Have your pumpkin pie all in one bite. Pumpkin seeds, butter, puree and spice along with whole grain oats, combine to create a healthy allergy-free, gluten-free, and vegan snack bite! Enjoy the flavor of Fall with no baking required!
The inaugural pumpkin recipe post! I wasn't sure which one to share first, but going with the back-to-school theme still, I thought more snack bites would be fitting (yes, I'm falling to the trend!). Actually, I'm falling to all the trends with this post! I'm playing along with bringing you Fall, back-to-school, kid-approved, easy, snack bites, all in a timely manner (even though I wouldn't mind posting summer mojitos on Christmas and gingerbread on Memorial Day!) I don't like to follow what the "internet authorities" tell bloggers to do, but I'll play along today! You'll be happy I did too. These pumpkin pie, I'm talking ultra-pumpkin, snack bites are going to change the way you think about all things pumpkin!
Why are these so ultra-pumpkiny? There are 4 pumpkin components to these bites:
1 - Raw Pumpkin Seed Butter
2 - Raw Pumpkin Seeds
3 - Pumpkin Pie Spice
4 - Pumpkin Puree
So if you like pumpkin, you've come to the right blog! Bonus, if you're like me and don't really like the typical "pie", these bites are for you too! Triple bonus, if you're so pumpkin-obsessed that you need it year-round, no one will think you're "weird" eating "pumpkin pie" in the dead of summer in the form of these bites! We can call them "Clandestine Bites of Pumpkin Pie Bliss"!
And just like my other bites, these are 100% allergy-free and the perfect safe snack for school! None of the top 8, meaning no nuts either! Instead, I filled these with the seedy goodness of the pumpkin seed! I love raw pumpkin seeds to snack on. I feel they have this great smokiness to them too, so they can be great in savory or sweet recipes. Another fantastic thing about pumpkin seeds is they make a great seed butter! I almost shared my pumpkin butter recipe today, but decided that could wait a few weeks. For these bites I actually used my favorite raw, organic, stone ground nut butter brand, Dastony! I fell in love with them because they make the best coconut butter (I could not live without that stuff!), but their other nut butter are freaking-fantastic as well. Thus, perfect for making some quality bites!
I'm going to go off on a tangent here. Have you ever roasted your own "scooped out of a pumpkin" pumpkin seeds? I think I've only ever carved a pumpkin once at home where we then removed the seeds to roast in the oven. However, I do remember how good they were! I'm also a big for of eating the shell too (of course that's not the kind you want for this recipe), but the chewier the better! I also don't like calling pumpkin seeds, pepitas, which is the Spanish term for pumpkin seed. Anyway, pumpkin seeds are just one amazing little seed regardless. They are packed with iron, zinc, magnesium, omega-3s, and tons of antioxidants. Since traditional pumpkin pie doesn't contain the seeds, I guess you can call these bites the most power-packed superfood pumpkin pie you'll ever eat! (So many possible names for such a humble bite!).

Rebecca @ Strength and Sunshine
That they do!
kimmythevegan
I would call these Fall Balls!!! So cute. I'm so used to little snack bites being made of chocolate and dates, these are a refreshing change =) And I'm pinning them.
Rebecca @ Strength and Sunshine
Hahahaha 😉 Another perfect name!
Raia
Hmm... Think you could get any more pumpkin in there? 😉 These sound fun - I think I have everything to make them!

Rebecca @ Strength and Sunshine
I know you can't!
Quinn Caudill
I’ve never tried pumpkin seed butter but it sounds wonderful. I love almond butter and pumpkin seeds. I don't have my first pumpkin post ready yet, still working on apples. Technically I don't think pumpkin pie spice is considered pumpkin. Just kidding! :))))) These bites look great.
Rebecca @ Strength and Sunshine
I was cutting it close with that one...but pumpkin in the name, it's pumpkin!!
Quinn Caudill
You are correct. :)))
Stephanie
YUM!!
Rebecca @ Strength and Sunshine
Thanks!
Grace
Interesting, I've never thought to put pumpkin seeds with actual pumpkin puree. I will definitely be trying these out. I imagine they will taste like the epitome of fall.
Rebecca @ Strength and Sunshine
If you love pumpkin 😉
Sherry
I've never tried pumpkin seed butter, but I love pumpkin seeds and pumpkin. I'm sure these are great. I haven't made anything yet with pumpkin, but I guess I need to kick off the season:-)
Rebecca @ Strength and Sunshine
Well then these are the perfect kick-off bites for you 😉
Linda
Rebecca,
These look and sound amazing! Of course, I love anything with pumpkin as an ingredient! Gonna have to try this recipe.

