This easy 3-ingredient Sunflower Seed Brittle recipe is a sweet, nutty, and crunchy treat perfect as a healthy snack or delicious edible holiday gift idea! Instructions

  1. In a non-stick or greased saucepan, bring the vegan honey and granulated sweetener to a boil over medium-high heat.
  2. Once the mixture is bubbling, add in the sunflower seeds and mix to combine.
  3. Bring the mixture back to a boil and continue stirring frequently to keep the mixture from burning, about 10 minutes until thick and the mixture is no longer foamy or bubbly.
  4. Carefully pour the hot candy mixture onto a Silpat or greased parchment paper lined baking sheet in an even, thin layer.
  5. Allow the brittle to cool completely at room temperature before breaking the brittle into pieces.

Notes

  • You can use other sweeteners such as normal honey, brown rice syrup, or coconut syrup.
  • You can roast your own raw sunflower seeds if desired! You can roast raw sunflower seeds in the oven at 350°F for 10-15 minutes or on the stove over medium-high heat for 5 to 10 minutes until fragrant.
  • Leftovers: You can store leftover brittle in an airtight container for 3-4 weeks at room temperature Line the container with wax paper and use wax paper in between single layers of brittle to prevent sticking. The brittle should be kept cool and away from moisture.
