I have a fantastic Freedom Feature to share with you today! Meet Carrie, the woman behind For Gluten Sake! We connected last year over Instagram, right as she was preparing to uproot and relocate to South Korea! From the looks of it, she’s navigating the unknown with celiac disease pretty well and bringing her knowledge and positivity to the community! Take it away, Carrie!

We are back with this month’s Freedom Feature and I am so excited to share this one with you! We have Timothy and his wife Lisa from The Happy Mixer, a fantastic (sorta local to me; over the boarder in PA!) gluten-fee bakery! They JUST expanded and opened some new location this month, so it has been a whirlwind for them, but they were still more than happy to share their story with you. They will always be hosting a giveaway for you gluten-free foodies to receive a package of their delicious goodies! Without further ado, here is Timothy answering questions about The Happy Mixer!

tell us a little bit about you and your background.

I acquired an interest for baking as a child helping my mom bake at home in the kitchen. In college, I got a job as a cleaner after hours at a local bakery. Every night I went in after hours to deep clean the entire store. It definitely was hard work, but it just pushed me to work harder, and eventually I worked my way up the ladder and ended up becoming the owner of a new location of their bakery. When I found out I needed to be gluten-free in 2009, the idea of a “Gluten Free Bakery” became a goal of mine. In 2012, I sold my traditional bakery back to the family I grew up working for. I then spent the next year and a half testing hundreds of recipes, and finally perfected a deliciously gluten-free line of baked goods. Finally, in December of 2013, we opened “The Happy Mixer”!

tell us more about your gluten-free journey leading to the creation of The Happy Mixer.

In my mid twenties, I constantly felt exhausted and my immune system was very poor. I finally decided to see a nutritionist to see what was going on, and she told me that I had a sensitivity to gluten. It was such a shock and hard to manage at first. Pretty much everything I ate was full of gluten, especially all the items at the bakery I owned at the time. I missed being able to eat all of the delicious baked goods I was used to, so I decided I wanted to open a gluten free bakery. I wanted to create a place where people could come and get the traditional bakery experience, but make them safe for people with gluten issues.

what’s the background of The Happy Mixer? what’s your mission?

We are The Happy Mixer! The Happy Mixer is my wife, featured in the logo.  While testing recipes, she was always eager to help!  With little baking experience, she chose to stay in her comfort zone, which apparently was mixing the dry ingredients I had already scaled up.  She would smile ear to ear while she whisked those dry ingredients into the perfect blend!  I would playfully call her my “Happy Mixer”! When it came time to give the bakery a name, I knew it had to be The Happy Mixer.  Seeing her smile in the logo is always a reminder to me of just how much we love what we do, and what baking is truly all about…Family, Friends, and Fun! Our mission is to provide people with the traditional bakery experience, in a totally safe, gluten free environment. All of our products are 100% gluten-free and delicious!

how are your products made? what safety precautions do you take?

All of our products are 100% gluten free. We do not allow any gluten in the facility, and that includes employees’ food/snacks as well. We take all necessary precautions to prevent any sort of cross-contamination, and the best way to do that is to prohibit gluten from the building. Our delicious line of goodies include a wide variety of items, such as donuts, muffins, cookies, cakes, brownies, pies, and even breads! We are very accommodating with other allergies/sensitivities as well, and have many items that are dairy, egg, and/or soy free. We even have several vegan options as well!

what does a day-in-the-life look like at the bakery?

A day in the life of the bakery starts bright and early at 3am. We come in and bake everything from scratch each day. Once our doors open at 7, customers are greeted with the scent of freshly baked breads, warm chocolate chip cookies, and bright smiles from our employees. We always make sure our products are fresh and tasty, and refill the case throughout the day. We are open 7 days a week year round, closing for just a couple days per year.

you recently expanded with new locations! you must be so proud of that! tell us a little about that process and decision.

We are so proud of our new locations! We just had a soft opening at our New Hope location, and Newtown will be opening very soon. Our New Hope shop is located in Ferry Market, on Main Street. We have a stand inside and offer pre-packaged items baked fresh in our Chalfont location. This ensures all of the items are baked and packaged in a 100% gluten free environment. Our Newtown location will be a full store where we bake on premises, like our Chalfont location. We have come such a long way in the nearly four years we’ve been open. We decided that we wanted to expand and bring our delicious treats to even more of the gluten free community! We felt Newtown and New Hope were perfect locations to set up new shops. The process of opening new locations is very intense and can be quite overwhelming at times. It will all be worth it though when we see the smiles in our beautiful new shops. Seeing how excited our customers get over our products is the ultimate reward!

what are your top selling products and fan favorites?