Rebecca @ Strength and Sunshine
They totally are! Thanks Marla!
Emma
I'm not a fan of pumpkin pie but these sound really good.
Rebecca @ Strength and Sunshine
So I'm guessing this will change you mind...since it isn't "pie" 😛
Evi @ greenevi
This is so creative here! I've never made anything with pumpkin butter, I only spread it on toast, so I definitely have to make these yummy bites! 🙂
Rebecca @ Strength and Sunshine
Not pumpkin butter, but pumpkin SEED butter 😉
sue
Hi Rebecca - Congratulations! Your post was in my top two picks for this week's #AnythingGoes link up.
Rebecca @ Strength and Sunshine
Thanks Sue!
Audrey
Pumpkin seed butter is a new ingredient to me, I will have to check it out.

Kalee
I love pumpkin recipes, so far I have made a pumpkin spice popcorn that is totally delicious. 🙂 I love your idea to make pumpkin seed butter, I've never tried it, so I am adding it to my list. Your pumpkin bites look great!
Rebecca @ Strength and Sunshine
Oooo pumpkin popcorn! That's calling me
Evija
These look delicious!
Rebecca @ Strength and Sunshine

Krissy @ Pretty Wee Things
So 'pumpkin-y'! They look delicious and super healthy! I can't wait to give them a go.
Rebecca @ Strength and Sunshine
Thanks dear! You would love them!
Jess Helicopter
God these look SO good. I might make these for the kids. Not sure I would make them so sweet though but then I don't have a major sweet tooth. The kids would probably love them sweet. 🙂
Rebecca @ Strength and Sunshine
These aren't sweet! Haha! No very anyway, I don't like sweet either 😛
Kathy
These look great! I need to try this recipe.
Rebecca @ Strength and Sunshine
I hope you do!
sue
I love your photography and these little bites look delicious. I wouldn't be able to stop at one but they are healthy options.
Rebecca @ Strength and Sunshine
Thank you!
Emma T
Yum, these sound and look amazing. I'd love to try them, but it's going to be hard to find some of the ingredients int he UK. Even pumpkin puree is hard to get hold of! And last year I had to make my own pumpkin spice #tastytuesdays
Rebecca @ Strength and Sunshine
I make my own pumpkin spice! Why waste that money!
Linda @ Veganosity
These look so good! I love pumpkin, but I'm just not ready to give in to fall. I don't care what the "blogger experts" say. 🙂 Yes, we roast our pumpkin seeds every Halloween. It's the best way to eat them.
Rebecca @ Strength and Sunshine
Haha, but I'm not giving in to Fall either! I will fight it tooth and nail!
Liz
YUM! I'm so ready for pumpkin recipes to make their return... Can't lie though.. I've been baking with it all year long.. it really isnt seasonal to me- LOL!
Rebecca @ Strength and Sunshine
It is not seasonal 😉
Jess @hellotofit
MMM I think I'm ready for all things fall now! This looks like a great snack to have at work.
Rebecca @ Strength and Sunshine
It sure is!
Melissa @ vegan does it
I am so ready for pumpkin even if it is still way hot out here! I love all the pumpkin-y goodness in these little bites. I've roasted the seeds after carving pumpkins once or twice and love eating them with the shell on too 🙂
Rebecca @ Strength and Sunshine
Good thing canned pumpkin doesn't have to be seasonal!
The shells are the best!
Jendi
I have scooped out the pumpkin seeds and roasted them several times. I've yet to find a seasoning mixture that I just love - I like them, but always want to change it a bit. Happy Fall!
Rebecca @ Strength and Sunshine
More reasons to make them more often!
Sarah Walker Caron (Sarah's Cucina Bella)
Sometimes it's okay to "fall to the trend." These bites sound so tasty with all that pumpkin goodness!
Rebecca @ Strength and Sunshine
Only in this case 😉
Lisa @ RunWiki
The " internet authorities" I love that, and they are after you with a red siren! haha! Although I bet they're very pleased with this. I'm personally not crazy about pumpkin, but my husband and daughter are and I make a slew of things for them at the first sign of Fall ... or sooner if the IA are after me. I love that you use so many pumpkin items in this recipe- you pack all the nutrients into these scrumptious little balls.
Rebecca @ Strength and Sunshine
The best way to celebrate the pumpkin and make fall a bit easier to "ease" in to!
Kristy @ Southern In Law
Yum yum yum! These look SO good!
Rebecca @ Strength and Sunshine
Thanks Kristy!
Chrisy @ Homemade Hooplah
Always love a dessert food that makes me feel a little less guilty 😀 Would love to whip up a batch of these to get me through the workday!
Rebecca @ Strength and Sunshine
They will get you through any day!
Heather
Those look delicious. I have not made anything pumpkin, yet. I did make banana bread lol. I've never tried pumpkin seed butter, in fact I've never heard of it.. Thanks for the recipe.
Rebecca @ Strength and Sunshine
Nothing wrong with banana bread...or zucchini bread....or pumpkin bread..any quick bread!
Heather
I'm baking my way through a cookbook and it is so much fun!!!
Michele @ paleorunningmomma
I'll definitely be trying that pumpkin seed butter! Everything about this recipe looks delicious 🙂
Rebecca @ Strength and Sunshine
It's the bomb! The taste of pumpkin seed butter is intense, but it's good!
jill conyers
My inaugural pumpkin recipe was baked oatmeal bars. Yummy! Pinned your recipe for menu planning 🙂
Rebecca @ Strength and Sunshine
I approve 😉 Oats and pumpkin were make for each other! xoxo
Sheena @ Tea and Biscuits
They look perfect, I'm all about pumpkin pie spiced anything right now!
Rebecca @ Strength and Sunshine

