I was this close to sharing a cookie recipe today, but alas, I went with a super healthy vegetable instead πŸ˜‰ With all the baking talk this week, and the amount I will be throwing at you in the foreseeable future, it won't be bad to load in the veggies while we can. Since this is such a simple and easy dish, it would be the perfect last minute addition to you Thanksgiving table tomorrow!

Now, my favorite way to eat broccoli and cauliflower is straight up raw, but roasting is always a good thing too. Broccolini is a little weird to eat raw and with you hands, so to make it classy, roasting seemed like the go-to option for this "broccoli variety". Have you ever had broccolini? If not, you are in for a treat! It's almost like a mix between broccoli and asparagus. It has a long thin stalk and softer crowns. It's milder than broccoli though, with a pleasant subtle taste.

To enhance that natural light taste, roasting is a must, but also using some fresh lemon and herbs to complement it. The sauce is all lemon juice, a good dose of garlic, and tons of fresh parsley and dill! Yes, dill! I love lemon and dill together. Since dill has such a strong distinct taste, the lemon works well by toning it down a bit. All around, I just loved every flavor in this simple veggie dish and the "roastedness" was just an added bonus!

I roasted it pretty quickly too, just 20 minutes. I like a bit of crunch and not complete softness to my veggies. Even when it comes to roasting squash, I tend to take it out before it gets to soft. I don't want to whole "melt-in-your-mouth" feel. I like a little bite. I guess that's where my love for eating everything raw comes in to play! If I can eat it raw, I will! Especially beets, zucchini, and mushrooms. Those are the best, simply raw, sweet, and delish!

Ingredients

Scale
  • 1 Large Bunch of Broccolini
  • ΒΌ Cup Water
  • Zest and Juice of 1 Lemon
  • 1 Cup Chopped Fresh Italian Parsley (include the stems)
  • Β½ Cup Chopped Fresh Dill
  • 1 Tsp Minced Garlic
  • Β½ Tsp Onion Powder
  • ΒΌ Tsp Black Pepper

Instructions

  1. Preheat the oven to 415Β°F.
  2. In a food processor, combine all ingredients except the broccolini. Process until you have a smooth sauce.
  3. In a greased baking pan, layer in the broccolini, then pour and run in the sauce.
  4. Bake for about 20 minutes. Remove, and serve.

    Haha, the other day my husband had no idea what broccolini was, I had to educate him on it. I love it! It's a cross of 2 of my favorite veggies! I think I'm going to use this one as his introductory dish to a fantastic veggie.

    I've never had broccolini but I'm sure if I'd have seen it in the stores, I would have bought it πŸ˜€ It looks so cute and it really makes me want to try it asap. The Lime Garlic Herb Sauce sounds too good be true - it contains everything I love.... parsley, dill, garlic, lemon.... sounds amazing! I hope you had an amazing Thanksgiving!

    Even though I was a little sad at first with the almost cookie bit, I'm totally digging the veggie direction you've taken things today πŸ™‚ Broccolini is such a fun usually-forgotten vegetable, I think your broccoli asparagus hybrid definition is spot on! And roasted veggies with some lemon zing are wonderful! I used to be a raw veggie girl, but now me and my tummy both prefer cooked when it comes to cruciferous lol!

    I have recently become a broccolini convert, and I love the simplicity of this particular version. I usually do a quick saute with similar flavors, but I love the dill here. Will have to try that next time!

    I love my veggies raw or cooked. Prefer my broccoli and broccolini cooked. I love the simple ingredient list yet the flavor is enhanced by the lemon and garlic. That is my kind of veggie side dish.
