet and mix things together in a bowl! O…and the ability to eat 😉 (I also suggest you double, triple, QUADRUPLE the recipe! Leftovers are on point!)
