The classic green sauce, salsa verde with tomatillos, is the perfect addition to a simple slow cooker salsa verde chicken recipe for any easy and healthy weeknight dinner. Gluten-free, paleo, and full of flavor!
There is no stopping the slow cooker meals any time soon! Especially after a weekend of no heat due to a broken furnace…But let’s cheer things up a bit with something I’ve had on my mind recently. It’s funny and I’ve been meaning to mention here for awhile!
You know those silly infomercials that come on the television either super late or super early (depending on your sense of time!), when not many people are watching TV in the first place? Those gems like the Shake Weight and the ever-classic Snuggie? But the one I’m talking about it an even greater gem. One that comes on at 4am when the last thing anyone is thinking about is dinner (or maybe there are? You tell me!)
This gem is for the slow cooker, but not the appliance, but a “cookbook”, or shall I say, “dumpbook”. Take a look for yourself!
Ah, Crockpot Dump Meals!
Don’t those just look so appetizing? Bahahahahaha! Maybe it’s just me, but that commercial kills me every time! Can you make the slow cooker any less classy? I think not! She also has a “Dump Dinner” and “Dump Cakes” cookbook! The insanity of dumping your food and creating something edible (maybe) with no fuss! No hate on the slow cooker/Crockpot from me, but no one needs a cookbook or commercial….like that 😛 We can at least try to make a classy meal out of “no cooking”, eh?
She also uses the terms Crockpot and slow cooker in the same phrase…it’s either one or the other as we know. Crockpot it a branded term and a slow cooker is generic and built so you can take the inner bowl out. For me though, I always call it slow cooker! Well, that’s all I have to say about that, but I hope you got a chuckle…I always do! Back to my “classier” chicken. SALSA VERDE! I’ve always been a fan and I feel it’s a bit more subtle than “in your face” red salsa. Plus I just love a chance to use tomatillos in a recipe! This chicken includes jarred salsa (I did a combo of Guy Fieri’s <– so good! and Trader Joe’s!) and fresh chopped tomatillos!
Just like my famous and top rated Strength and Sunshine “red” slow cooker salsa chicken, this “green” version was just as spectacular (if not more!) Fall-apart, soft, tender, flavor-packed, deliciousness! Salsa + chicken + slow cooker = one of my favorite meals, always! Perfect for that “back to basics” mindset!
Slow Cooker Salsa Verde Chicken
- Layer the chicken in this slow cooker first, then top with the salsa, chopped tomatillos, and garlic.
- Cook on low for 6-7 hours until chicken is fully cooked.
- Serve with fresh chopped cilantro if desired.
So a little chopping, mostly dumping, but ALL easy and delish! The secret to making it a bit classier is that chopped cilantro 😉 Maybe served over some cilantro lime rice or with some yucca fries, this is just a perfect all around family favorite! Life-long slow cooker dump meals!
