The day has come. I teased you at the start of the year and I just didn't know when would be the perfect time to finally post these. I originally shared my most popular recipe, Spicy Spiralized Sweet Potato Fries, in May of 2015, well my friends, Summertime seems to be fry time! Let's see if these catch on as much as their orange brother. I have faith they will. These guys are smokin' and PURPLE!

Sexy, smokin', purple fries πŸ˜‰ They're beckoning you, I know! Don't they look rather pink, though? I promise I used a Stokes! But if we ever find a pink potato...I think my life would be complete!

Potatoes are just great. The greatest food and really the most satisfying to me. I go through pounds and pounds a week. Mostly in the form of Japanese Sweet Potatoes (the best! I would say purple are, but they were MIA this year). The food I have the strongest and most frequent cravings for are potatoes; that's why I eat so many! If I'm having a bad day, a potato it is! There is no problem potatoes can't fix! (maybe...)

We all have those certain foods we reach for when we need some comfort. Thankfully, mine are rather healthy and nutritious! Sorry cake and cookies, I'm just not that into you! If I were given the choice between a potato and a cupcake, I would choose the former. However, my preferredΒ potato "dish" would be as follows: A large Japanese Sweet Potato, "baked" in the microwave, split open, and stuffed with some sort of nut/seed/coconut butter with a dash of cinnamon. The eaten by cutting round slices, so you get these wheels with nutty butter in the middle...AHHHH, so good!

Japanese are the best in their density, sweetness, and texture. None of that watery "not a potato" crap that orange sweets are (haha, I have strong feelings, but you know I would still have and orange potato if I had to, but I haven't in over a year! Caveat: I just share recipes with them since I know everyone can find good ole' orange sweets!) Now...a Stokes purple sweet potato...they are just as glorious as the Japanese, but so hard to find :/ So when I fo get my hands on some, I make them last and use them in fun unique ways! Like gnocchi, pancakes, cookies, or you know, these spiralized fries!

Ingredients

Scale
  • 1 Large Stokes Purple Sweet Potato
  • Smoked Paprika (to taste)
  • Onion Powder (to taste)
  • Garlic Powder (to taste)
  • Ketchup (to serve...of course!)

Instructions

  1. Preheat the oven to 425Β°F.
  2. Cut off the tips of the potato and spiralize with the "c" (3mm) blade. Snip the long "noodles" so they are easier to eat!
  3. Toss the spiralized potato with the spices (eyeball it to your preference).
  4. Spread evenly on a baking sheet lined with a Silpat or parchment paper and bake in the oven for 15 to 20 minutes, until golden brown and crispy!

And if you want some spice to these fries, feel free to toss in some pepper or even just follow the spice mix in the spiralized fries! One thing is for certain though, you MUST eat these with the best condiment around...KETCHUP! Now go eat your potatoes and feel like a SPUD...STUD!

    I wish I could be unique, but I'd chose the cupcake any day! That being said, I think you're definitely onto something when it comes to potatoes being just the ultimate satisfaction food. Whenever I want something filling and just.. comfy I go for potatoes. Bonus points if they're purple!!

    I love skinny spiralized fries! I have a curly fry recipe on my blog I did a while back, still a fun addition to burger night. I bet these get nice and crispy with how thin they are. I'd totally pile these big on my burger as well as grab handfuls to shove in my mouth! Delish.

    I would much rather have a potato than a cupcake, too! I am watching my carbs, so a white potato is out, but I can have a sweet potato occasionally. I've seen purple sweet potatoes at Trader Joe's but have never bought one. I am definitely going to pick one up the next time I am there.

    Where would we be without potatoes? I, like you, love them and these fries are so pretty! I have never seen a purple sweet potato though. They tend to be yellow here but I'm sure they would still be great spiralized and cooked like this. I will try it next time I have one!

    These sound really good. I've prepared shoestring sweet potato fries for the first time not too long ago and they were great. The purple ones add even more of a wow factor. They're not available over here, though. We only get the regular orange ones.

    This recipe looks so good! I am totally with you on choosing a potato over a cupcake, BTW! While I love a sweet treat on occasion, a Japanese sweet potato has such an indulgent flavor that I'd choose it any day!

    This is such a great idea and the perfect use for a spiralizer. Mine has been sitting in the corner of the kitchen - untouched for months. It's so sad. πŸ˜€ The purple potato makes the whole thing soo much prettier!