Yum! I'm almost ready for pumpkin. Trying to hold onto summer as long as I can. 🙂
Rebecca @ Strength and Sunshine
I'm still holding on to summer! I'm just including pumpkin 😉
Laura
These look delicious! Have any suggestions though if we cannot get pumpkin seed butter? Sunflower seed butter maybe? I had no idea they even made it although it sounds awesome!
Rebecca @ Strength and Sunshine
Ha, ground your own!
Sam @ PancakeWarriors
You had me at pumpkin everything. I just adore pumpkin seeds as well. I have made my own pumpkin butter but remember it being quite an ordeal because my food processor didnt' want to play nice. I'll have to check out this brand because you said coconut butter and my eye lit up 😉 Coconut butter = heaven, pure heaven! I'll be trying these soon for sure!! Pinning!!
Rebecca @ Strength and Sunshine
My mission will be to make "pumpkin butter" like fruit butter this year! I'm drooling over what I'm imagining the smell to be like (if you do it in the slow cooker!)
Dastony is the ONLY coconut butter to have EVER!!!! I am so brand loyal to them!
Nicole
Yay for pumpkin season! I'll definitely have to give these a try to add to my list of quick and easy, healthy snacks for my daughter. Thanks for sharing!
Rebecca @ Strength and Sunshine
You and she will love them 😉 Thanks!!
Rachel @ Athletic Avocado
yay! Pumpkin is where its at! 🙂
Rebecca @ Strength and Sunshine
For sure!!!
Sarah Grace
oh girl you KNOW I LOVE PUMPKIN..can't wait to begin making and posting more this season! especially my 50 healthy recipes post that you contributed to 😉
but whenever I have extra pumpkin leftover you know what I do? add some cinnamon, stevia, and vanilla and JUST EAT IT 😀
xo,
Sarah Grace
Rebecca @ Strength and Sunshine
I always freeze the pumpkin in baggies and pop it out in a bowl, microwave to defrost....and then make pancakes 😛
Sarah
I pushed pumpkin out a bit after some family and friends thought I was crazy with all my pumpkin stuff the last 2 weeks... and I even got comments on the pumpkin candles and air fresheners in my house as I guess that isn't suppose to happen until after Labor Day and the temps get cool enough..... umm in my defense it was in the 60s last week not my fault Mother Nature is having hot flashes!
Love all the pumpkin and giggled and love the idea of gingerbread for Memorial Day!
Rebecca @ Strength and Sunshine
I know!!! It's chilly now, the morning's I need a jacket!
I like eating against the season 😉 Always have!
Debbie @ Coach Debbie Runs
I didn't think I was ready for pumpkin yet, but these look so good that I may have to change my mind.
Rebecca @ Strength and Sunshine
Girl, these are 365-Day bites!
Kat | curlsnchard.com
I've always wondered why people also tend to call pumpkin seeds "pepitas". Your “Clandestine Bites of Pumpkin Pie Bliss” sound so good - I really like pumpkin, but I would've never thought to combine so money pumpkin products in one recipe 😀 And apart from the pumpkin seed oil that I use on my salad year-round, I haven't had any pumpkin meals so far.
Rebecca @ Strength and Sunshine
I know! It's Mexican/Spanish!! What do they know about pumpkin?! Nothing!! Haha!
I like my name Better too 😉
Damn! Pumpkin Seed Oil! Now if I'd added that....hahahaha!
Kat | curlsnchard.com
Hahaha, that would've been crazy 😀 I love me my pumpkin seed oil though!
Rebecca @ Strength and Sunshine
It's so expensive 🙁
Allison Jones
I'm SO happy pumpkin season is upon us and I'm always looking for healthy snack ideas. These look awesome.
Thanks for sharing,