All of our customers have their favorites, but we definitely have some best sellers. One would be our peanut butter delight. It is our moist vanilla cake, with a layer of our creamy peanut butter, and a smooth layer of chocolate on top. It is a chocolate and peanut butter lover’s dream come true! Another best seller would be our kiffles. They are a flaky pastry dough cookie hand rolled by our bakers and filled with premium jams. They come in either raspberry, apricot, or strawberry flavors. Once you take a bite of one, you won’t be able to stop eating them, they are literally addictive! Finally, our donuts are truly a fan favorite. We offer them in a variety of flavors, such as cinnamon crumb, chocolate iced, vanilla iced, jelly, and my personal favorite, cream filled. We take a donut, cut it down the middle, and fill it with our rich vanilla cream. We then toss it in fluffy powdered sugar. It is impossible to take a bite without cream inside, exactly the way it should be!

what’s the most difficult thing about running a gluten-free business? the most rewarding?

I think the hardest thing about owning a gluten free business would be attracting people who do not have issues with gluten and overcoming the expensive ingredients. Expensive ingredients lead to naturally higher prices than a traditional bakery, which makes it difficult to compete. The main ingredient, gluten free flour, can cost up to 8x as much as traditional flour. There is also a stigma surrounding food labeled “gluten free” and when we first opened, we struggled to attract non-gluten free people. As we became more well known, they tried our products and loved them! The most rewarding thing about running a gluten free bakery is just seeing the impact it has on people’s lives. Little kids who never had a real gluten free birthday cake before, or a woman who hasn’t had a donut in over 10 years; those happy faces and touching stories are what makes owning the bakery so rewarding.

what are your hopes for the future? for The Happy Mixer and the gluten-free/food allergy community as a whole?

I have many hopes for the future. The biggest one is to continue to bring our safe and delicious treats to those who need it most. Right now, we are focused on opening our Newtown location and increasing awareness about both of our new shops. As for the gluten free/food allergy community, I’d like to see people have more knowledge of celiac disease/gluten sensitivities, and the gluten free lifestyle in general. It is so important for people, especially restaurant/food business owners that serve gluten free options, to understand what gluten is and how it affects the body of someone who has an issue with it. With many businesses trying to accommodate gluten free requests, cross-contamination is still a big issue. Hopefully, awareness and respect for the gluten free community will continue to rise.

what advice would you give someone wanting to start their own gluten-free business/bakery?

If I were to give advice to someone wanting to start their own gluten free business/bakery, I would give them the same advice I would give anyone wanting to open their own business. Owning your own business can be a big undertaking, but sharing something you are passionate about with others is truly an irreplaceable feeling!

I’m so happy to be brining back the Freedom Feature! After a summer hiatus, we are back with some fresh new stories and positivity! I’ll be making the Freedom Feature a much more prominent and engaging community builder here on Strength and Sunshine. Stay tuned for more updates, but today, I am excited to introduce you to Hannah Crane, aka “@gluten_freeguru” on Instagram (were we recently met!) She is a HuffPost blogger and a wealth of information!

give us some background on who you are:

Hi! I’m Hannah Crane. I currently work full time as the Assistant Director for Executive Education at NYU School of Law. I’m  also a part-time MBA student specializing in Social Innovation and Impact at the NYU Stern School of Business. I have been diagnosed with celiac disease since the fall of 2012 and am so lucky to have an incredibly supportive family, wonderful understanding friends who are always eager to try new gluten free restaurants, and a boyfriend who keeps our apartment 100% gluten free! I love to travel, write, and discover new gluten free foods!

what was life like before diagnosis?

Prior to my diagnosis, I had been experiencing symptoms for about 9ish years. When I first remember having clear symptoms I was a freshman in high school. I had gastrointestinal issues and was constantly sick with sinus infections and bronchitis. None of the medical professionals in my life addressed my health issues and instead wrote them off as symptoms of an “over achieving young woman” who must be “stressed,” which is something I think a lot of us with celiac disease hear. The closest I ever came to an acknowledgement of my symptoms was my primary care physician at home in Connecticut saying that I had IBS. But IBS didn’t explain my chronic fatigue, sinus infections, bouts of bronchitis, skin rashes, and severe anemia.

how did you finally find the right doctor and get your diagnosis?

It wasn’t until my senior year of college at NYU that I actually learned about celiac disease from my friend Priyanka (you may know her as Anti Wheat Girl!). After countless conversations with Priyanka and other friends with celiac disease I begged my doctor to test me for celiac disease. I had to ask her four times before she begrudgingly agreed to order a tTG-IgA Test blood panel. A few weeks later when the results came back my doctor called me, incredibly apologetic, and instructed me to immediately begin a gluten free diet. And so, my gluten free journey began! It took me three years to find my way to the Celiac Disease Center at Columbia University and by this time my health had improved dramatically- I had energy, a clear and focused mind, my anemia was mostly gone, I was hardly getting sick any more (save for seasonal allergies), and I felt amazing. My doctor at the center did not want me going back on gluten and completing a biopsy because the proof was in the pudding- after comparing my blood tests pre-and post diagnosis and just looking at me it was clear that I have celiac disease.

how did your life change after the diagnosis?

