Young adults live a pretty nomadic life. Traveling back and forth from our childhood homes, college dorms, apartments, cross-country, overseas, we are always moving. It’s simple and it works. That’s what we all want, right? Something fool-proof, easy, and will never let us down. That’s what this recipe is to me. My fool-proof 100% perfect breakfast when I don’t know what to make (which never happens for breakfast, but sometimes I just can’t decide, so this comes in handy). Most importantly, this is my fool-proof travel breakfast. When ever I am away from home, in a hotel, visiting relatives, this is my go-to super easy yet so delicious breakfast to pack. All it requires is a plastic baggie to hold the ingredients, a microwaveable bowl, a spoon, and water. No refrigeration or difficult cooking required.

It has never let me down once and I can say this is a 100% tried and true recipe. I’ve been making it forever, yet I am just getting around to sharing! It’s comforting to know that when you are away from home and focused on things other than what to have for breakfast, you know that this is packed and there and will be ready in 3 minutes and 30 seconds. Plus it’s safe, gluten-free, soy-free, and vegan…just how I like it ๐Ÿ˜‰

Really the flavors and creamy texture just add to the homey comfort this hot breakfast brings. It warms my soul inside and out. Chocolatey, peanutty, and o so creamy from the fabulous buckwheat. A hot porridge if you will, that any Goldilocks will love ๐Ÿ˜‰ A perfect way to ground yourself and prepare for adventures outside of the home. And let me tell you, this beats quinoa flakes or oatmeal ten-fold. Buckwheat cereal is like to other. The texture, the creaminess, the unique subtle taste. Comfort in a bowl.

Ingredients

  • 1/4 Cup Creamy Buckwheat Hot Cereal
  • 2 TB Peanut Flour
  • 2 TB Unsweetened Cocoa Powder
  • 5 Drops of Vanilla Stevia
  • Dash of Cinnamon (optional)
  • 3/4 Cup Water + 1/4 Cup (added after cooked)
  • Toppings:
  • Chocolate Chips
  • Peanut Butter

Instructions

  1. In a microwave safe bowl, combine the buckwheat cereal, peanut flour, cocoa powder, stevia, cinnamon and 3/4 cup of water, stir to combine.
  2. Cover the bowl with a paper towel and microwave on high for 90 seconds. Stir, and microwave again for another 60-90 seconds.
  3. Remove the bowl carefully (it is really hot!), add in the extra 1/4 cup water. Stir until you get that creamy perfect porridge and top with chocolate chips and peanut butter!

When I travel, I measure out all the ingredients and place them in a plastic baggie. Then all I have to do is dump the contents in to a bowl when I’m ready and measure out the water. The perfect “instant” buckwheat packs! Breakfast IS the most important (and best) meal of the day, so even when I’m traveling, I must have a good breakfast. Why settle for dry cold cereal that got crushed in your suitcase? (I’ve done that before and it was no fun). This will satisfy and make you feel all warm and fuzzy inside…promise ๐Ÿ˜‰

Friday Finisher 6/27/14

One year and 1 day old now! I am still in awe that I have made it this far! What a blessing it has been to keep Strength and Sunshine up and running every day! Did you enter the birthday giveaway yet? You should! I got some good stuff packed to ship to one of you lovelies! Now we bounce into year two! Remember how I said June is a great month, but also a very busy month. Well on Sunday I will be in DC for orientation for a few days. So if I can get through and survive three days of no sleep, running around the city, information overload, who-knows-what-food resources I will have, then I can say there will be a year two for SAS. I pray I can get my posts up and promoted on Monday and Tuesday (I am not ready for a blogging break. I must post!)…I should have asked for guest posts, but it’s a bit to late for that now! Fingers crossed I survive all this Colonial Inauguration craziness. My anxiety is through the roof right now! But after that, the summer will be much more relaxed and I can start marking the things I want to get done in my own time. Relaxed except for when I get my wisdom teeth out at the end of July (god help me!).