Rebecca @ Strength and Sunshine
Thank you!!! Pumpkin is one of the only excitements 😉
Lauren @ Eating with a Purpose
I lovvvvve pumpkin anything- I'm impressed how many of your ingredients include pumpkin in some form 🙂 Pinning to make!
Rebecca @ Strength and Sunshine
Haha, I tried to go ALL out! Gotta start pumpkin season with a bang!
Laura
If I hadn't already repinned these I would be pinning these!!!! They look so tasty, perfect snack to take with you on the go, and the "nut free" element has me especially happy.
yum yum yum, I'm so happy it's fall!
Rebecca @ Strength and Sunshine
Haha, thank you so much dear!! Hooray for pumpkin!
Natalie | Feasting on Fruit
Hahahahahah 😀 “Clandestine Bites of Pumpkin Pie Bliss”, that is perfect! There are more pumpkin ingredients in these orbs than non-pumpkin ingredients...that is quite an accomplishment. And I know you're going to shake your head in disappointment, but I've never had pumpkin seed butter. I've had pumpkin seeds though! But never scooped out and roasted myself. Sounds like a lot of work, and by the time I'm done carving my pumpkin I'm pretty tired 😀 hehe I really need to get on the pumpkin recipes, but I'm just not feeling it yet since it's still 90 degrees outside :/
Rebecca @ Strength and Sunshine
I only just had pumpkin seed butter a few months ago, so it's okay 😉 It took me 18 years too!
It's not too bad! Just like any squash seed, just scoop the guts out, put them in a colander and rinse the icky off! Then dry, and ROAST!!! (With cinnamon!)
It's getting colder and colder in the mornings.....summer is slipping away fast!
Katie @ Recipe for Perfection
Sounds like a great little snack bite for fall!
Rebecca @ Strength and Sunshine
Thanks!
Kristina
ultra pumpkin sounds great to me! I am ready, I may begin with these...
Rebecca @ Strength and Sunshine
It would be a good choice 😉
Farrah
hehehe, let the pumpkin recipes begin! :D! These look delicious...and they probably wouldn't last a day here. 😛
Rebecca @ Strength and Sunshine
They didn't last long here either 😉
Marye
These look like the perfect pick me up snack for mid afternoon!
Rebecca @ Strength and Sunshine
For sure!
Emily @ My Healthyish Life
Roasted pumpkin seeds from the inside of a pumpkin are my favorite and I make them every year! I put them in the oven while I'm carving the pumpkin 🙂
Rebecca @ Strength and Sunshine
And the smell is just AHHHH <3
Harriet Emily
Mmmm, these are beautiful Rebecca! Nothing gets me better prepared for Autumn than Pumpkin flavours! I definitely need to try some pumpkin butter too, it sounds delicious! Can't wait to try these!
Rebecca @ Strength and Sunshine
Thank you! I love the GREENness of the butter! Haha, the green hints in the bites might scare some people 😛
