Summer is all about grilled fruits, winter is all about roasted! My favorite? Roasted grapes! They get this glorious deep, caramelized, rich-sweet taste. Little soft bursts of goodness (as if they weren’t bursts of goodness as is!) Grapes have got to be in my top favorite fruits. My favorite are black first, then red, then green. They must be firm and sweet! During the winter when all the other lovely little biteable fruit is lacking, grapes are my go-to and you can guarantee to find them in my fridge (and freezer!)

That’s a food-waste hack. Sometimes you buy WAY too many grapes and there is no way one little person will finish them all before they start to get soft…and turn into raisins or get moldy. Instead of throwing them out, make sure to wash, dry, and freeze them loosely in a big ‘ole Ziplock bag! Then when you need some snacking fruit (or something to make a smoothie super creamy and frosty), just pop them out a few minutes before eating and they are cold firm bursts of joy yet again!

Or…if you don’t feel like freezing them or you waited just a bit too long, ROAST THEM! Grapes had more uses than you thought, eh? They never have to go to waste, trust me! With it getting colder and colder with each passing day, eating frozen grapes may not be your top priority, so instead…use them for dinner! You know how much I advocate fruit + chicken combos, from slow cooker to cast iron skillet!Skillet Chicken with Roasted Grapes & Leeks | Strength and Sunshine @RebeccaGF666 Savory with a subtle deep sweetness, this Cast Iron Skillet Chicken with Roasted Grapes & Leeks is a soul-soothing healthy, allergy-free, gluten-free, paleo dinner recipe that the whole family will enjoy!

Throw some chicken tenders in your favorite cast iron, then add some grapes, sliced leeks, a few savory spices, and one more secret flavoring ingreindent…grape juice! You bet! this gluten-free and allergy-free dinner recipe is subtly sweet and deep in rich warming flavors and spices! You get to use two fancy sounding foods, grapes and leeks (at least…I feel like they have a bit of fancy-shmacy flare to them!)

Better yet, as I always tell you, chicken never have to be boring! There are so many fun ways to flavor up that blank slate protein! Dinner is served…and devoured!

So tell me:

+ What’s your favorite color grape? BLACK! They are always the firmest and sweetest!

+ Do you like to freeze produce before it goes bad if you know you won’t get to it? YES!

I’m always a fan of grapes in chicken salad, but never thought to roast them with some chicken. What a great idea! My favorites are definitely the black ones, but I like red ones too. 🙂

Instagram post 2169912447125673010_462853852 Thanksgiving debate number 2! Side Dish or Dessert? 🤔 Where does the CLASSIC marshmallow-topped sweet potato casserole reside? 🤷‍♀️ * It's always been a "sweet" side dish in our family, definitely NOT a dessert! Boy have I MISSED this controversial dish due to the "all vegan marshmallows contain soy, and all soy-free marshmallows aren't vegan". This recipe has been in the works since last year and it is finally here, on the blog, perfected to a T! 👌🥳 THE Vegan Sweet Potato Casserole with Marshmallow (Gluten-Free, Allergy-Free)! 😋👌 * This Spectacular Sweet Potato Casserole is:👇 Gluten-Free ❤️ Allergy-Free 🧡 Vegan 💛 Sugar-Free 💚 Kid-Approved 💙 Paleo Topping Option 💜 6 Simple Ingredients 💖 EASY & Quick (just 10 minutes in the oven! 💝 The Healthiest Sweet Potato Casserole EVER 💗 Holiday Perfection for Thanksgiving, Christmas, Etc. 💘 * How does your family do the traditional sweet potato casserole? 🤔 We've ALWAYS been a "canned candied yam and marshmallow family. I know some people top it with nuts and brown sugar, but that gets a thumbs down from me. It MUST be marshmallow-topped (or in this case...homemade marshmallow fluff topped!) 😂😎 * Click the link in my bio @rebeccagf666 for the full recipe on the blog! 👆👆 https://strengthandsunshine.com/vegan-sweet-potato-casserole-marshmallow/ * #sweetpotatocasserole #sweetpotatoes #marshmallowfluff #aquafaba #thanksgivingrecipes #thanksgivingdinner #holidaybaking #glutenfree #vegan #dairyfree #eggfree #soyfree #nutfree #top8free #allergyfree #celiac #foodallergies #thefeedfeed #thebakefeed #glutenfreelife #foodallergymom #kidapproved #veganbaking #vegandessert #glutenfreedessert #glutenfreefood #glutenfreeliving #celiacdisease #healthybaking #nosugaradded
Instagram post 2164819317391112965_462853852 It's STUFFING Season! 🙌 Or...do you call it Dressing? 🤔 DEBATE! What do you call this classic Thanksgiving side? 🤷‍♀️ Technically, this is "dressing" since it was baked on its own (not inside a bird). 😝 My family has ALWAYS called it stuffing and I grew up in the Northeast. In the South, they tend to call it "dressing". They also tend to make it with...CORNBREAD! 🤩 * I ALWAYS make my famous "traditional" stuffing recipe (on the blog), but a cornbread stuffing sounded delicious to try this year!