The one thing I’ll never compromise on is the safety of my food. Having food allergies is one big world of walking on eggshells. If you don’t have control over where you food came from, how it was prepared, where it was prepared, how it was served, you are putting yourself at risk. So if I don’t feel 100% safe on the food I am about to eat, I won’t risk it. Yes, this means I always have to plan ahead and come prepared, but my health is worth more than convenience ten-fold. And it’s pretty obvious that you should never compromise your health to make someone happy because you feel awkward turning down food. Be gracious, but walk away. You don;t want to hurt your body and get yourself sick. It is not worth it!

Instead of just mixing my Plant Fusion into my Almond milk and basically eating the protein off the top, I have been using my Ninja single serve cup to blend 1 Cup Unsweetened Almond Milk + 1 Scoop Plant Fusion + 3 or 4 Ice Cubes + 1/2 Cup Water together for a frosty delicious beverage!

Plant Fusion+ I’m stressed about it, but I am also incredibly happy to be going down to DC yet again! I love that place so damn much! ๐Ÿ™‚

Letting Go And Gaining More

Can we talk about Monday for a second? It was my first “official” day of summer and I am pretty sure it was one of the best days I have ever had. When I tell you what I did, it might not seem like much, but it was perfect in every way, just how I like it! I started my day with an early 4:30am rise, typical morning routine, and that new granola I had made the day before ๐Ÿ˜‰ Then, it was tons of blog reading, news watching, leaving a message for my doctor, and then a trip to the library! I was so excited! My favorite place and I were able to reconnect after months of being apart! I took my time gathering two new books and just looking at the endless ocean of beautiful novels! I was in heaven. Then I decided to walk a few yards over to the park that is next to the library and finish Packing Light. It was such a glorious day to sit on a park bench in the beautiful sun and escape.

I would have taken a picture of this cute bench I sat on, but with the sun out I couldn’t see my phone screen, so I had no way of finding the camera icon and snapping a picture, so just use you imagination ๐Ÿ˜‰ When I came home, I made lunch, then read a little of my new book, but fell asleep for a quick half hour afternoon siesta! Then it was glorious yoga time! It felt so good to stretch out my body. The day ended with a great dinner of cumin turmeric cinnamon tilapia, a Japanese sweet potato with cinnamon (eaten with my hands like a cut in half length-wise hot dog), and some of a new recipe I have to share. Then just some blogging, emailing, a nice shower, and reading. It was so perfect. It feels like the summer just continued from last year! Like just yesterday I was doing whatever I wanted, sitting in the sun reading, doing yoga while watching the new wait for Prince Henry and Catherine to walk out of the hospital with their new baby (yes, I can still remember that day! O the things that stay with us!).

The only sad thing about that glorious day, was that I finished Packing Light. I can honestly say that book was one of the best I have ever read. It left me so inspired. I have so many things I want to write about that I had form in my mind while reading that book. It also just left me wanting to write. Period. Not just for the blog, but just to get pen to paper and let my mind flow. It is one of those books that changes you and you just can’t help it.

Me “reviewing” this book would not give it justice. There is just too much to say about it and there is just so much emotion, thoughts, and concepts loaded in it. But the one take away I think was most important was that you need to take risks. You need to leave your routine, everyday life, the things you think you need, behind. You may feel like you are going to majorly fail and lose everything, but you won’t. You are going to come out on the other side and have gained so much more. So much new. Something unexpected and something you probably never realized you were capable of.

You have to follow your dream too, even if you think it is so out there and will never pan out. You have to live for yourself and make you own decisions. If you chose not to, you will regret it, but you can only blame yourself and no one else. You never know what you are going to find out there or in yourself. It really can be scary, but fear only leads to growth if we overcome it. You will be surprised at the end and what you do have left and have found. It won’t be what you started with, but it will be something new, something else.

This book had been sitting on my shelf since November. The simple cover and title always had me intrigued (yes, I judge books by their covers). I am so glad I finally picked it up to read at this moment in my life. It really gave me the courage boost and kick in the pants to fully embrace my soon-to-be changing life. I will definitely be “packing light” and leaving so much behind. But what is to come and what I will find will be so great, I can already tell.

