Summer is all about grilled fruits, winter is all about roasted!My favorite? Roasted grapes! They get this glorious deep, caramelized, rich-sweet taste. Little soft bursts of goodness (as if they weren't bursts of goodness as is!) Grapes have got to be in my top favorite fruits. My favorite are black first, then red, then green. They must be firm and sweet! During the winter when all the other lovely little biteable fruit is lacking, grapes are my go-to and you can guarantee to find them in my fridge (and freezer!)

That's a food-waste hack. Sometimes you buy WAY too many grapes and there is no way one little person will finish them all before they start to get soft...and turn into raisins or get moldy. Instead of throwing them out, make sure to wash, dry, and freeze them loosely in a big 'ole Ziplock bag! Then when you need some snacking fruit (or something to make a smoothie super creamy and frosty), just pop them out a few minutes before eating and they are cold firm bursts of joy yet again!

Or...if you don't feel like freezing them or you waited just a bit too long, ROAST THEM! Grapes had more uses than you thought, eh? They never have to go to waste, trust me! With it getting colder and colder with each passing day, eating frozen grapes may not be your top priority, so instead...use them for dinner! Throw some chicken tenders in your favorite cast iron, then add some grapes, sliced leeks, a few savory spices, and one more secret flavoring ingreindent...grape juice! You bet! this gluten-free and allergy-free dinner recipe is subtly sweet and deep in rich warming flavors and spices! You get to use two fancy sounding foods, grapes and leeks (at least...I feel like they have a bit of fancy-shmacy flare to them!)

Ingredients

Scale
  • 1 lb Skinless Chicken Tenders
  • 1 Cup Sliced Red Grapes (you can use black)
  • 1 Cup Sliced Leeks
  • 1 TB Fresh Chopped Parsley
  • 1 Tsp Dijon Mustard
  • 1 Tsp Minced Garlic
  • ½ Tsp Allspice
  • ½ Cup 100% Grape Juice (you can also use cranberry)

Instructions

  1. Preheat the oven to 375° F.
  2. In a seasoned 10-12 inch cast iron skillet, add all ingredients except the juice. Mix and toss with your hands to coat everything together.
  3. Spread the chicken pieces out and then add the juice.
  4. Bake in the oven for 20-25 minutes, until the chicken is properly cooked through.

    I'm always a fan of grapes in chicken salad, but never thought to roast them with some chicken. What a great idea! My favorites are definitely the black ones, but I like red ones too. 🙂

    Oh my god you just literally blew my mind! Roasted grapes? Freezing grapes? Why have I never come across this before?? I do my best to get through the bunch of grapes before they go soft haha, but now it's nice to know there are so many more options than I ever thought possible. Also, gorgeous recipe, definitely can't wait to give this one a try! 🙂