This may sound crazy, but I really feel like I got a new lease on life following my diagnosis. I feel alive! And healthy! I didn’t even realize just how awful I felt before my diagnosis. Sometimes it shocks me that it took me so long to advocate for myself and demand answers. But when you don’t have a baseline of what being healthy feels like it’s hard to know just how sick you are. I am so grateful for celiac disease– which sounds crazy- but my life changed in ways I couldn’t imagine as a result of this disease. I am no longer hesitant to advocate for myself, I know my body and what it needs, and my journey back to health revealed how lucky I am to have the people in my life- my family and friends have shown me such love and support throughout this experience and I couldn’t be more grateful for that.

what has been the biggest struggle for you? have you been able to over come it?

Initially, explaining my diagnosis to some members of my family was really difficult. Celiac disease is just becoming something that people talk about and are beginning to understand, so even just a few years ago it was really obscure and unknown to a lot of people. But I’m so lucky that my family really rallied around me and supported me. They are my biggest supporters and are always excited to try new gluten free foods and restaurants- they’ve even modified their homes to accommodate me in ways that are so above and beyond it makes me cry! I am so lucky to have such a loving and supportive family.

I still struggle with social situations at times, like when I first met my boyfriend’s friends and family, or when I started school last fall. I always worry that people will think I’m a weirdo, or picky, or something like that, but I am also always blown away by how people understand and go above and beyond to make me feel comfortable. My boyfriend’s Dad for example is so amazingly supportive- when we visit him in Spain he always makes sure his kitchen is cleaned, stocked with GF products, and that all the gluten free drawers and cupboards are marked with stickers so I know exactly what I can have and what is clean.

At school, my study group members always make me feel so normal and included. One friend even made sure there was GF cider at his birthday party for me! I am so grateful for them, because it was something I was really worried about with going back to school. Being social is such an important part of graduate school and I am so grateful for the friends I have made who make being GF so easy and seamless!

what compelled you to start writing about celiac disease online?

I was lucky enough to start contributing to the Huffington Post Blog in the fall of 2014 and my first post was about mindfulness- something I was focusing a lot on at work at the time. However, I soon realized that it was really hard to find resources relating to certain GF issues I was experiencing at the time (like obtaining gluten free medication, or navigating cross contamination in restaurants, or traveling while gluten free) so I decided to start writing about my journey (the good, bad, and the ugly!) in hopes that I could help other people by sharing what I had learned.

what do you hope to add to the community with your advocacy?

I hope that I can connect other people with celiac disease to helpful resources that make navigating the gluten free world a little bit easier. I also hope that I can assure people they are not alone in this- we’re all in this together!

do you have a great celiac/food allergy tip to share?

Never ever be afraid to advocate for yourself! It can be so difficult at times to properly advocate for yourself when people around you might not fully understand, or if you feel like a burden or different (which is definitely something I used to feel a lot!). But the most important thing in this life is protecting your health- if you don’t, no one else will! Confidently stand by your health and your needs; the people around you will understand and actively support you.

what’s your celiac/food allergy pet peeve or myth you want to see gone for good?

That celiac disease is an allergy- it is not an allergy; it is an autoimmune disease! (<—amen!)

what are some of your favorite allergy-friendly foods/brands?

Ooo, this is a really hard question. Can I have a favorite brand for every food category? Haha! I love Against the Grain products, Schar is amazing, and I also really love Simply Organic spices (they are certified GF!!). For non-food products, I am in love with Acure Organics, Andalou Naturals, EO, Everyone Products, and ILIA makeup.

do you have a favorite recipe to share?

I’m still learning how to flex my cooking muscle, so I don’t really have any special or signature recipes, but this winter I made a berry meringue that was really really good! It’s super simple: the meringue is just egg whites and sugar; the crème is made with egg yolks, cream, and sugar; and I top the whole dessert with fresh berries- simple but delicious!

what’s one food you wish you could eat “one last time”?

Can I be honest? None. There is really no gluten containing food I want to eat- even without consequence. I guess it’s just too hard at this point to separate the food from my association of being so sick as a result of it. Plus, there are so many amazing gluten free foods and restaurants that I really don’t miss anything.

what do you hope to see in the future; for yourself and the community relating to celiac/food allergies?

Increased awareness and education! And honestly, I think we are really getting there. Looking around at our community I am very hopeful for a future where celiac disease is comprehensively understood in the mainstream, and I feel very lucky to live in a time where awareness is really heightened and where GF products are widely and readily available.

background: who are you?

Amelia Fonti is a former opera singer and voice teacher with a lifelong interest in food. Susan McMillan left a short career as a lawyer to rear kids and pursue a wide range of interests. The illnesses of a daughter and a close friend developed Susan’s interest in nutrition and Amelia’s fascination with food into a quest to create recipes at once safe and delicious for people on restricted diets—a quest that has never ended. Jacqueline Methling is also part of the team; she’s not only a foodie, she attended Kendall College Culinary School and has an autoimmune disease that gives her first-hand perspective on our product line.
