Hey there pumpkin people! You didn’t think I was done with the pumpkin recipes just yet, did you? Well I’m not! And I just have to share these since I’ve been snacking on them all month and feel bad that they just kept getting pushed back on the posting schedule. I didn’t feel too bad though since I had this and these to share 😉 These chickpeas still deserved their day to shine though!

These also seemed like a great recipes to share so soon after Halloween. You may find yourself snacking on candy (which I say go for!), but you might want a healthier snack to balance it all out. Some sweet crunchy chickpea protein seemed like a good swap. These are sugar-free so you won’t have to worry about that. Leave these in a big bowl when you have upcoming holiday parties too! They won’t spoil any appetites, but will totally satisfy the noshing requirement!

Now, really, I’m not a big snacker. You won’t find me grazing the kitchen and cupboards. I like big meals, not bits or this and that. My mom is a big snacker, eating this and that, so is my brother. I fall a bit short of that trait. However, I do appreciate a good crunchy snack. I absolutely love my popcorn and gluten-free pretzels. I just like my snacky-snacks to be a part of a bigger meal, like lunch! What is a sandwich without a crunchy side? Nothing, that’s what!

Since I eat my lunch on Tuesdays half during a lecture, then the other half shoveled down my throat before a 3 hour lab, I usually nosh on the crunchiness during lecture. I’ve been using these chickpeas to fuel my academic brain power! Protein powder for sure; in all it’s plant-based glory! Hopefully I’m not disturbing anyone with my crunching. These are super crunchy peas!

Which reminds me of something a bit off topic. Why is it, when you’re taking a test, and the room is silent, your stomach makes the loudest noises!  never does that normally when there is sound and talking, but when all is silent, it goes crazy! I know it’s louder to the individual (yourself), than it is to everyone on the outside, but they can still hear it! I know I’m not the only one this happens too 😛 It’s so…embarrassing? I think it’s pretty distracting even to myself! Why must the tummy talk while I’m trying to describe the functions of NADH and FADH+ on electron transport????

Pumpkin Spice Roasted Chickpeas

A perfect healthy, crunchy, pumpkin snack! Satisfy your sweet snack craving with pumpkin spice roasted chickpeas. Gluten-free, vegan, and allergy-friendly, you won’t be able to keep your hands off them!

Ingredients

  • 3 Cups Cooked Chickpeas (from 1 Cup Dry)
  • 1/4 Cup Pure Pumpkin Puree
  • 1 Tsp Homemade Pumpkin Pie Spice
  • 1 Tsp Erythritol (or 1 TB Maple Syrup if so inclined)
  • Dash of Extra Cinnamon

Instructions

  1. Preheat the oven to 375°F.
  2. In a bowl, combine the chickpeas, pumpkin, and spices. Toss to fully coat.
  3. Line a baking pan with parchment paper or silpat and spread out the chickpeas.
  4. Bake for 45-60 minutes, stirring occasionally, until fully roasted and crunchy.
  5. Allow to cool completely before storing in an airtight jar.

Gotta love the seasonal crunch! Roasted chickpeas are pretty addicting, so if you want more recipes, check out my smoked paprika & cinnamon ones or my cinnamon “sugar” ones as well! When I first made these chickpeas, I had a ton to cook, so I made another flavor as well. You’ll have to wait a bit longer for those, but you know I never let you down…eventually! Now go get your healthy snacking on! Although I’d suggest you throw in some candy and make a “trail mix” if you will 😉 At least do some chocolate chips!

    Hi there, this little snack looks great! I used to eat wasabi peas like it was my job when I was pregnant with my kids, I just loved the heat AND the crunch. This would be a fun alternative I bet my boys would eat, I’ll just tell them they are “chips”. Thanks for sharing!

    Definitely a snacker here! I eat little bits all throughout the day, and I’d take lots of small portions of food over a big, heavy meal anytime. I love roasted chickpeas, but I’ve never tried pumpkin. They sound great!

    I just started roasting garbanzos. Don’t know why it took me so long. Your version sounds amazing. The one thing that confuses me is the roasting time and temp. Every recipe I look at has it different. I roasted my at 375 and in 25 minutes they were done. Everyone’s oven is different. Makes putting a recipe together a bit difficult! I do love your flavors in this one! 🙂

      It seems to take a different temp and time for each recipe. These took longer because of the pumpkin I think. I’m always playing around with the numbers though!

    Chickpeas are so low cost, and so healthy! I use a different recipe currently for my roasted chickpeas as a snack, but I’m going to try yours next time I make them because I love the fact you’ve added pumpkin pie spice! Yummy!! 🙂

    GIVE ME ALL THE ROASTED CHICKPEAS. Seriously though. I can’t make these and expect them to be around the next day. I love them. This woudl be amazing on oats or even in a salad. HOLY YUM

    It makes perfect sense you’re fuelling your brain with chickpeas because somebody once aptly described them as little brains ;). Saying this around Halloween would have been even more fitting. Either way, I’m always up for chickpeas.

    These are awesome!! …and oh my word, perfect timing girl!! I was just ate Whole Foods and about to pick up some chickpea snacks like this and they were so expensive! This is such a better deal… and I’m sure they’re much fresher and more delicious! Such a win! Thanks for the recipe!!

    I’m a huge snacker and I’m pretty much constantly eating haha. Not sure if that’s really a good thing, but it is what it is 🙂

    My stomach was grumbling during my Spanish midterm on Monday! So awkward in such a small class!

    Hahahaha I do hate it when my stomach makes sounds during tests 😀 Or sometimes my water bottle will gurgle or squeak or something and you can like audibly hear yourself swallow…freaky stuff! I’m glad the pumpkin fun isn’t all over yet though, I’m always up for pumpkin snacking 🙂
