During the cold winter months we tend to find ourselves in need of comfort food almost daily. Some days it's due to a winter cold, maybe an overindulgence in those seasonal cookies, or maybe it's just because you need some warmth from the cold and a long day at work. When people think of comfort food they may think of heavy and rich dishes that taste good in the moment, but do nothing for the tummy afterwards, leaving you needing more comfort to feel better.
That doesn't need to be the case. You know I'm all about comfort food and turning those dishes into healthy gluten-free favorites yet again. Pasta will always be an iconic comfort food, but it doesn't have to come in the form of a heavy dish. With an already sensitive tummy due to Celiac and autoimmune disease, pasta may not always seem like an option. With Barilla's new certified gluten-free pasta, made of corn and rice, a healthy healing pasta dish an be enjoyed again. What better way to bring the pasta comfort than in the form of soup! Another iconic comfort food that always heals the soul...and tummy!
I was in need of this exact type of comfort food after last week. I stocked up on Barilla's Gluten-Free Penna Pasta at my local BJ's Wholesale Club and "shopped" my pantry for the most healing ingredients I could find. When I think of healing ingredients that soothe the tummy, turmeric and ginger always are the first to come to mind. Those two are powder packed anti-inflammatory and tummy healing superfoods! I happened to have about a pound of fresh turmeric root on hand that I was excited to put to use (and give this soup a beautiful color!) Paired with those spices, I added some dried porcini mushrooms, broccoli rabe, garlic, Chinese 5 spice, and a splash of coconut aminos.
I told you all I'd make soup this year and now I'm glad to say I did (finally!). Better yet, I made this soup so simple and just for one. It cooks 7 minutes (including the water boiling time!). When you need comfort and healing, who has time to wait? I don't! This was the perfect solution all around. A nourishing super simple soup, light, but with some nice hearty texture from the pasta. The turmeric made it a beautiful calming color too!
I think I've been saying this about all my recipes lately, but the smell! The smell was just fantastic! The spices just warmed me up before I even put the first spoonful in my mouth! I could have just breathed in the pot and all my troubles would have melted a way. Although...then my mouth was watering and I wanted to eat! I think you will too after you see how simple this healing soup is!

Tummy Healing Soup For One
Soup for the soul. A gluten-free and vegan tummy healing soup for one full of anti-inflammatory and nourishing ingredients. Turmeric, ginger, veggies, spices, and a bit of pasta to bring you all the love your body needs.

Ingredients
- 3 Cups Water
- 1 Inch Piece Turmeric Root (peeled and grated)*
- ½ Tsp Ground Ginger
- ¼ Tsp Chinese 5 Spice
- ¼ Tsp Minced Garlic
- ¼ Cup Dried Porcini Mushrooms
- 1 Heaping Cup Chopped Broccoli Rabe
- ½ Cup Barilla Gluten-Free Penne
- 1 Tsp Coconut Aminos
- ½ Tsp Toasted Sesame Seeds (optional)
Instructions
- Pour 3 cups of water, the turmeric, ginger, 5 spice, and garlic into a small pot. Bring to a boil on the stove.
- Now add in the mushrooms, chopped broccoli rabe, and penne. Reduce heat to medium and cook for 5 minutes.
- Add the coconut aminos, stir, and pour into a large soup bowl. Top with sesame seeds if desired.
Notes
You can use ½ Tsp of ground turmeric if you don't have fresh.
