The inaugural pumpkin recipe post! I wasn’t sure which one to share first, but going with the back-to-school theme still, I thought more snack bites would be fitting (yes, I’m falling to the trend!). Actually, I’m falling to all the trends with this post! I’m playing along with bringing you Fall, back-to-school, kid-approved, easy, snack bites, all in a timely manner (even though I wouldn’t mind posting summer mojitos on Christmas and gingerbread on Memorial Day!) I don’t like to follow what the “internet authorities” tell bloggers to do, but I’ll play along today! You’ll be happy I did too. These pumpkin pie, I’m talking ultra-pumpkin, snack bites are going to change the way you think about all things pumpkin!

Why are these so ultra-pumpkiny? There are 4 pumpkin components to these bites:

1 – Raw Pumpkin Seed Butter

2 – Raw Pumpkin Seeds

3 – Pumpkin Pie Spice

4 – Pumpkin Puree

So if you like pumpkin, you’ve come to the right blog! Bonus, if you’re like me and don’t really like the typical “pie”, these bites are for you too! Triple bonus, if you’re so pumpkin-obsessed that you need it year-round, no one will think you’re “weird” eating “pumpkin pie” in the dead of summer in the form of these bites! We can call them “Clandestine Bites of Pumpkin Pie Bliss”!

And just like my other bites, these are 100% allergy-free and the perfect safe snack for school! None of the top 8, meaning no nuts either! Instead, I filled these with the seedy goodness of the pumpkin seed! I love raw pumpkin seeds to snack on. I feel they have this great smokiness to them too, so they can be great in savory or sweet recipes. Another fantastic thing about pumpkin seeds is they make a great seed butter! I almost shared my pumpkin butter recipe today, but decided that could wait a few weeks. For these bites I actually used my favorite raw, organic, stone ground nut butter brand, Dastony! I fell in love with them because they make the best coconut butter (I could not live without that stuff!), but their other nut butter are freaking-fantastic as well. Thus, perfect for making some quality bites!

I’m going to go off on a tangent here. Have you ever roasted your own “scooped out of a pumpkin” pumpkin seeds? I think I’ve only ever carved a pumpkin once at home where we then removed the seeds to roast in the oven. However, I do remember how good they were! I’m also a big for of eating the shell too (of course that’s not the kind you want for this recipe), but the chewier the better! I also don’t like calling pumpkin seeds, pepitas, which is the Spanish term for pumpkin seed. Anyway, pumpkin seeds are just one amazing little seed regardless. They are packed with iron, zinc, magnesium, omega-3s, and tons of antioxidants. Since traditional pumpkin pie doesn’t contain the seeds, I guess you can call these bites the most power-packed superfood pumpkin pie you’ll ever eat! (So many possible names for such a humble bite!).

Ingredients

  • 1/4 Cup Sprouted Raw Pumpkin Seed Butter
  • 1/4 Cup Raw Unsalted Pumpkin Seeds
  • 2 Cup Gluten-Free Rolled Oats
  • 1/4 Cup Pure Pumpkin Puree
  • 1 Tsp Pumpkin Pie Spice
  • 1/2 Tsp Pure Bourbon Madagascar Vanilla Extract
  • 1 TB Stevia Syrup (or Sugar-Free Maple Syrup)

Instructions

  1. In a food processor, combine all ingredients except 1 cup of the oats.
  2. Blend until you get a “meal texture”, then add the last cup of oats and blend until you get a “rollable” texture.
  3. With you hands, roll 10-12 balls, making 5-6 servings (2 balls per serving).
  4. Keep refrigerated or in the freezer as we know I love them!

    I’ve never tried pumpkin seed butter but it sounds wonderful. I love almond butter and pumpkin seeds. I don’t have my first pumpkin post ready yet, still working on apples. Technically I don’t think pumpkin pie spice is considered pumpkin. Just kidding! :))))) These bites look great.

    Yum, these sound and look amazing. I’d love to try them, but it’s going to be hard to find some of the ingredients int he UK. Even pumpkin puree is hard to get hold of! And last year I had to make my own pumpkin spice #tastytuesdays

    The ” internet authorities” I love that, and they are after you with a red siren! haha! Although I bet they’re very pleased with this. I’m personally not crazy about pumpkin, but my husband and daughter are and I make a slew of things for them at the first sign of Fall … or sooner if the IA are after me. I love that you use so many pumpkin items in this recipe- you pack all the nutrients into these scrumptious little balls.

    These look delicious! Have any suggestions though if we cannot get pumpkin seed butter? Sunflower seed butter maybe? I had no idea they even made it although it sounds awesome!

    You had me at pumpkin everything. I just adore pumpkin seeds as well. I have made my own pumpkin butter but remember it being quite an ordeal because my food processor didnt’ want to play nice. I’ll have to check out this brand because you said coconut butter and my eye lit up 😉 Coconut butter = heaven, pure heaven! I’ll be trying these soon for sure!! Pinning!!

      My mission will be to make “pumpkin butter” like fruit butter this year! I’m drooling over what I’m imagining the smell to be like (if you do it in the slow cooker!)
      Dastony is the ONLY coconut butter to have EVER!!!! I am so brand loyal to them!

    oh girl you KNOW I LOVE PUMPKIN..can’t wait to begin making and posting more this season! especially my 50 healthy recipes post that you contributed to 😉
    but whenever I have extra pumpkin leftover you know what I do? add some cinnamon, stevia, and vanilla and JUST EAT IT 😀

      I always freeze the pumpkin in baggies and pop it out in a bowl, microwave to defrost….and then make pancakes 😛

    I pushed pumpkin out a bit after some family and friends thought I was crazy with all my pumpkin stuff the last 2 weeks… and I even got comments on the pumpkin candles and air fresheners in my house as I guess that isn’t suppose to happen until after Labor Day and the temps get cool enough….. umm in my defense it was in the 60s last week not my fault Mother Nature is having hot flashes!
    Love all the pumpkin and giggled and love the idea of gingerbread for Memorial Day!

    I’ve always wondered why people also tend to call pumpkin seeds “pepitas”. Your “Clandestine Bites of Pumpkin Pie Bliss” sound so good – I really like pumpkin, but I would’ve never thought to combine so money pumpkin products in one recipe 😀 And apart from the pumpkin seed oil that I use on my salad year-round, I haven’t had any pumpkin meals so far.

    Hahahahahah 😀 “Clandestine Bites of Pumpkin Pie Bliss”, that is perfect! There are more pumpkin ingredients in these orbs than non-pumpkin ingredients…that is quite an accomplishment. And I know you’re going to shake your head in disappointment, but I’ve never had pumpkin seed butter. I’ve had pumpkin seeds though! But never scooped out and roasted myself. Sounds like a lot of work, and by the time I’m done carving my pumpkin I’m pretty tired 😀 hehe I really need to get on the pumpkin recipes, but I’m just not feeling it yet since it’s still 90 degrees outside :/

      I only just had pumpkin seed butter a few months ago, so it’s okay 😉 It took me 18 years too!
      It’s not too bad! Just like any squash seed, just scoop the guts out, put them in a colander and rinse the icky off! Then dry, and ROAST!!! (With cinnamon!)
      It’s getting colder and colder in the mornings…..summer is slipping away fast!

    Roasted pumpkin seeds from the inside of a pumpkin are my favorite and I make them every year! I put them in the oven while I’m carving the pumpkin 🙂
