A great piece of bread, fluffy and soft, fragrant and light, is what everyone wants, right? Even us gluten-free folk. No one should be deprived of such a luxury at the dinner table. With the holidays fast approaching, you may be thinking about how you’ll have to pass up the bread basket offering. You may even be thinking about bringing a frozen and then reheated gluten-free bun you bought at the store, just so you don’t feel left out. That’s not necessary; let me tell you why.

So what does seltzer do to baked goods that’s so magical? As you might be thinking, the bubbles from the carbonation lighten and give baked goods a little extra “lift”! When baked, the carbon dioxide that is mixed in the dough, creates pockets that expand and thus lighten the baked good. Perfect for gluten-free AND vegan baking. I wanted to double up on the lift for these buns and used this recipe for my Buckwheat English Muffin Buns as a base, but try these buns with some seltzer.

So these buns include yeast, which makes them rise, as well as the seltzer to make them even lighter. They’re small and perfect for any dinner table bread basket too. A little “portion control” if you will 😉 But they should definitely make it on your Thanksgiving menu this year. even if you aren’t gluten-free nor do you have gluten-free folks in attendance, these buns should still make it onto you table. A little more about these buns. I used my favorite flour, buckwheat, as well as light and sweet amaranth. I just love the color buckwheat gives and the earthy flavor. But I also wanted to keep to the theme of lightness, so I used some amaranth which is such a delicate flour. And dear friends, what is a good dinner bun without some great aromas. When “buns are in the oven” you wanted the comforting smells in be enticing your nostrils and your stomach! The herbs I find most comforting this time of year are rosemary, sage, and thyme. Hands down, when I smell these, I always feel warm and fuzzy inside and it makes me think of the holidays.

If I’m cooking with one of those herbs, I just have to add the other two. I feel bad if I leave the other two out, haha! They’re just the perfect trio, Three Musketeers! They belong together. Not only do they smell simply mouth-watering, but they taste just amazing, savory, and perfect. Especially with the earthy buckwheat flour, no words! Now don’t let the fact that these use yeast intimidate you. They are so easy, just like these buns (the first time I ever used yeast in a recipe, mind you!). You are going to be thanked profusely by your gluten-free guests. The ultimate grateful Thanksgiving gift!

Ingredients

  • 1 Cup Buckwheat Flour
  • 1/2 Cup Amaranth Flour
  • 1 TB (1 Packet) Active Dry Yeast
  • 1 Tsp Xanthan Gum
  • 1 Tsp Baking Powder
  • 1 Tsp Extra Virgin Olive Oil
  • 1 1/3 Cup Original Vintage® Seltzer
  • 1/4 Tsp Ground Sage
  • 1/4 Tsp Dried Thyme
  • 1 Tsp Crushed Dried Rosemary (plus more for topping)
  • 1/4 Tsp Onion Powder
  • 1/4 Tsp Garlic Powder

Instructions

  1. In a microwave safe bowl, heat the seltzer on high for 90-120 seconds or until it is very warm to the touch. (110°F). Then stir in the yeast.
  2. In a large mixing bowl, combine the flours, baking power, gum, herbs and spices, and give it a whisk before adding in the hot seltzer and yeast mixture, as well as the olive oil.
  3. Whisk it all together to form a nice sticky, yeasty dough batter.
  4. With 7 foil rings (just cut some foil and fold into rings, oil the insides*), or real bun rings, place them on a parchment lined (or silpat) baking sheet.
  5. Add 1/4 cup of the batter in to each of the rings and then sprinkle with additional rosemary.
  6. Set the baking sheet in a warm place for 30 minutes while you also wait for the oven to preheat to 375°F.
  7. After the buns have risen and the oven is heated, place the baking sheet inside and bake for 15 minutes.
  8. Allow to cool completely before removing from rings.

Even though I never end up watching the whole thing, I love having the Macy’s Thanksgiving Day Parade turned on during Thanksgiving morning preparations! There is something so comforting and heartwarming about it (although I usually get pretty bored). That’s why just leaving the TV on, so I can just come in and out, catching glimpses of the parade is fine. You know what else is weird? So many people would love to see the parade in person but tend to live too far away. Sprouted Lentil and Butternut Squash Pizza

Long name, super easy recipe. I think I found my new favorite dinner using my favorite legume. If you still have not tried sprouted lentils, that won’t last long after you see this recipe. I can’t believe I was always so intimidated by sprouting. I was missing out on such a great and delicious method or “cooking”. And to add to the deliciousness here I added all the wonderful flavors and scents of Fall it to a perfect personal pizza. I never eat pizza and really was never a big pizza person. I think I was just always turned off by it after the horrible experience I had in the beginning of finding out about my Celiac Disease. But now I know so much about cooking and food that I was able to create a perfect little gluten-free and vegan pizza for myself once again. I implemented my usual method of just gathering a bunch of ingredients and winging it, hoping that some beautiful master piece will emerge. And emerge it did! I know, enough of this rambling; let’s see the recipe!

