Pulled jackfruit gives you a similar texture to pulled chicken and absorbs all the delicious buffalo sauce it's cooked in! These healthy plant-based tacos are a must for your next taco night and are bound to please even the meat-eaters in the family!
Healthy Plant-Based Ingredients
No mack meats, all veggies! You can load up these buffalo tacos with whatever toppings you want; go wild and crazy or keep things simple and tame!
- Jackfruit (flavorless until you sauce it up and shreds just like chicken)
- Buffalo Sauce (mild or WILD)
- Garlic & Onion Powder (optional, these seasonings added some extra flavor to the jackfruit!)
Topping Suggestions:
- Shredded Lettuce (use romaine or iceberg)
- Shredded Carrots (or matchstick cut)
- Julienned Celery
- Cilantro (fresh or dried works)
- Green Onion (Scallions) or Chives
- Vegan Ranch, Sour Cream, or Plain Yogurt

Gluten-Free Tortilla Options
You have some options here and it all comes down to your personal tortilla preference! (There are no wrong choices here!) I used soft white corn tortillas. My homemade yellow corn tortillas work, gluten-free flour tortillas, small corn street taco tortillas, make these tacos grain-free and paleo by using cassava flour tortillas! Or you can opt for a crunchy corn taco shell because everyone loves some extra crunch and texture (make it grain-free too)!

How To Make Buffalo Jackfruit
It's as easy as one, two, three!
- Crack open your cans of jackfruit, drain them, toss them into a greased pan.
- Before turning on the heat, use your hands to pull the jackfruit, you can use forks too, but it's much easier with your hands! Add the garlic and onion to season to taste, then turn on the heat to low.
- Finally, add the buffalo sauce, mix it all around, and let everything warm!
Assembling The Tacos
When we had taco night growing up, my mom would have all the taco components set out on the counter in a little assembly line for me and my brother to build our own tacos exactly how we wanted. To me, that was the best part! A little of this, a little of that. Always a soft taco and a hard one. Finished with a cool dollop of sour cream and drizzle of hot sauce. For these vegan buffalo tacos, you can do the same thing!
- Start with the gluten-free tortilla.
- Add the warm shredded buffalo jackfruit.
- Add the crunchy fresh veggies (I chose shredded lettuce, carrots, celery).
- Add the cooling vegan cheddar cheese shreds and ranch or sour cream.
- Finish it off with a sprinkle of cilantro, chopped scallion, or chives!
Easy, healthy, and so delicious! The jackfruit can be made ahead of time and simply warmed up on the stove or microwave It will last at least a week in the fridge. All the veggies can be bought prep shredded or prepped ahead of time too! You can warm your tortillas according to package directions or leave them cold (which is what I always do...weird?). Simple, quick, and easy dinner or light lunch that everyone will love since easy customizations don't take any extra work!
Perfect as a party appetizer too! If you're not feeling the vegan buffalo chicken nachos, individual street tacos are a mighty fine idea too! However you serve them up, you don't have to wait until Taco Tuesday to make them! These are perfect any day of the week, I mean, is there ever a "wrong" day for tacos?

Ingredients
For the Jackfruit:
- 2 20 oz Cans Jackfruit in Brine (drained)
- 1 Cup Buffalo Sauce (mild or hot)
- 1 TB Vegan/Allergy-Free Butter*
- Garlic Powder (to taste)
- Onion Powder (to taste)
Suggested Toppings:
- 8-10 Small Gluten-Free White Corn Tortillas**
- Shredded Lettuce (romaine or iceberg)
- Shredded Carrots (matchstick cut)
- Julienned Celery
- Cilantro (fresh or dried)
- Chopped Green Onion (or chives)
- Vegan Ranch, Sour Cream, or Unsweetened Plain Yogurt
- Vegan Cheddar Cheese Shreds
Instructions
For the Jackfruit:
- Grease a large saute pan with the vegan butter before adding the drained jackfruit to the pan. Before turning the heat on, shred the jackfruit with your fingers (or use two forks).
- Turn the heat on to low, add the garlic and onion powder to taste, then pour in the buffalo sauce.
- Mix everything together until the jackfruit is fully coated and warmed. Turn the heat off to serve.
Assemble the Tacos:
- Warm your tortillas according to package directions.
- Per each tortilla, add the warm shredded buffalo jackfruit first. Then add the shredded lettuce, carrots, and celery.
- Add a sprinkle of the vegan cheddar cheese shreds and drizzle on the ranch or sour cream.
- Finish it off with a sprinkle of cilantro and chopped green onion or chives.
Notes
*You don't need the butter, but it helps keep the pan greased and adds a nice buttery touch to the spicy jackfruit.
