We all know how much of a potato addict, queen, obsessed-lover I am and as of last year, you also know that my love for mashed potatoes runs deep. Besides mac and cheese, I think mashed potatoes just have to be one of the coziest comfort foods. From evoking all the fall and winter holiday feels to just a hearty "stick-to-your-bones" nourishment.
Some (crazy) people pass on the mash. They say it's a "texture" thing. While I was growing up and eating gallons of my grandpa's FAMOUS decadent, buttery, ultra-smooth mashed potatoes during the holidays, those were like edible clouds. There was no texture; they were so smooth! I'm all for ultra-smooth mash, but I also love some texture, some rustic texture.
I think it goes along with my whole "soup and smoothie" dislike. I need some texture (not always; I'll take mashed potatoes any way!). The way to guarantee some subtle quality texture is to LEAVE THE SKIN on the potatoes! We all know I DO NOT have time for peeling anything and I'd never waste the precious skin of our lovely produce options (looking at you kiwi and mango skins!)
You know I actually debated on making a classic (vegan) buttermilk ultra-smooth mashed potato recipe or one a little fancier to share with you this year. Last year we went WAY out there, so I wanted to reign it in just a tad and get back to my roots. I did keep the white potato them, using some Eastern White Potatoes, but used a delicious combo of coconut milk, olive oil, and the cozy herbs of the season: rosemary and thyme!
I used my mom's old hand mixer to blend them up "just so", keeping a bit of texture. They still were creamy, delicious, and FULL of flavor (like these creamy garlic mashed potatoes)! Honestly, I could have eaten the entire pot myself (I have no control over potatoes!) This batch of rosemary thyme mashed potatoes does feed a crowd so it will be perfect at your Thanksgiving and holiday table this year! Rustic Rosemary Thyme Mashed Potatoes (Gluten-Free, Vegan, Paleo)

Ingredients
- 4 lbs White Skinned Potatoes
- 1 TB Dried Rosemary (crushed)
- 2 Tsp Dried Thyme
- 1 Tsp Minced Garlic
- 1 Tsp Onion Powder
- Β½ Tsp Black Pepper
- ΒΌ Cup Lite Culinary Coconut Milk
- 2 TB Herbed Olive Oil
Instructions
- Cube and boil your potatoes in a large pot for about 25-30 minutes.
- Drain and add the potatoes back to the pot.
- Add all other ingredients and blend or mash until your desired consistency is achieved.

And you didn't really think I would neglect to add the little tidbit that ketchup is a damn fine accompaniment to some mashed potatoes! So good...no judgment! Besides that, all I can say is mashed potatoes, specifically, these rustic rosemary thyme mashed potatoes in their creamy dairy-free glory are a MUST for the holidays. So go gather up your potatoes and get to boiling and blending!

I love mash potatoes but pretty much make a traditional recipe, although I do boil whole garlic with the potatoes and mash up together. I am definitely going to try and onion powder and coconut milk next time, along with the herbs. Looks really good.
