Did you grow-up with some fudgesicles in the freezer? They were something I always remember finding in there (along with the ice cream!) They were so creamy and chocolatly and...well, delicious! Not to mention, full of processed sugars and oils! However, one "low-fat" fudgesicle (the ones we always had) was only 60 calories, but if you went with the "sugar-free" ones, they were 80 calories a pop! The original ones are 100 calories...that's weird. Sugar-free marketing nonsense!
We don't have to worry about that though. You know I solved that problem so we all can restock the fridge with vegan and sugar-free fudge pops! Fudge pops or fudgesicles? Ice pops, popsicles? One of those tomato tamato things I guess. How about we go with creamy frozen fudge! With coconut too and on a stick! We are getting super fancy here, aren't we? The thing that's not so fancy is my popsicles molds. The ones I used here are no longer part of my kitchen. They got dumped after these fudgesicles.
The handle broke off of the red one as I was trying to get these out. I'm pretty sure I had only used these molds once or twice before and scrounged them up again this year for these fudgesicles. Super cheap plastic. I wish I had these rustic ones with real wooden popsicle sticks. I don't, but I did go out to the store soon after these fudgesicles and bought a new $1 plastic mold set at WalMart! I probably should have invested in something more durable since I know what happens with cheap, but for now, they'll do. I like to keep my frugal buying in tack and so far so good with those molds!

Vegan Coconut Fudgesicles (Gluten-Free, Allergy-Free, Paleo)

Ingredients
- 1 (11oz) Carton Lite Culinary Coconut Milk
- ½ Cup Unsweetened Cocoa Powder
- ½ Cup Erythritol
- ¼ Cup Unsweetened Shredded Coconut (plus 1-2 teaspoons more for each pop you make to line the tip of the mold)
Instructions
- In a blender, combine the coconut milk, cocoa powder, erythritol, and shredded coconut.
- Blend until combined.
- Line the tip of each popsicle mold with 1-2 teaspoons of shredded coconut before pouring in the fudgesicle mixture.
- Freeze in the freezer for a few hours until solidified.

There is nothing more creamy and dreamy than some chocolate and coconut! What's better than a 4 ingredient dairy-free frozen treat anyway? One note, the amount of pops you get from this recipe will vary depending on the size, shape, etc. of your molds, so plan accordingly! What won't vary is how much you'll love these! It's never summer without ALL the frozen treats and goodies, is it?

A natural 1 to 1 sugar replacement, but if you're okay with refined sugar, you can use any normal white sugar.

Creamy frozen fudge - I like the sound of that! My siblings and I did grow up with popsicles - but homemade ones. We still have the same old molds from back then somewhere in my parents' kitchen. We'd fill them with juice, yoghurt and the likes and then enjoyed our 'sicles on hot summer days. I kind of miss that which probably means I need to visit the parental kitchen and look for those molds. Chocolate + coconut sounds like a winning combination!
