The most delicious, moist, and easy slow cooker chicken yet! Slow Cooker Salsa Chicken requires just a few ingredients: your favorite salsa, some spices, and the chicken! The perfect healthy, gluten-free, paleo weeknight dinner to please everyone!
I eat pretty minimal amounts of chicken Maybe once a week, twice at the most. Well last week I ate it twice for dinner two days in a row and would have eaten every day that week for dinner. I had bought a jar of Green Mountain Gringo's Mild Salsa at the grocery that weekend and wanted to take a stab at a new easy chicken dish. I normally would never use a pre-made salsa as they usually are to spicy, or loaded with sodium, but GMG's salsas are awesome! There is only 90mg of sodium in 2 tablespoons, zero sugars, and it really is a very mild salsa! So one morning, before school, I just threw the salsa and chicken in the crockpot and let it do its thing and prayed for the best. Well, everything worked out and when I came home the house smelled absolutely lovely, I could not wait to dig in 🙂

That's it! It is so easy and so good 🙂 It is also one of those dishes that tastes exceptionally amazing the next day as well. Remember you can always adjust the seasonings and spices to your preference (those amounts are just guidelines!)
Happy slow cooking all you busy people! This is perfect for anyone on a tight schedule and wants a healthy and delicious dish.
So tell me:
+ Do you call it a slow cooker or a crockpot? I call it both, it just depends on what pops in my head first. But I typed this post up using the word crockpot and then I looked and saw I had already set a precedent for the blog with my slow cooker balsamic chicken. So I didn't want to use the word crockpot, I wanted to keep it consistent!
+ Is your slow cooker really old or do you have one of the latest and greatest? Mine is really old and ancient. I think we got it from a friend who had like 10 and didn't need another. But it is old. I think the older the cooker the better though. We bought a new one just last year, but it doesn't seem to cook the same so we never use it! new technology just isn't the same 😉
(See it's old, and a really ugly color. The dial even fell off, but you can still twist the little white stick to turn it on haha!)

I’d love to double this recipe to take as a potluck dish. What would you recommend for cooking times?
Thank you 🙂
Rebecca @ Strength and Sunshine
As long as you have a big enough slow cooker, the time should be the same!

I cooked your salsa chicken recipe for my family and we ALL loved it! It can be quite challenging to find healthy, tasty meals that everyone, even the teenagers in the house, loves. The fact that it was an easy slow cooker meal was just an added bonus for me. Thanks!
Rebecca @ Strength and Sunshine
I am so glad to hear that!

Sorry I am new to slow cookers- do I want to cut the chicken in half to make each piece thinner or cut in half to make them shorter?
Rebecca @ Strength and Sunshine
You actually don't have to cut anything at all! I wrote this recipe awhile ago, but I don't cut the breasts anymore.
Heather
Thanks so much for the reply! Looking forward to trying this out

I love easy Crock Pot recipes! Yes, I call it a Crock Pot. But I often wonder if I should go back and change it to slow cooker in all of my posts since Crock Pot is technically a brand of slow cooker. Oh well. Thanks for sharing the recipe. I found it on Saturday Dishes.
Rebecca @ Strength and Sunshine
Haha, right!
Slow Cooker sounds more sophisticated anyway 😛

Well, I actually have two and consider one a crockpot and one a slow cooker. The first is old and the second is new (and not working...GRRR!). Love the recipe!
strengthandsunshine
Thanks Michelle! I think the oldie's should be called Crockpots and the newer high-tech ones slow cookers 😉

I love slow cooker/crockpot recipes!! I bounce back and forth from slow cooker to crockpot...I am definitely going to give this one a try 🙂 I have jars of my homemade salsa that would go great with this recipe. I think I might serve it over brown rice or quinoa. Thanks for sharing!!
strengthandsunshine
Mmmm I bet your homemade salsa is lovely! The salsa really is the star of the dish, so use your favorite! 🙂

This dish looks so good. We had to sell our crock pot before moving overseas, and now I'm totally regretting such a decision 🙁
strengthandsunshine
Buy a new one! I am sure you can find cheap ones on amazon or ebay!
I never used to use the slow cooker, but I have been trying it out more and more.
I bet you could also just throw the all the ingredients in a large baking dish and cook at 350 for 45 minutes!
Ashley @ Power, Love, and Self-Discipline
Looks incredible! I eat chicken daily, so can't wait to try this out for a little change up in flavor!!
strengthandsunshine
Its so good! And it is even better the next day, so make sure you have extras 😉

I always used to say crockpot, but I feel like more people say slow cooker now. I have what I need to make this and toss in some potatoes with it, boom dinner done!
strengthandsunshine
And isn't "crockpot" an actual brand of slow cooker?
This chicken goes so well with potatoes! But tonight, I am having mine with roasted couliflower and acorn squash!
cottercrunch
i gotta make this!
strengthandsunshine
I just put it in the slow cooker for dinner tonight!
