Okay so I had (have) a post that was in the process of being drafted for today that I began writing over the weekend, but I just couldn’t write it. It is so hard to write, or just formulate into words, the vulnerable aspects of our lives. For a blogger writing can be a type of therapy for them as I have been told by so many. So I tried to write an very personal and vulnerable post. So many bloggers who let out these vulnerable sides are able to write them down in such beautiful ways and words. But then they do always reveal just how hard it was to write it and that they had been working on it for months. So I think I will keep chipping away at it, but for now I will just post something we can all be happy and excited about. ZUCCHINI BREAD QUINOA FLAKES! I have so many variations for quinoa flakes I want to try and haven’t had the same bowl in a few weeks now. I hope your not getting sick of these recipes because there are tons more to come 😉 For this one I had no idea how it would taste since well you know, I was using zucchini. But if you pair it with cinnamon, vanilla, quinoa, and love, you have a perfect breakfast. Veggies for breakfast really are the way to go 😉
Zucchini Bread Quinoa Flakes
Ingredients: (serves 1)
+ 1/3 Cup Quinoa Flakes
+ 2/3 Cup + 2 TB Water
+ 1 TB Plain Hemp Protein Powder
+ 1/4 Cup Grated Raw Zucchini
+ 1/2 Tsp Cinnamon (plus more to swirl in after)
+ 1/2 Tsp Pure Vanilla Extract
+ 5 Drops of Liquid Vanilla Stevia
+ Combine all dry ingredients in a microwave safe bowl. Then add the zucchini, stevia, and vanilla. Pour the water on top of it all and stir.
+ Pop it in the microwave on high for 2 minutes. Remove and garnish with a bit more zucchini and cinnamon!
