You guys said you wanted the recipe and your wish is my command! After my last doughnut recipe, I have been dying to share this one with you too! With this one, you don't have to get confused with "seasonal" flavors either. We all know that chocolate is a 365 day type of deal! And I'm not just giving you chocolate in one form, but 3. The more the better!

I guess you can say I was inspired to make these when I finally got my hands on some perfect quality bittersweet chocolate chips that were 100% allergy-free and safe, fair-trade, and organic. I found these Equal Exchange bittersweet chocolate chips at Whole Foods while I was down at school. I knew I had to get them and let my mind go crazy with recipe creation until I got home to make those recipes come alive! I can tell you that yes, I did. I brought to life many recipes with that bag of chips; one of those being this here chocolatey doughnut recipe (the others may just be in the form of granola and pancakes, but that's for future posts!)

Chocolate chips always bring back memories from childhood when my brother and I would (this happened only on rare baking occasions) help my mom bake chocolate chips cookies. I remember the smell of the brown sugar and vanilla extract while pouring it into the batter and then getting to pour in a ton of chocolate chips (while snacking on a few!). We would both take turns mixing in the chips and then my mom would finish them up and put them in the oven to bake. Now, I hate the smell of brownies baking, but I adore the smell of chocolate chip cookies baking! O and then the impatience until we could just bite into a hot, soft, gooey-melty-chocolate chip cookie FRESH from the oven. It's one of those kitchen experiences that every child should have. The pure bliss and love of a sweet freshly baked cookie <3

Wow, okay, you'd think this post is for a chocolate chip cookie recipe, but no, it's for doughnuts! Which I'll talk about right now. Anyway, you know I'm totally team chocolate. I do love vanilla and sometimes I like both at once, but chocolate will always be my true love. So I threw in cocoa powder, chocolate chips, and chocolate stevia (liquid and syrup) into these doughnuts. The average Joe thinks chocolate food is unhealthy, but obviously you're not going to find that here! Chocolate can be healthy if you want it to be! It's just a flavor, a flavor that I use every day of my life!

The healthiest chocolate doughnuts that will confuse your brain and taste buds into thinking you’re eating the greatest indulgence. Gluten-free, vegan, and paleo, these healthy baked doughnuts have triple the chocolate for triple the pleasure!

Ingredients

Scale
  • 1 Large (7-8oz) Yellow (Ripe) Plantain
  • 2 TB Unsweetened Non-DairyMilk
  • ¼ Cup Arrowroot Starch
  • 1 Tsp Baking Powder
  • 1 TB Unsweetened Cocoa Powder
  • 2 TB Bittersweet Chocolate Chips
  • 15 Drops Chocolate Stevia (or liquid sweetener of choice)
  • Cocoa Stevia Syrup (for drizzling, optional)

Instructions

  1. Preheat the oven to 375ºF.
  2. In a food processor or blender, add in your plantain (peeled and chopped in to large chunks). Blend until smooth.
  3. In a large mixing bowl, add the blended plantain, almond milk, arrowroot, baking powder, cocoa powder, and stevia. Mix everything together. Then fold in your chocolate chips.
  4. In a greased doughnut pan, spoon out the mixture into four of the doughnut molds as evenly as possible.
  5. Bake the doughnuts for 12-13 minutes. Remove, let cool, and serve with a drizzle of cocoa syrup! You can eat these warm from the oven or store in a container for later. If I'm eating them later, I like to heat them in the microwave for 30 seconds of so to get nice and warm!

Mmmm, healthy chocolate doughnuts! I wouldn't mind eating these every day for breakfast with a side of fresh juicy watermelon and rich dark black coffee. You know, maybe I will 😉 Or maybe I'll just start going crazy and baking up some new doughnut recipes. That seems more fun. It is summer and I do have a lot of time on my hands. Might as well spend that time doing something useful...like baking doughnuts. If anyone asks, I'll just say it work...for the blog 😉

    These look just incredible - I'd never guess in a zillion years they were healthier than your average donut until you told us! Thanks for bringing these to Fiesta Friday!     We love triple chocolate anything in this house! Seriously, it's gone in two seconds. My mom and sister have their favorite chocolates, and I pick the ones that work well for my allergy needs.       With peel, like when you're buying it in the store 😛 Haha, as long as it's a big plantain, you're fine! Really just a normal average plantain!

    Y es yes yes!! I love that these use plantains. I just got my hands on some perfectly ripe plantains and I'm so excited to bake with them!! If only i had a donut pan!!     Of course I baked cookies as a kid! And also a lot of brownies - but I don't have an aversion to their smell. Do you like the finished product? And these doughnuts look fabulous! Give me triple chocolate (particularly super dark chocolate, but I'm not tooooo picky) any day!
