Sorry, but I don’t have any witty April Fools’ Day joke post for you. I am pretty sure if I told you I am moving to China or I decided not to go to college but instead become a yoga guru in India, on this specific day, you would know I was joking. I am not really big on April Fools’ and jokes and pranks. I would rather just have a normal Tuesday, thank you very much.
That is not to say I didn’t do my share of little April Fools’ jokes on my family in the past. For example: putting balled up paper towels in my dad’s work boots, taping the toilet paper roll, and one of my all time favorites (the best one I ever did), taping down the sprayer on the kitchen sink 😉 I wanted to get my mom good, and I did. This was many years ago, but I had seen the trick on some video and told my brother that I was going to try it out. So before I went to bed the night before, I placed some clear tape on the button of the sprayer so when my mom went to turn on the faucet in the morning, water would not come out of the main faucet, but spray directly at her from the pushed down sprayer. Well, it worked! And she was pissed because she had just woken up and was then soaked with water half-asleep. She always said she would get me back, but she never has…and now I just reminded her about it. I better watch out today 😉
She did once trick my brother and me with our clothes one morning before school. I think I was in second grade and my brother was in fourth. My mom obviously still laid out our clothes to get dressed in, in the morning and she decided to lay out really old (too small) clothes for us. We each got dressed and were like “What????”. Haha, good times 😉
And now I might just have a prank you can play on the picky eaters in your house! Scenario: your son/daughter loves pancakes, but hates veggies. (Let me just say that is absurd! They are missing out on the whole other half of life!). You decide to make pancakes, but not just any pancakes, healthy-veggies-for-breakfast pancakes. Will they know? Not if you don’t tell them 😉 And even if they can tell, after that first bite, they won’t care and will gobble up the deliciousness! Zucchini pancakes, vegan, and gluten-free, packed with protein, and a perfect way to start the day! O, and the chocolate peanut sauce might just help too 😉
Zucchini Buckwheat Peanut Pancakes
+ 1/3 Cup Flour Mix (3 TB Buckwheat Flour, 1 TB Peanut Flour, 1 TB Gluten-Free All Purpose Flour)
+ 1/2 Tsp Ener-G Egg Replacer
+ 1/4 Tsp Baking Powder
+ 1/2 Tsp Cinnamon
+ 1/4 Cup Grated Raw Zucchini
+ 3 Drops of Vanilla Stevia
+ 1/3 Cup + 1 TB of Water
For the Chocolate Peanut Sauce:
+ 1 TB Peanut Flour
+ 1 1/2 TB Unsweetened Cocoa Powder
+ 2 Drops of Vanilla Stevia
+ 1/8 Tsp Cinnamon
+ About 3 TB Water
+ In a mixing bowl, combine the flours, egg replacer, baking powder, and cinnamon together with a fork.
+ Next, add the zucchini, stevia, and water. Mix well. Then let the batter sit for about 3 minutes. (You may need to add an additional TB of water).
+ In the meantime, use some coconut oil to coat a pan and heat on the stove over medium heat.
+ When the pan is hot, start making pancakes! When the edges look dry and bubbles start to form on the surface (about 3 minutes), flip the pancake and cook for another 2 to 3 minutes. Continue until all the batter is used. I usually end up with two large pancakes or 3 medium.
+ For the Chocolate Sauce: combine all dry ingredients in a small bowl, mix with a fork, then add the stevia and water and mix until you get your perfect sauce consistency. You may use more of less water.
I have been loving this combo for my weekend pancake making the last two weeks. Last Sunday I even tried them as waffles. Totally phenomenal as well! So if you make pancakes or waffles with this recipe, it is sure to please and deceive 😉
