This super easy Vegan Broccoli Casserole is just like the old-fashioned Southern classic! It's gluten-free and allergy-free, made with 6 ingredients and baked in 30 minutes! Just stir everything together in your baking dish and pop it in the oven for a comforting no-fuss side dish recipe everyone will love! Creamy, cheesy, perfect for holidays and feeding a crowd!

Instructions

  1. Preheat the oven to 375°F.
  2. In a 2-quart casserole dish, add the thawed and drained broccoli, vegan mayo, coconut milk, seasonings, and vegan cheddar shreds.
  3. Mix the ingredients together so that everything is coated and combined.
  4. Melt the vegan butter (about 30 seconds in the microwave) and pour it over the 2 cups of crushed gluten-free cracker crumbs. Mix to coat.
  5. Sprinkle the buttered crackers crumbs over the top of the casserole, evenly, before placing the casserole in the preheated oven.
  6. Bake the broccoli casserole for 30-35 minutes, until the cheese is melted and the top is golden brown.
  7. Remove and serve right away or cool to room temperature before storing in the fridge.

Notes

  • Using Frozen Broccoli: Allow the broccoli to thaw before draining any excess water, and patting dry before adding it to your casserole dish.
  • Using Fresh Broccoli: Steam the raw broccoli by adding it to a bowl with a little water and microwave for 3-4 minutes until al dente (drain excess water and pat dry). You can also fill a steamer with water and bring it to a boil on high heat. Place the broccoli in the basket and cook for 3 to 4 minutes. If you don't have a steamer basket, you can also blanch the broccoli by adding it to boiling water for about 60-90 seconds, before transferring it to a bowl of ice water to stop the cooking process.
  • Storage: You can store leftover broccoli casserole covered in the fridge for 5-6 days.
  • Reheating: Reheat individual servings in the microwave or place the whole casserole dish, uncovered in the oven at 325°F to warm it through and make the cracker topping crispy again.
  • Freezing: You can freeze the casserole by allowing it to cool to room temperature and tightly covering the casserole dish with foil. You leave it frozen for up to 4 months. To reheat the casserole from frozen, place it uncovered in the oven at 350°F for 10-15 minutes until the center is warmed through.
  • Make-Ahead: If you're making the casserole in advance, mix together the filling and add it to the greased casserole. Cover it with foil and store it in the fridge for up to 2 days before adding the cracker crumb and baking. If baking from frozen for the first time, add about 10 minutes to the bake time
