Before making the batter, brew the green tea. I used 1 bag, and let it brew in a mug for about 2 minutes. Let it cool before you use it in the pancakes.
In a mixing bowl, combine the flours, baking powder, matcha, and cinnamon, mix together. The add the applesauce, brewed green tea, and stevia. Mix again until you have pancake batter.
While the batter sets, heat a non-stick or greased skillet on the stove over medium-high heat. Then pour about 1/2 the batter in the pan. Cook for 2-3 minutes, flip and cook an additional 2 minutes. Repeat for the rest of the batter.
For the sauce, combine all ingredients and slowly add in the green tea until you get the right consistency (about 2 tablespoons was good for me).
