You can't take a trip down to the shore without enjoying all the boardwalk eats and treats. A Jersey girl knows that summertime means boardwalks, beaches, lemonade, Kohr's soft serve, arcades, and the smells of greasy boardwalk eats. The moment you step on the boardwalk, one of the aromas you are guaranteed to smell wafting from multiple food stalls is the steamy, greasy, goodness of what one can assume is some Italian sausage and peppers.
I, unfortunately (or not), never ate this Jersey Shore classic, but it always smelled SO good to me. Now being a celiac, plant-based, and not open to eating this type of fare, those childhood dreams have been tampered down and left for me to find an uplifting solution. Being a born and raised Jersey girl, it's my duty to find a swappable recipe for all our New Jersey eats, far and wide, for us celiac and food allergy folk.
This messy classic "Shore" food is typically made in large batches on a greasy industrial flat top stove, with two spatulas flailing around the combination of cut up Italian sausages, bell peppers, and onions. The goodness is served up on demand in a nice white bread hoagie roll. Total man's food, that's for sure, but also perfect for the Jersey Shore atmosphere (if you know what I mean).
For these "Strength-and-Sunshine-ified", gluten-free, vegan, and allergy-free sausage and peppers sandwiches, you'll be enjoying some Italian bean ball sausages along with the bell peppers and onions. All served on a hoagie roll or hot dog bun, like this one. You could also serve this up sans sub roll or on something else, that's up to you, I won't judge! The amazing flavors all come from the spices and herbs we're using for out "mock sausage" replacement. Not a spicy sausage, more or a sweet and savory one, and you know, full of black bean goodness!

Vegan Boardwalk Italian Sausage & Peppers Sandwiches (Gluten-Free, Allergy-Free)

Ingredients
- 3 Cups Sliced Bell Peppers (Red, Yellow, Green)
- 1 Cup Sliced Vidalia Onion
- 2 TB Red Wine Vinegar
- Bean Ball Sausages:
- 1 15oz Can No-Salt Added Black Beans
- 1 TB Red Wine Vinegar
- Β½ TB Dried Parsley
- 1 Tsp Dried Basil
- 1 Tsp Dried Oregano
- Β½ Tsp Dried Thyme
- Β½ Tsp Smoked Paprika
- Β½ Tsp Fennel Seed
- ΒΌ Tsp Black Pepper
- ΒΌ Tsp Garlic Powder
- ΒΌ Tsp Onion Powder
- Gluten-Free Hoagie, Sub, or Hot Dog Buns (to serve)
Instructions
- Preheat the oven to 400Β°F.
- In a food processor, combine all the bean ball sausage ingredients. Pulse to combine.
- Place the sliced peppers and onions in a greased cast iron skillet. Toss with the red wine vinegar.
- Form 8 oblong balls or sausage shaped mounds with the bean mixture and place them in with the veggies in the cast iron skillet.
- Bake the entire skillet in the oven for 25 minutes.
- Remove and serves on sliced open hoagie rolls.

I have everything but the fennel seeds and I think you need that to make it taste like sausage. I guess I'll have to take a trip to the grocery store. My youngest doesn't care for meat, so trying to find things for her to eat has been challenging for this meat eating family. Thanks for sharing your recipe.
