Easy and delicious Stuffed Baked Apples! These healthy 4-ingredient baked apples are stuffed with gluten-free granola and topped with brown sugar and vegan butter! This simple and customizable dessert recipe is perfect for a last-minute crowd-pleasing treat that has all the warm and cozy fall vibes!

Instructions

  1. Preheat the oven to 375°F.
  2. Wash and core the apples, careful not to pierce the bottom, and scoop out all the seeds and core of inner flesh.
  3. Stuff and pack the gluten-free granola tightly into the hollowed-out apple core so it doesn't easily fall out and fills the entire center all the way to the top.
  4. Add about brown sugar to the top of the apples so that it covers the granola opening, before adding the softened butter to the tops.
  5. Add the apple to your baking dish and pour in the room temperature apple cider (or other liquid choice) so that the bottoms are only slightly standing in the liquid.
  6. Bake the apples in the oven for 40-50 minutes, depending on how soft you want them. They should be tender, not mushy!
  7. Remove the baked apples from the oven and allow them to sit for 10 minutes before slicing and serving with your choice of vegan ice cream, caramel, or whipped cream!

Notes

  • Great baking apple varieties include: Jazz, Gala, Honey Crisp, Evercrisp, Cosmic Crisp, Jonagold, Jonathan, Braeburn, or Pink Lady.
  • For softer apples, bake them for 50-60 minutes; for crisper apples, bake them for 40-45 minutes. However, this also depends on the size of your apples.
  • Store leftover baked apples in a closed container in the fridge for about 3 days.
  • Reheat leftover apples individually in the microwave for 1-2 minutes, or until warmed through. You can also pop multiple apples in a baking dish in the oven at 350°F for about 10 minutes until warmed through.