Sprouted Lentil and Butternut Squash Pizza

Sprouted Lentil Butternut Squash Pizza

Ingredients: (serves 1)

+ 5oz of Butternut Squash Puree* (about 3/4 cup) (*see notes)

+ 3/4 Cup of Sprouted Lentils

+ 2 TB of Tomato Paste

+ 1 Handful of Raw Baby Spinach

+ 1 Large Brown Rice Tortilla (could use any large tortilla if not gluten-free)

+ 1/2 Tsp Balsamic Vinegar*

+ 1/4 Tsp Dried Thyme*

+ 1/4 Tsp Powdered Sage*

+ 1/2 Tsp Dried Crushed Rosemary*

+ 1/4 Tsp of Onion Powder*

+ 1/4 Tsp Garlic Powder*

+ 1/8 Tsp of Black Pepper*

+ 1/4 Tsp Cinnamon*

+ 1 TB Dried Parsley*

Sprouted Lentil Butternut Squash Pizza 3

Directions:

+ Prepare the Butternut Squash (see notes)*

+ Preheat the oven to 385°F. Line a baking sheet with foil and oil it or use non-stick spray. (Do not skip this otherwise the tortilla will stick…believe me.)

+ Take your tortilla and place it on the baking sheet. First spread the tomato paste, then butternut squash puree, sprouted lentils, and finally layer on the spinach, making sure to leave at least a 1/2in. free of ingredients around the edge of the tortilla.

+ Stick it in the oven for about 12-13 minutes, checking on it to make sure it does not burn. The edges should be starting to brown when it is done. Taking it out and enjoy!

Notes:

+ I bought a small frozen 10oz bag of cubed butternut squash. I simply put all the cubes in a pot with 1/4 cup of water and simmered until it was soft (about 6 minutes). Then I just mashed it up to a puree. Since this was more than one serving I doubled all the spices and doubled the balsamic vinegar. So if you go that route double those ingredients to get the correct flavoring.

This pizza was so good! I made it again the next day as well. I just loved the scent that emanated from the oven while it baked and the wonderful textures and Fall flavors that converged in my mouth. Even though it is kind of hard to eat like an actual pizza (I broke off pieces and ate with my hands, but also used a knife and fork to cut up smaller bites) it was still one pizza experience I enjoyed! (And will be making many many more times!)

Slow Cooker Balsamic Chicken & “Thanksgiving” Roasted Butternut Squash

Two family pleasing recipes to create the best dinner! Slow cooker balsamic chicken, moist and full of flavor, with a side of “Thanksgiving” roasted butternut squash. A gluten-free paleo meal that will satisfy and fill the tummy.

O man, so on Wednesday I wake-up to find out our subpump broke, so we had no running water in the house. Just like what happens when the power goes out. But this time we had power…just no water. A complete disaster! It was time to break out the bottles of hand sanitizer. Luckily, we were able to get some guys to come out and fix it by 4:00pm (we almost had to wait until today). It ended up that we needed a new well pump…not good news. But they put a new one in, now it just coming up with a way to pay for something so unexpected. Plus we had no water  pressure once the water was turned on since we needed to change the filter at that point. My dad was not home then so I took a shower last night with absolutly a trickle…if that…coming out of the faucet. Its really hard to get the conditioner out of long hair with practically no water! I hope you encountered better things on your Wednesday!

Thankfully the other night, I made some of my favorite classic dishes for dinner. Slow Cooker Balsamic Chicken and “Thanksgiving” Roasted Butternut Squash. Not exactly the most “summery” meal but, hey, it still works….and tastes wonderful. That’s what matters, right?

Ingredients

  • 4 Chicken Breasts (trimmed and skinless)
  • 1 1/3 Cup of Water
  • 1/2 Cup Balsamic Vinegar
  • 1/2 a Large Lemon (juiced)
  • 1 TB Chili Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 2 Tsp of Dried Basil
  • 2 Tsp of Dried Parsley
  • 1/2 Tsp of Black Pepper
  • 1 Tsp of Paprika
  • 1 Tsp of Cumin

Instructions

  1. In a large slow cooker add the chicken breasts to the bottom.
  2. In a large bowl combine the water, balsamic, lemon juice, and all spices & herbs. Give it a quick stir and pour over the chicken in the slow cooker.
  3. Turn the slow cooker on to low and cover. Cook for 6-7 hours until chicken is thoroughly cooked.

Now, you know I have an obsession with all things squash. I love them all (well at least eating them… spaghetti squash and I have a love-hate relationship. I have many battle wound from cooking that guy, but it is always worth it!). So here is my favorite way to cook butternut squash. I use Fall/Thanksgiving flavors but I think that’s what tastes best on B-Squash. I also that the cheaters way in preparing by buying pre-cut squash. But it prevents injuries so Ill take it!

Ingredients

  • 5–6 cups of Butternut Squash (cubed) (Precut, if you can find it, if not you can do this with a whole squash.)
  • 1/2 TB Dried Rosemary (crushed)
  • 1/2 TB Dried Thyme
  • 2 Tsp Ground Sage

Instructions

  1. Preheat the oven to 425°F. Prepare a baking sheet with parchment paper or a Silpat.
  2. Spread the peeled and cubed squash evenly on the baking sheet.
  3. Add your spices and toss with the squash to get all the sides coated with the herbs.
  4. Now, place the baking sheet in the oven for about 40 minutes, tossing the cubes once halfway through.
  5. Remove and serve…with ketchup!
