With Valentine's Day around the corner, that means it's time to break out ALL the heart-shaped sweets and treats! These fun decorated Linzer cookies couldn't be more perfect for the day full of hearts, love, and delicious treats! These heart-shaped cookies are gluten-free, vegan, and allergy-free so everyone can join in on this baking project and enjoy the results!
Ingredients for Valentine Linzer Cookies
These are the first Linzer cookies I've ever made! Apparently, Linzer cookies are made with ground almonds or almond flour, but don't worry! These are 100% nut-free. They're based on my classic gluten-free cut-out sugar cookie recipe, just jazzed up (or "jammed" up), with extra decorations!
- Gluten-Free Baking Flour
- Sorghum Flour
- Granulated Sweetener
- Egg Replacement
- Baking Powder
- Vanilla Extract
- Vegan/Soy-Free Butter
- Non-Dairy Milk
- Raspberry Jam
- Allergy-Free White Chocolate
- Allergy-Free Heart-Shaped Sprinkles
How to make heart-shaped cookies
They may look complicated, but don't worry, all the steps are easy to do and fun (sprinkles are involved, after all!) The one thing you WILL need is a pack of heart-shaped cookie cutters! I picked up a super cheap, 99¢ pack from Walmart (can't find them on their site), but this pack from Wilton will do the trick! You just need a "normal cookie-sized" one and then a smaller one. You can use whatever sizes you have, though!
How to make cut-out heart cookies:
- Mix together all your cookie dough ingredients, using your hands to work in the cold vegan butter and adding, a tablespoon at a time, of the non-dairy milk as needed.
- CHILL the dough for at least 30 minutes before rolling the dough out to a ⅛-inch thickness. Pro Tip: Sprinkles extra flour on the dough to make things easier too!
- Cut out as many of the large hearts as you can with the dough (re-rolling as needed). I was able to get 28 hearts out of the dough, for 14 whole cookies. Make sure to cut out an EVEN number.
- Take the smaller heart cookie cutter and cut the center out of half the larger heart cut-out cookies.
- Evenly space the cookies out on a baking sheet and bake them for 10-11 minutes in a preheated 375°F oven. Remove and let them cool completely on a wire rack.
How to apply the jam:
- Once the cookies have cooled, spread a few teaspoons of jam onto the center of all the full heart-shaped cookies.
- Press the heart-shaped cookies with the small heart cut-out on top of the cookies with jam. The jam allows the cookies to stick together. Don't put too much jam or it will all seep out the sides!
How to decorate Valentine's Day cookies:
- Melt the white chocolate in a wide bowl in the microwave, using 20-second increments, stirring between, until melted so it doesn't burn.
- Take your assembled heart cookies and dip one side into the white chocolate, allowing excess chocolate to drip off, before placing it on some wax paper (or covered surface.) Pro Top: The chocolate and the jam both help keep these cookie sandwiches together!
- Before the chocolate dries, sprinkle your heart-shaped or decorative sprinkles onto the wet white chocolate. Then allow them to dry completely.
Jam-Filled Sandwich Cookies Tips, Swaps, and Storage
- You can use ALL gluten-free baking flour if you don't have delicious sorghum flour on hand (I like to mix flours for a better tasting gluten-free cookie!)
- You can swap raspberry jam with strawberry (or other red-colored jam/jelly/preserve) if you prefer one over the other. You can also make your own!
- Decorate with any type of festive sprinkles or edible decorations you can get your hands on!
- Storage: These jam-filled cookies need to be stored in an airtight container in the fridge! You can't leave jam out at room temperature, so plan accordingly. These will be best eaten within 7 days.
A Perfect School Valentine's Day Treat
Because these heart cookies are...
- Gluten-Free
- Vegan
- Allergy-free (Dairy-Free, Soy-Free, Egg-Free, Nut-Free, Peanut-Free, Wheat-Free, Sesame-Free, Corn-Free, Coconut-Free)
- Oil-Free
- Low in Sugar
- Super Kid-Friendly
They make for a perfect school-safe allergy-friendly treat! A decked-out Valentine's Day cookie any food allergy child would be proud to bring into those classroom Valentine's parties! If you don't have children in school, no worries! These cookies are perfect for any Valentine's Day party, "Galentine's Day" party, or handing out to everyone you love and appreciate!

To decorate the cookies:

- Take your assembled heart cookies and dip one side into the melted white chocolate, allowing excess chocolate to drip off, before placing it on some wax paper or covered surface.
- Before the chocolate dries, sprinkle your heart-shaped or decorative sprinkles onto the wet white chocolate. Then allow the cookies to dry completely before storing in an airtight container in the fridge.
