It’s breakfast time! (It should always be breakfast time…) I really have considered trashing it all and starting over as a sole breakfast blogger. Pancakes and quinoa flakes for days! But then I would miss sharing recipes like this and this.

Don’t worry, I have no plans on actually following through on that dream, but still…I just love all foods too much to ever do that! Breakfast foods, however, they will always reign supreme! You know I’m always for sweet breakfasts, although I have made quick forays into some savory dishes.

When I wake-up, I just NEED sweetness and carbs. A typical week of breakfasts for me is: 2 days of cereal (big bowls!), 2 days of hot cereal (quinoa flakes/oatmeal/buckwheat cereal), 1 day will be whatever baked good I made that week, and then weekends are reserved solely for pancakes (once in awhile waffles). So this lovely little porridge I’m sharing with you today would fit in the “hot cereal” category!

This one is a little fancier and takes a wee bit longer than 90 seconds. O, but my friends, it’s worth it! We are talking whole grain sorghum cooked in Silk® Nutchello™ Almond Caramel Cashew milk! Then topped with a homemade vegan caramel sauce and some slivered almonds for the “pretty” garnish (and crunch)! This is the third and final Nutchello™ recipe I have to share (for now…) and this dairy-free almond + caramel + cashew flavor is the bomb!

It’s so perfectly sweet and decadent, making it the perfect dairy-free milk to cook my sorghum in! The sorghum just soaks up all that glorious flavor and becomes so creamy in the pot. Then by drizzling on my little make-shift vegan caramel and pouring some more of the Nutchello™ to the hot bowl of grains…breakfast ecstasy is achieved! It checks all my breakfast boxes: sweet, carbs, and uh…delicious! Plus, anything in a bowl wins, right?

Interested in my caramel? There shall be no dates in MY caramel sauces. (Never!) Instead, just a mix of 2 things: almond butter (you could use cashew, or even tahini, too!) and maple syrup! Perfect little caramel drizzle for this bowl of breakfast porridge! Caramel always sounds so decadent, but it’s not overly sweet, but deep in flavor. Kind of like tahini in the sense of deep, indescribable flavor!

Caramel Almond Sorghum Porridge

A delicious, healthy, whole grain breakfast porridge that’s gluten-free and vegan. This Caramel Almond Sorghum Porridge will put your typical oatmeal to shame!

Ingredients

  • 1 1/2 Cups Silk® Nutchello™ Almond Caramel Cashew
  • 1/2 Cup Pearled Sorghum
  • 1 Tsp Cinnamon
  • Caramel:
  • 2 TB Almond Butter
  • 2 TB Pure Maple Syrup
  • To Top:
  • 2 TB Sliced Almonds
  • 1/2 Cup Silk® Nutchello™ Almond Caramel Cashew

Instructions

  1. Bring the Nutchello to a boil on the stove, add in the sorghum and cinnamon, then cook covered, on low for about 30 minutes or until the sorghum has absorbed all the liquid.
  2. In the meantime, mix together the almond butter and maple syrup to create the caramel.
  3. When the sorghum is done, divide into 2 bowls. Top each bowl with half the caramel mixture, 1 tablespoon of the slivered almonds, and 1/4 cup of the Nutchello.

You have now idea how excited I am about today’s post! It will get even more exciting for you by the end of the post, but before that, let me build up the suspense with all the yummy details. Now, you know I only review and promote products I absolutely love. If I wouldn’t or can’t eat it, I will not dedicate a whole post to it or promote it. But let me tell you, Ola! Granola and their amazing products are so spectacular (really!) and are the definition of the perfect granola.

Ola! is a semi-local company here on the Northern East Coast, located in Connecticut. Here is their story:

It was a “Family Favorite” even before she had a family of her own.  Growing up in a family of eight, Dina Houser enjoyed her mom’s healthy, homemade, great-tasting granola — the same satisfying recipe she recreated as a working mother of three young boys.  Carefully fine-tuning her family’s recipe – using whole grains, nuts, and pure maple syrup – Dina’s hand-baked granola quickly became everyone’s favorite ready-to-go breakfast, snack and topping.

Running a design business with her husband, Dina would bake special blends to gift, “sharing the love” with their clients and friends.  After years of being urged to make her granola available to food lovers everywhere, her son’s second grade teacher asked Dina where he could purchase it.  It was then she decided to fulfill her dream of making it for the world to enjoy.  Ola! was born.

With the help and support of family, friends, neighbors and the community, Ola! Foods was launched on Earth Day in 2009.  Soon, the entire household got involved, from packing boxes to attending local events and farmers markets.  Dina’s boys even helped come up with the name Ola! around their kitchen table, eager to say hello to everyone who likes healthy and yummy.

Dina’s passion for quality and taste shines through in all aspects of Ola’s business.  Since its inception, the company has achieved significant milestones and praise and now has an extended family of bakers in its state-of-the-art Connecticut kitchens.

Pretty awesome story right? I met Dina at the GFAF Expo (yes, another company that I got to meet there). I had never heard of Ola! before the expo so I stopped by the booth and did some inquires. First I asked about their allergy protocol. Well lucky me, I found out all Ola! products are handbaked, gluten-free, soy-free, dairy-free, egg-free, oil-free, low sugar, vegan, non-GMO, kosher, and 100% natural. I almost fell on the floor right there. They also have 4 amazing flavors: Chocolate Banana Chip, Cranberry Orange Pecan, No Nut Vanilla, and Vanilla Almond. If you remember my recap of the expo, I purchased the Chocolate Banana Chip right there on the spot. And still to this day it is my absolute favorite granola, not only of their flavors but every every granola I have ever eaten…even my own 😉

It has the most lovely amazing chocolate banana flavor. But it doesn’t stop there. After you first taste you get hit with this subtle cinnamon flavor. It is so crazy good! Chocolate+Banana+Cinnamon=Genius! I literally could eat the whole bag in a day. So when these arrived at my door step for review, I tore open that bag first thing!

Nutrition FactsPlus, look at their steller nutrition info! Yea, you read that right. A granola that has a 1/3 cup serving size of 100 calories! None of that 1/4 cup crap that have like 300. You can have a real bowl of this stuff and not kill you calorie count for the day! Plus it is so low in sugar, fat, and sodium! Perfect, real, and amazing!

IngredientsThese are the ingredients for the Vanilla Almond. The vanilla almond is the only one that contains nuts, otherwise every flavor is completely allergy-friendly. But really, look at that. Everything is real. You can find all those ingredients at the store (probably even already in your pantry). This stuff is gold!

Mini PacksOla! also just released cute little single-serve snack packs. Each is 100 calories and comes in either the No-Nut Vanilla or Vanilla Almond. These are so perfect for topping a smoothie or a light snack on the run! Ola! also offers their 9oz resealable bags, 16oz gift jars, and 3lb bulk bags!

Granola 2I really can’t say enough amazing things about Ola! Dina is so sweet to work with and so passionate about what she does. They are still a small company though, but are quickly expanding.
