Caution: fiery heat ahead! This recipe is not for the faint of heart! I can't even handle much spice...I love it...but my body doesn't. However, sometimes we just have to "take one for the team" and "man up"! I love my salsas and I love the slow cooker....I had to finally try some sofrito! I didn't even know was sofrito was until I did some "googleing" before making this recipe.
I kept hearing the word "sofrito" on various internet channels and whenever anyone was taking about the restaurant Chipotle. I had always thought that sofritos was like rancheros and had to do with some form of eggs. That's why I never really dug in further to figure out what it was. Eggs = death...so I had to real interest. Then I heard some vegan people raving about sofrito and I knew there had to be something I was missing. Turns out "sofrito" is just a type of salsa. A spicy pepper and tomato cooking base.
Well I guess I could, and should, finally try this out for myself to end the self-imposed embarrassment. Sofrito is more of a Cuban/Puerto Rican/Caribbean cooking base of tomatoes, pepper, onions, garlic, and herbs that's used for cooking meats or as toppings for tacos and the like. Pretty simple and it could be made mild (I guess), but I wanted the real deal. Poblano and chipotle peppers it was! No holding back in the homemade sofrito I made. I blended the sauce up in the food processor, dumped it over some chicken in the slow cooker, and let the crockpot do its thing. The smell was amazing, the taste was amazing...and spicy 😉

Ingredients
- 4 Skinless Chicken Breasts
- Sofrito:
- 1 15oz Can Fire Roasted Diced Tomatoes (No-Salt Added)
- 1 Small Spanish Onion (1 Cup Chopped)
- 1 Poblano Pepper (½ Cup Chopped)
- 1 Red Bell Pepper (1 Cup Chopped)
- ½ Cup Chipotle Peppers in Adobo Sauce
- ¼ Cup Fresh Chopped Cilantro
- 1 TB Lime Juice
- 1 Tsp Minced Garlic
Instructions
- Roughly chop all sofrito ingredients and then process in a food processor to get a blended salsa texture (this will make about 3 cups).
- Place the chicken breasts in the slow cooker and then pour the sofrito on top of the chicken.
- Place the cover on the slow cooker and cook on low for 6 hours.

When I dumped out the excess sofrito and cleaned out the crock...I literally burned my eyes, nose and throat. I was horrified it would be TOO spicy, but once I actually sat down and ate dinner...it wasn't so over the top. Yes, it was spicy, but a good hearty spice! You will enjoy it if you like some heat and if not, but don't include the sofrito on your plate! The chicken has already soaked up the great flavors, you don't need the actual sofrito covering it to enjoy! Everyone can devour and enjoy, don't worry 😉
