I have a weird obsession with gingerbread men this time of year. I have not eaten anything gingerbread in years, though! Not one single gingerbread man since I have been gluten-free (over 4 years). The only time I ever did eat anything gingerbread was a few cookies during Christmas time. But I have always just loved them and I am not really sure why. My grandma always had the best soft gingerbread men set out on the dessert table at our Christmas Eve party. I looked forward to them every year! I am not even a big ginger fan, so I’m not sure why I loved them so much! And come to think of it, I have no gingerbread recipes on the blog…until today. And what better way to create my first gingerbread recipe than to make it in the form of quinoa flakes! One of my favorite breakfasts to start the day with!

Ingredients
  • ⅓ Cup Quinoa Flakes
  • ½ TB Unsweetened Cocoa Powder
  • 1½ Tsp Blackstrap Molasses (plus more to drizzle on top)
  • ½ Tsp Ground Ginger
  • ½ Tsp Cinnamon (plus more for topping)
  • ¼ Tsp Pure Madagascar Bourbon Vanilla Extract
  • ⅛ Tsp Ground Nutmeg
  • ⅛ Tsp Ground Cloves
  • ⅔ Cup + 2 TB Water
  • Sliced Almonds (topping, optional)
Instructions
  1. In a large microwave safe bowl, place all the ingredients together stir and then add the water and stir again until combined.
  2. Microwave on high for about 2 minutes, remove, and add any toppings you'd like!

  • 1 TB Vanilla Protein Powder
  • ½ Tsp Cinnamon

  • ⅛ Tsp Ginger
  • ⅛ Tsp Nutmeg
  • Fresh Apple Slices (to top)
Instructions
  1. Place all dry ingredients into a microwave safe bowl and stir.
  2. Add the water and applesauce and stir to combine.
  3. Microwave on high for 2 minutes. Remove and garnish with the apple slices and extra cinnamon is desired!

  2. Brew the peppermint tea (I used one tea bag) and then add that to the bowl along with the extract and stevia, stir to combine.
  3. Microwave on high for 2 minutes. Remove and garnish with fresh mint leaves!

  • ¼ Cup Pure Pumpkin Puree
  • 1 TB Vanilla Protein Powder
  • ½ Tsp Pumpkin Pie Spice
  • ¼ Tsp Cinnamon
  • ¼ Tsp Pure Bourbon Madagascar Vanilla Extract
  • ¾ Cup Water
Instructions
  1. In a microwave-safe bowl, mix all of the ingredients together, adding the water last.
  2. Cook on high in the microwave for 90 seconds. Mix and cook an additional 30 seconds.
  3. Top with extra pumpkin and cinnamon if desired!
