If you were born or grew up with food allergies, the only reason it get's hard and becomes isolating is when you go to school with other kids the first time or see that TV commercial for French Toast Crunch and ask your mamma if you can have some. You're world comes to a screeching halt when you realize you're different than everyone else. You can't just eat anything you lay your eyes on. You have to read labels and avoid cross-contamination.
Does that mean you'll never be able to eat the fun foods you see your friends eating, on advertisements, and at the store? Well, honestly...no. You won't be able to. BUT, you can make your own fun food with "free-from" ingredients! I don't let my food allergies stop me from eating fun, exciting, and delicious food. It may take a bit more work and creativity, but it's always well worth it. There is no boring, tasteless, and sad food in my household!
One meal that always has to be over the top no matter what? Breakfast, of course! Breakfast is the one meal of the day where "healthy" can be secondary to taste. For instance, when it's my birthday or some big holiday/celebration, breakfast needs to start the day in the most fun and colorful way possible. It's not like I can just go out for a big breakfast at one of New Jersey's famous dinners, order a big plate of pancakes with whipped cream and pools of syrup. But who says I have to miss out on those big celebratory breakfasts if I don't want to?
No child (young or old) should have to miss out or feel like their only breakfast option is applesauce. You may have to stay home and do some DIY in the kitchen, but the fun is just waiting. If you're a parent, what if it's your kid's birthday, but you're at a loss on what to serve them on that special morning? No longer can they have their favorite cereal or that awesome stack of French toast they saw on the IHOP commercial. What is there was one recipe that could guarantee a smile and be safe to eat? Would you make it?
I think I already know the answer to that one...and you do too 😉 A little pizzaz, a little color, a little sweet fun, while also being gluten-free, vegan, and free of the top 8? Ingredients
- 2 Slices of Gluten-Free Bread (of choice)
- 1 Cup Fruity Rainbow Rocks Cereal
- ½ Cup Lite Culinary Coconut Milk
- ½ Tsp Baking Powder
- ½ Tsp Cinnamon
- ½ Tsp Pure Madagascar Bourbon Vanilla Extract
- Toppings:
- Pure Maple Syrup
- Vegan Ice Cream (of choice)
- Homemade Marshmallow Fluff
Instructions
- In a wide bowl, whisk together the coconut milk, baking powder, cinnamon, and vanilla.
- Pour the cup of cereal out on a plate and place next to the bowl.
- Dip each slice of bread in the coconut milk mixture before coating both sides with the cereal on the plate.
- Heat a greased non-stick skillet over medium-high heat and cook both sides of the French toast slices for about 3-4 minutes.
- Transfer to a plate and top with anything you'd like!