I’ll end with a quick overview of why Allison wrote this memoir taken from her website…

Have you ever thought about what you would do with your life if nothing was holding you back? What if you didnโ€™t have to worry about how to pay your bills, or to maintain a certain image, or about what people would say about you?

What would you do?

Several yeas ago, I began to explore my own answer to this question, and as I did, I realized several things were holding me back from the life I believed was important. When I boiled them down to their most basic form, I was shocked to find I was giving up the things I really wanted to hold onto things I didnโ€™t care about that much. Things like money, comfort, and keeping other people happy.

I didnโ€™t feel like I had chosen the life I was living, and I felt trapped, confused and bored.

Inspired by the courage of a friend, and the story of The Rich Young Ruler from the Gospels, I decided to quit my full-time job, move out of my apartment, sell nearly everything I owned and spend the next six months driving across the country.

On the trip I started to discover what it looked like to live life with less baggage, both in actuality, and as a metaphor.

My friend (a musician) played shows along the way to help us pay for food and lodging, and I kept a blog about our adventure. Kind people shared beds, coffee and food. What I learned was that, even when I had nothing, I had a great deal. And in order to get what I really wanted out of life, I needed to be willing to leave some things (even good things) behind. There was only so much room in my suitcase.

I wrote a book about my journey called Packing Light: Thoughts on Living Life With Less Baggage.

If youโ€™ve ever felt like you might be settling for a life thatโ€™s less than the โ€œabundantโ€ life Jesus promised, if youโ€™re tired of feeling purposeless or bored, if youโ€™re sick of letting meaningless things like fear and insecurity rule your life and get the best of you, if you sense there is something more, Packing Light is for you.

Filled with all the things you expect from a great drama, and a great life โ€” love, friendship, adventure, conflict, triumph, grief and loss โ€” I hope this story helps you discover what I discovered for myself, that the only way to uncover a life of meaning and find freedom to be myself was to lay down my heavy baggage.

Some Great Eats In DC

First off, I think I should receive a reward for eating out so much over the last two weeks. Starting in South Carolina, all the way through my DC trip. I have had an extreme fear of eating out. Due to my multiple food allergies, dietary specifications, cross contamination fears, and food safety (i.e. salmonella, germs etc.), eating out gave me huge anxiety. Luckily my family rarely ever eats out anyway, but if we did have to go somewhere, I would just eat beforehand, or bring my own food. But that has to change now that I won’t be living at home with access to any food I want and space to cook. I love cooking and am perfectly content with making everything I eat, I love to do it, so it is not a burden. (That is going to be one of the hardest things next year! How will I be able to develop new recipes! O the humanity!). Anyway, I sucked it up over these past few weeks and I am glad to say that I have survived! I still don’t like to eat out and I have to do major research before going somewhere, but at least I know I can do it when need be.

Anyway, on to the goods! For breakfast each of the days I had just packed some creamy buckwheat cereal and quinoa flakes to heat up in the morning. However…the one down side to out hotel is you have to request a fridge. We did that but didn’t receive it until late on Tuesday. What we also didn’t realize was that they don’t provide microwaves to the rooms either and you can’t request one. I was screwed. But…the happy people down at the hotel restaurant allowed me to use their staff cafeteria microwave to make my breakfast each morning! How nice of them! I used my trusty big red ceramic bowl that I bought down in South Carolina for just this purpose (however in that hotel, we had a microwave). It all worked out though, happy day! I also drank copious amounts of unsweetened iced green tea from Starbucks the whole trip. It is so damn good, especially when I couldn’t have my normal hot mugs of tea since there was no way to get hot water in the hotel room, haha!

Our first meal in DC was of course Sweetgreen! I had been dreaming about those salads all year. There is something so magical about their greens and local ingredients! You can tell by the line we had to wait in, but o it was worth it!Read More
