I've heard you loud and clear! You want healthy, quick and easy breakfast options that fit your family's hectic lifestyle and dietary needs! Don't fret! The breakfast queen has you covered! As you're setting new year's resolutions, I bet you're thinking about eating healthier and skipping breakfast, resorting to packaged granola bars for the kids, rushing out the door, and just guzzling coffee yourself is no longer a viable option. Can 2019 be the year of "Better Breakfasts"? I say it can!

What's in this purple sweet potato yogurt breakfast bowl?

The base of this yogurt bowl is of course yogurt! Use unsweetened plain coconut yogurt to skip all those added sugars! Add sweetener to taste, vanilla extract, and of course, purple sweet potato! The vibrant natural color makes this bowl super kid-friendly and they'll feel like they're eating a "fun" store-bought sugary treat when in reality, they're eating real unprocessed for! You can add in plant protein powders for a post-workout meal for yourself, add flavors to the yogurt with other extracts, spices such as cinnamon, ginger, turmeric (which will change the color!). Top your bowl with anything from fresh fruit, flax seeds, coconut chips, gluten-free oats, chia seeds, chocolate chips...you get the picture!

How do you make this quick and easy yogurt bowl?

The beauty of a yogurt bowl is the "no-cook" quick to assemble factor. However, this purple sweet potato bowl does require you to pre-steam or boil your purple sweet potato! You'll be taking the flesh of the cooked potato, adding it to a blender with your yogurt and yogurt add-ins, giving things a blend (just like a smoothie), pouring out into a big bowl and then topping with all the fun things, to your heart's content! (The toppings are the most important part of any meal...right?) Bonus points: this yogurt bowl is 100% meal-prep and make-ahead approved! Blend up the yogurt base and simply portion it out into mason jars or containers! These containers with a big base compartment and little individual slots will keep your toppings dry and safe from any sogginess if you're not eating them right away! They're also great for packing in lunchboxes and coolers to take on the road with you!

If you're new to coconut yogurt, you're in for a delicious dairy-free alternative! Even when coconut yogurt is plain and unsweetened, it tastes perfectly sweet, fresh, cool, and creamy! If you "think" you don't like coconut, don't worry about that either! Coconut yogurt doesn't really taste like "coconut". My go-to is So Delicious brand and they have large 24-ounce containers. They also have Unsweetened plain and Unsweetened vanilla, so depending on what you can find in the store, either one works deliciously well! Of course, if you have another yogurt preference, by all means, go with you and your family's favorite!

Ingredients

  • Per Serving:
  • 1 Cup Unsweetened Plain or Vanilla Coconut Yogurt
  • ½ Cup Mashed Purple Sweet Potato Flesh
  • ½ Tsp Pure Madagascar Bourbon Vanilla Extract (if using plain yogurt)
  • ½ Tsp Cinnamon* (other optional add-ins)
  • Toppings:
  • Milled Flax Seed
  • Chia Seeds
  • Toasted Coconut Flakes
  • Certified Gluten-Free Oats
  • Fresh Fruit
  • Chocolate Chips
  • Seeds or Nuts

Instructions

  1. In a blender or food processor, blend together the yogurt, mashed potato, and yogurt base add-ins until smooth.
  2. Pour out into a bowl or a meal prep container.
  3. Add your toppings directly or portioned off for later use.

*Yogurt add-ins: other spices, plant protein powder, cocoa powder, sweeteners (maple, honey, etc.)

You can pack in your healthy fats from the coconut and seeds/nuts you may add, healthy carbohydrates from the potato and other optional whole food toppings, and protein from a plant protein powder and/or from the seeds/nuts too! No added sugars, no artificial preservatives or colors (even if it looks like it!)     Looks Yummy. I love sweet potatoes but have never tried purple sweet potatoes. Makes it look very pretty! I also learned about Coconut yogurt.... I love how you bring forward fresh ideas!
