We all scream for ICE CREAM! I guess we should celebrate Strength and Sunshine's 3rd birthday (which was yesterday) with some sort of sweet treat! A little ice cream seems to me like the perfect idea!

My favorite "hard ice cream" (not soft serve; that was always vanilla chocolate twist!) flavors growing up were as follows: strawberry, Neapolitan, coffee. I was talking with my dear and lovely friend Amiee a few weeks ago about this flavor preference. This gave me the grand idea of combining strawberry wth coffee ice cream for the ultimate flavor love! It would either be a disgusting disaster or a delicious delicacy!

Now, I'm no ice cream expert, but you can tell I've been practicing. I'm all about keeping these vegan ice creams simple and easy, with no bananas! Just some canned coconut milk, frozen strawberry, and finely ground coffee! I wish I could have left you all with a cliff-hanger, but I wouldn't be posting this if it didn't work. I must say, blending up ice cream is kind of fun. It actually requires me to take out one of my 7 blenders (blenders, grills, I know!) Any type of recipe that you can easily change up the flavors, like granola, pancakes, or hummus is just the best. One thing that's been bugging me: should this be called "nice cream" even though it's banana-free? Should it be ..."straice cream"?

Ingredients

  • 1 Cup Lite Culinary Coconut Milk
  • 4 Cups Frozen Strawberries
  • 2 TB Finely Ground Coffee

Instructions

  1. Place all ingredients in a blender and blend until smooth and creamy!

Ben and Jerry's, or even Starbucks for that matter, Β should hit me up for flavor ideas because this is bomb! It worked, it worked! But maybe all ice cream flavors work...I mean it is ice cream after all! I even had this secret thing for pistachio ice cream for the longest time, exceptΒ I didn't like the actual pistachios in the ice cream, just the green ice cream! Haha! I did always want realΒ strawberry pieces in my strawberry ice cream, though.

So tell me:

+ Favorite hard ice cream flavor?

+ Smooth or crunchy? I think it's like the "nuts in baked goods" kind of thing for me. Sprinkles are the exception, but they don't really count as crunchy πŸ˜›

    That is intriguing! Love ice cream but could never be bothered with all the stirring, and the ingredients are always so heavy (cream etc). Three ingredients = my kind of recipe! I imagine it perks you up as well.... love anything with caffeine in it...

    Fun fact: I like coffee ice cream, but not actual coffee. I think the cream mellows it nicely, so this sounds fabulous πŸ™‚ I did a blueberry-strawberry swirled ice cream recently, so that was fun, but my fave flavor in general is a New Orleans Praline Pecan I get in Chicago a lot or Strawberry Chip, which is super-fresh strawberry ice cream with enormous dark chocolate chunks. Great stuff.
